"Launched by John Kraus, the world-renowned master of pastry and bread behind Patisserie 46 and Rose Street Patisserie, MN Slice opens Thursday, October 11 as a pizza stand inside the new Keg & Case food hall at the revitalized West 7th Schmidt Brewery. Kraus, who knows bread and local ingredients, decided to try pizza; MN Slice will build pies on a sourdough crust with large cheese and pepperoni slices always available, plus rotating flavors that highlight Minnesota ingredients — for example a tot hot dish pie featuring mushrooms from nearby stand Forest to Fork and a "Meat Raffle" pizza topped with K’nack sausages.
