"On the best people-watching corner of the plaza, Mix serves Stumptown coffees, ice cream, and French-ish pastries. Mix can be a fun pre-matinee stop for its fabulous lemon tart, its citrusy base well-balanced with a light meringue; others may prefer to nibble on a chocolate salted caramel macaron or an earl grey truffle. In the mornings, visitors may be spotted lingering over lattes and croissants." - Susanne Robertson, Eater Staff

"After growing up in nearby Medford, Jamie North didn’t think she’d come back to this part of the world. But the third-generation restaurant owner improved Ashland’s coffee scene exponentially when she established Mix, a coffee shop and bakery, in 2006. Serving Stumptown coffee and an array of golden croissants (plus many-flavored macarons, fluffy morning buns, and more), Mix is a downtown staple for a pre-river rafting cappuccino or a post-theatre ice cream cone. In May, North opened Remix, a new location uptown highlighting a more savory menu—pressed sandwiches, hummus—from head baker Lily Hudson. With a creamery eventually set to open next door, North’s brand of fresh, feel-good food will soon be stocked across town." - Ella Riley-Adams

Monday... Stopped in after dinner for a coffee. Really good call. Brilliant cold brew made with Stumptown's "Bakeshop Blend", but the showstopper is the pastry case. Tonight we split a lemon meringue tart, and after that masterpiece there's zero chance we're not sampling the breakfast case with an espresso in the morning. Trust me, get in your steps and stop by for a well earned guilty pleasure. Tuesday morning update... As expected, the early coffee and fully restocked pastry case are just brilliant. Flaky and delicious chocolate and almond croissants 🥐, and the daily special banana bread lattes are likely the best I've ever tasted. Can we add more stars?♥️☕ Wednesday... Back again and still amazed. Put Mix high on your list when in Ashland.

Absolutely loved this place! The coffee was top-notch! The staff were incredibly kind and welcoming, which made the experience even better. Highly recommend to anyone looking for a great cup of coffee.

Google
Great little bakery with a very nice variety of delicious offerings both sweet and savory. We really enjoyed the almond croissant with it's incredible lamination and soft fluffiness. The almond filling is delicious and evenly distributed so you almost get some in every bite. The ginger cookie is absolutely delicious and I won't miss an opportunity to get one on any return trips. We got a caramel tart and I really enjoyed it. It is salted caramel in a tart casing, what's not to love? The ham and gruyere breakfast tart could benefit from some moisture in the form of a jam or jelly but was otherwise pretty good if not slightly under salted for my tastes but I like a lot of salt. We also got what they call a Bostock which is a croissant loaf soaked in orange syrup and topped pears. It was good and we would get it again but not before we got another cookie and croissant. We'll be back to this little bakery for sure!

I stopped in here after dinner to take some desserts home. I got a meringue cupcake and chocolate peanut butter bar. Both were incredibly good. The cupcake was moist and the meringue topping was like a delicious marshmallow fluff. The chocolate peanut butter bar was sort of like eating a peanut butter and chocolate cookie dough. I loved it, but it was very rich! Had to share that one. I didn’t get a drink or stay to eat there but I definitely recommend the baked goods! The service was quick and friendly.

Google
I want to give it 5 stars for the great quality of the desserts and ice cream, and the great price too! The Earl Grey chocolate chip ice cream was so good! The strawberry cake was the best I've ever had—I love it because it's fresh, made with real cream, and not overly sweet!

Google
Really good baked goods and coffee. A cross between a bakery and a patisserie. Baked goods include muffins, scones and croissants. The desserts are “patisserie like” - really good treats from meringue covered cupcakes to choc-peanut butter bars to pure chocolate desserts. My wife says the coffee is the best in Ashland, I personally like the teas and hot chocolate. Haven’t had the breads but they look delicious

Google
I bought an Earl Grey Chocolate Chip Double Scoop waffle cone for ~$10 last weekend. I asked if it was double upon receiving, "yes". The serving size was smaller than a single scoop at my fave, popular ice cream parlors in Portland/Seattle. So I was mad, but the ice cream was delicious. I don't usually eat ice cream. I'm not picking up cheaper varieties from the grocery store.

Went to Mix multiple times while on a trip with friends! The staff were pleasant and accommodating each visit. There was a great assortment of pastries and drinks to choose from. Overall an amazing experience within our trip to Ashland.

Yelp
Everything I've had there has been amazing- multiple trips. Service is always great. If you are looking for a wonderful treat or beverage by the park, this is it. The shop is small but very quaint.

Yelp
This is one of my first stops on the first morning I'm here. After my early morning walk through Lithia, I stop here for something delicious to eat. I did inquire about those golden oatmeal cookies but they didn't have them, and they might be seasonal. But if you ever come in here, and they are available, buy at least 4-6. You won't be sorry!!! The worker was friendly, and I ordered a plain croissant, a blueberry scone, and a ginger cookie. When I pulled out my wallet, the guy told me that it was already paid for. What a great surprise for my first morning! To the guy who did this kind gesture, thank you again! It was my graduation weekend and you made it extra special! As always, everything was soooo good! One of the best places in Ashland!

Yelp
Everything here is OMG delish. I usually eat very little bread but this might be my one indulgence. The pecan roll is to die for, as is the ham n cheese croissant. Don't let the line scare you; they're quick and efficient.

Lucy L.

Yelp
Delectable baked goodies, pastries & desserts and a variety of coffee drinks here. They have ice cream too. Everything is made with care. They get busy but we didn't wait more than 5 minutes. We had a chocolate hazelnut tart which was delicious and rich and a good size. We also had a coffee which was good and a bottle of sparking water. Nice, clean place with helpful and professional staff.

Yelp
Traditional French Pastries and Baked Goods [Ashland OR] I love bakeries and whether we visit a little town or a big city I always look for a bakery. This was a shop I found in the city of Ashland in Oregon (around 19 miles from the Oregon/California border). We arrived in Ashland around 2:00p. The shop is located in busy Main Street on a Sunday afternoon. Parking was challenging but we got lucky and found a spot almost across the shop and not too far away walk from Lithia Park. Inside has the flair similar to a French café. There was a line and it was a bit crowded. The line went fast though. Service was fast and efficient with a touch of a small town hospitality. The pastry shelf was loaded with yummy treats... I had a difficult time deciding whether I should get a Malted Milk Cake, a Chocolate Croissant, an Almond Croissant or a Morning Bun... okay, well, I solved that problem and I got the Malted Milk Cake, Chocolate Croissant, Almond Croissant and Morning Bun... yes, one of each LoL ¯\_(ツ)_/¯ The pastries were soft and delicious. We munched on them on our way home. Oh my! They have a location in Reno NV! Much closer than Oregon! But whenever we're back on this side of the region in Southern OR we're definitely stopping by. Yelp
I only have amazing things to say about Mix Bakeshop. On the weekends, it will be exceptionally crowded with a line out the door and for a good reason. Located in the middle of the Ashland downtown square on the corner, you can find Mix. The cozy little bakeshop is home of some amazing sweet treats and drinks. They are best known for the cakes, pastries, and really anything they bake. If it is on the Mix menu, it will be delicious. While their drink menu is less popular, their coffees do not mess around! If it is wintertime, I recommend getting their hot cocoa (with homemade marshmallows of course) after ice skating in Lithia or getting their latte spiked with bourbon then taking a winter walk in the park. If it summer, Mix has some of the BEST ice cream in town! Their unique flavors like earl grey chocolate chip are AMAZING!! Plus they make their own waffle cones. Mix is definitely a more social coffee shop meant for meeting friends and chatting. If you are looking for a quiet place to work, then I would not recommend this location (try their sister coffee house Re-Mix in South Ashland). Overall, Mix is wonderful!

Yelp
YUM. Really all you need to know... we came by on a Saturday night after having dinner around the corner. Cute little corner shop, looked like they had a good variety of offerings. We decided on baked goods for dessert, as we'd had ice cream earlier. I chose the meringue lemon tart and my husband got the carrot cake. The tart looked like fun, with the cupcake-like toasted meringue on top. It did not disappoint. It was so good! Meringue was like whipped cream and the tart was just right on the tartness. The crust wasn't to be forgotten, it also had good flavor, not like some crusts you just want to leave behind. Husband said the carrot cake was very good as well. Definitely give this place a try.

Yelp
Mix Bakeshop was nice post-dinner dessert spot. We walked around downtown Ashland before seeing a show nearby, and had stumbled upon Mix Bakeshop for a nice pick-me-up. There was quite a few patrons inside the bakeshop, even around dinner time. My partner and I wanted to share a dessert and saw that they offered house made ice cream and had a full coffee menu. We ordered an affogato with earl grey chocolate chip ice cream, which didn't take long to get. The affogato was just what we needed before seeing a show, with that strong caffeine jolt of espresso. Plus, I love earl grey tea, and the earl grey chocolate chip ice cream was loaded with earl grey flavor, which I loved. If only I could find an earl grey ice cream around me! In addition to ice cream and coffee, there were pastries in the case that looked appetizing, such as tarts, truffles and cakes. Get some!

Yelp
We have been coming to Ashland for four years and I get coffee here. The coffee is good. The latte I got this morning was quite short on milk. I explain this to your dude and he said sorry I've got a lot of drinks to make. I can't help you have a good day Bucks a latte and you can't add milk to it? Come on

Michael P.

Yelp
Absolutely loved this bakery. Pastries and deserts are delicious. The service was friendly and cheerful. I can't wait until my next visit to try more of their goodies.

Cyndy And Randy R.

Yelp
We arrived a little after 1 for something sweet but weren't interested in anything they had. We decided on lunch instead because we saw they were serving tomato soup today. Sharing some soup and sandwich (their sandwiches looked yummy) sounded so good on this cooler and cloudy day. Because I'm super whimpy with spices and I've found some tomato soups to be too spicy, I asked if we could taste it first. The woman behind the counter scrunched up her nose and said they don't do that. Nothing else they had was appealing to us so we left and grabbed some leftovers we had in the car and walked around the nearby Lithia Park. Gorgeous park - you should absolutely check it out! We don't live here and won't stop by another time if we're in the area.

Yelp
Mix Bake Shop in Ashland, Oregon, is a delightful haven for all things sweet and satisfying. Their coffee is robust, providing the perfect accompaniment to the array of delicious pastries. The ice cream is a heavenly treat, and their cookies are nothing short of exceptional. The chocolate chip cookies are a nostalgic delight, with gooey perfection in every bite. The gingerbread cookies, a unique twist, boast a perfect blend of warm spices, making them a seasonal favorite. Mix Bake Shop is a must-visit for those with a sweet tooth and an appreciation for quality baked goods.

Donna M.

Yelp
We loved our hit yummy drinks in soup bowls. We also enjoyed a ham and cheese croissant and morning bun, so flaky. We brought home a lemon meringue tart and a hazelnut tart. Boy we wish we lived closer. Worth a stop if you're driving through Ashland, Oregon.

Kayla B.

Yelp
Passed by this shop and there was a line out the door. Wanted to see if it was worth the hype. Inside is quaint with few seating options bur there are some spots outside as well. Service was quick and attentive. There were a variety of sweet and savoury fresh pastriesC baked goods and loaves of bread- along with coffee, hot cider and ice cream. Both pastries we tried were phenomenal and you could tell they were made fresh. We also visited the Ashland co-op after and they were selling loaves of bread delivered from Mix daily which is awesome- definitely will go back to try some more things. The coconut macaroon, ham and cheese croissant and hot cider were all great.

Patricia W.

Yelp
My husband and I spent a long weekend in Ashland prior to me having surgery (all went well). We found this cute bake shop while here and came here a couple times. The pastries and coffee are delicious, it has a feel inside of stumptown cafe on Belmont in Portland which was fine. Staff was helpful and friendly as well. My family is in Ashland this weekend and I told them they should come here.

KC L.

Yelp
Had dessert at Mix twice--it was that good. Food was creative and tasted even better than it looked. Decor was light and cheerful. Seating is very limited inside, but there were picnic tables right outside--perfect for a warm Ashland June evening treat. We also tried Re-Mix, a mile or so out of downtown for a light breakfast. It was excellent as well.

Kelsey C.

Yelp
Nailed it. Nailed what? Yes. A single bite of a Baguette and I'm sold. It's the best baguette I've had stateside, and it also makes a great Ham & Thyme sandwich if you want some protein too. They make a mean half-sweet Mocha with a house-made syrup to go with anything or nothing. There's a Chocolate & Bourbon Pecan Tart that is to die for and a Lemon Meringue Tart that's too pretty to eat. Well, it's official. I'm moving into Ashland, right next to Mix Bakeshop!

Yelp
Never been to this town, downtown at least, drove through once! We visited Lithia park on a Sunday 06/09/2024, amazing park if you have never been! We walk in 12 patrons deep 3 minutes before closing. The staff were really accomodating and laughing and joking with us. We were a complicated group but they were more than happy to help. Icecream is amazing, The chocolate cheesecake mousse is amazing as well as their fancy coffee with the cream leaf on top. The vibe was great and i would recommend anyone who goes to this area to stop there. I guess just try to spare them time before closing. we are so sorry you had to stay late but really appreciate the hospitality!

Akhil K.

Yelp
Great spot to get some to-go coffee before exploring the downtown area or embarking on a closeby hike. Staff felt energetic, and efficient. The coffee itself was tasty, and served extra hot as requested. Getting parking close by might be tricky, so give yourself space for that. We also ordered several croissants - fresh & delicious. They have an impressive collection of baked goods. Definitely worth a stop, hope you all enjoy the place!

Navin K.

Yelp
Nice little bakery and cafe in Ashland. We swung by earlier this week and ordered cappuccinos, macarons, tiramisu and a cream puff. Our order took a few minutes. While waiting, we asked if they had tables out back near the stream, and they said they did! When we carefully made our way to the back, we noticed that their tables were either dusty and piled with debris or had wooden planks leaning against them. It wasn't very busy, so we seated ourselves on a clean open table nearby though we suspected it belonged to the neighboring eatery. And we were right! Within seconds of settling down, we were asked to move to one of the Mix Bakeshop tables. A patron of the other eatery took pity on us and helped us move the planks, and we finally sat down to finish our food. By this time our cappuccinos were cold, but the sweets still tasted delish. We enjoyed the macarons, tiramisu and cream puff. Next time, if there is one, we will take our food to go!

Whitney D.

Yelp
Mix is so dang good. Easily my favorite coffee shop in Ashland. It's usually pretty busy, but worth the wait, and it moves pretty fast. My go-to is an almond milk latte with some kind of savory pastry (often the scone, I love the apple cheddar and rosemary flavors) and they never miss. Their coffee (Stumptown) is good, and most importantly, their baristas are good at what they do.Lots of seating, both upstairs and downstairs, or grab it to go.

Tuong L.

Yelp
I came here on two separate occasions while in town. The first time on a Saturday evening to grab post-dinner dessert. I settled on a slice of carrot cake and a slice of tiramisu. My boyfriend decided on the chocolate covered cream puff. The carrot cake is DELIGHTFUL. Three layers of light, moist, fluffy crumb, beautifully married to a cream cheese frosting that's also light and not too sweet. There are visible bits of carrot, raisin, and walnut (?) throughout the cake layers. I was in heaven eating it! The tiramisu is okay - nothing to write home about. It's also had 3 layers, divided by a thin layer of chocolate. The typical tiramisu flavor was there, but I found it to be a bit lackluster. My boyfriend LOVED his cream puff. I tried a nibble of it (for science), and found the flavors and textures to be well-balanced! The custard in the cream puff was slightly thicker than I'm used to and slightly grainy - although not in a bad way. Our second visit was on a Sunday morning to grab some coffee. We decided on a cappuccino and medium latte. Both were good. We were met with good and quick service on both visits. I'm definitely coming back for another slice of carrot cake before I leave!

Cyndee N.

Yelp
Best lemon meringue tart ever!! I can't pass through Ashland without stopping for a tart and some macrons. Yummmy!

Sarah L.

Yelp
Grateful that they are open on thanksgiving day! The croissants here are spot on! They have a good nutty flavor and are greasy. I really enjoyed them warmed up for that extra crispy layers. The ham and cheese croissant has a nice herb flavor. The chocolate croissant has a good amount of semi-sweet chocolate filling. And the almond croissant is my favorite! It has a very delicious almond filling. The staff here are very nice and efficient. The cafe is clean and have tables both inside and outside. I will definitely come back and try their coffee and other pastries and cakes!

Alma G.

Yelp
Excellent coffee, loved the pastries. Good foid of other varieties. Nice staff/ place. Nice location.

Andrew G.

Yelp
This shop is always a disappointment. It is excessively priced, uncomfortable, and quality is not very high. The location is great and it's the only coffee shop in town with decent hours, but unfortunately that's the only upside. Money is better spent at Starbucks or a walk to Rogue Valley Roasters.

Kim B.

Yelp
We did a very brief stop here on our way to Portland to grab coffee and couldn't help but get treats. Mix is clean, friendly, efficient, and doing a decent job of masks & limited capacity during COVID. The croissant was flaky and delicious and the lemon tart was buttery and tangy. Both would have been even more delicious warmed. Would happily stop by again.

Lotus E.

Yelp
I love this place so much, and the macarons are to die for, however last time we were here we tried the tiramisu, and it was not good at all. It had no coffee flavor whatsoever and the cream in the middle was completely frozen and flavorless as well. Tiramisu should taste like coffee and be soft, but this was flavorless, dry, and frozen :(

Fran L.

Yelp
Such a quaint little coffee shop with tiny bake items and seasonal items such as hot cider and hot cocoa in a cold winter day with friendly service staffs making hot drinks with extra touch. There are several coffee shops at Ashland, maybe too many but this one appears to be the most popular since it's located at the downtown shopping street corner with large foot traffic and with inside location with premium coffee and attractive bakery goods. Their price is comparable to Dutch Brothers and slightly less than Starbucks.

Patient Til 2.

Yelp
Dear Mix, your pastries and baked goods are the best in the valley. Please get your baristas under control so people don't lose their minds waiting 20 minutes for a latte, corralled like lost cows bumping into each other, grumpy and cranky because they didn't know they'd be waiting so long. It kills the vibe and makes us not want to come back. (3 weekends in a row) I hope to see a change. Thanks.

Thomas P.

Yelp
The staff is friendly and the food taste fine. But it is very overpriced compared to other downtown bakeries. The bread doesn't have a strong yeasty flavor so it fell a bit flat for us after having tried 3 different loafs over several months. The sweets are tasty but expensive.

Jacqueline F.

Yelp
Well they have a constant steam of business and I don't blame people. But I was there for the gluten free lemon cake. It's made with Almond flour and was OK. It was a bit heavy, and I cook/bake gluten free so that doesn't have to be the case. But the issue is that the lemon tasted like it came from a bottled extract and had a chemically sort of taste. It was good, but my sister cut my piece in half and I didn't want the other half. I told her that she could have it. As far as bread-like offerings, this is the only one. They had a truffle, a yogurt parfait, some macrons - nothing I'd want with my coffee or for breakfast. So, the lemon loaf cake was OK, but next time, I'll look around to see what else is offered elsewhere. But if nothing else is available, then I guess, lemon loaf slice it is.

David P.

Yelp
Great stop for a coffee or ice cream after a walk through the park. Staff was helpful, service was good.

Amelia D.

Yelp
Mix has been my childhood favorite I've been coming here since 3rd grade, now I'm halfway through college! My favorite has always been the sandwiches, vanilla ice cream, and a steamer drink after ice skating by Lithia park in the winters :) The staff are very skilled and always friendly and quick to accommodate any of your needs. I like that the brick wall is still there while maintaining a more modern touch because they care about Ashland's history.

Carly P.

Yelp
Absolutely the best coffee we have had in Ashland. This spot is cute but also delivers a flavorful cup of Joe. Their pastries are also amazing, we tried the macaroons and they were artfully made and tasted sweet and had the perfect texture of a macaroon.

Monica G.

Yelp
A little pricey but you get what you pay for! I purchased the chocolate pecan torte it was very very good. A cream puff didn't care for custard a bit gritty. The chocolate dipped meringue chocolate cupcake was amazing! Definitely return when I visit again!

Nichole D.

Yelp
Had a wonderful oatmilk cappuccino and a pastry. Both were amazing! The service was fine. They were very busy. I will go back if given the chance!

Abigail O.

Yelp
Best croissants I have had in a very long time. Small bakeshop with very high quality product. Wanted to try one of each! Will be back next time I come this direction.

Pam F.

Yelp
Great baked goodies and very nice service. Now a location that is uncrowded and easy to park.

Derek K.

Yelp
This bakeshop could stand up to any bakery in SF or NY. It's absolutely top notch!! It's the only choice

Joe M.

Yelp
Their croissants were delicious, and their service was really good. I wish I could have tried more things! Their bread looked d like it would have been out of this world. Next time I come back, I will try Their croissant with ham and cheese.

Jen M.

Yelp
If you're like me and enjoy Ferrero Rocher run to this bakery and get the chocolate hazelnut tart. You will not regret it!!! The coffee is excellent but trust me, you'll want to grab a tart!

Patty B.

Yelp
I discovered this place by accident while killing time waiting for my play to start. They were not too busy, which I since discovered is a rare event. I ordered an iced latte, and while standing in line I noticed their tempting baked goods display. I ordered three macaroons and told them I didn't care what flavor, so they gave me three different flavors. I sat down and took one bite of a lemon and raspberry flavored macaroon and my taste buds did a little dance. I had tasted macaroons made in a variety of bakeries all over the country, and was never particularly impressed, but these were a delight. The best I've ever had. I came back the next day to order six more. I am now wishing I ordered more. Service was friendly and efficient. It was very busy during my second visit. Lots of feral kids with inattentive parents; one of the kids knocked over and broke one of the planters near the window. Staff cleaned up the mess immediately and remained calm and understanding with the parents. It's definitely worth the wait in line for whatever sweet treat you order.

Kellie E.

Yelp
The cold brew was disgusting worst I have even tasted. The cooffee was so bad i threw it away after 2 sips .

Kevin S.

Yelp
Freshly baked goods on the premises, awesome coffee and super friendly staff. Mix is an Ashland staple and for good reason, the best in town.

Maggie A.

Yelp
The staff was very friendly! They had an amazing variety of sweets and I impulsively tried most of them haha but thankfully they were all pretty tasty!!

Shawn S.

Yelp
I really have 5 stars for the bread (and you'll need to get there early to grab it) but I am disappointed by the espresso, which was warm and bland, and the sort of blunt and sour customer service. Maybe it was just a bad day for staff, idk.

Alana K.

Yelp
Mix is my go-to for baked goods when I'm in town. I like picking up a few tasty treats to bring over when visiting my parents. My mom's fav is their chocolate croissant, and mine is their morning bun (sprinkled with cinnamon and sugar, and the dough has a delightful orange essence). They make a decent latte as well. My only gripe is the sort of backwards way the line moves. You have to walk past the barista counter, ordering line, and cashier to view the pastry case if you want to be ready to order when you make it to the front of the line. This often means giving up your place in line to those coming in after you who don't need to peruse the case. There's also often confusion about who's waiting in line to order and who's waiting in line to pick up drinks. So organization is a bit off on a busy morning, but the staff is pleasant and the goods are great, and I'll happily continue to come back as long as that's the case.

Marylane O.

Yelp
A MUST!!! The friendliest staff in all of Ashland. I started off with a cupcake and it was decadent! Oh my god. Reminded me of the a very elevated taste with the meringue. Fluffy, light, chocolate was perfect. Everything perfect! My friend was not going to get anything but after seeing the cookies got a snickerdoodle and ginger cookie both very good. The snickerdoodle was a MUST! It had cardamom on top (never had before) was great twist on a classic cookie. Can't remember but a very sweet girl asked what our plans were and we stated we were from out of state. She recommended other places to dine and check out the little towns night life. We came back today and it was busy! The line passed quickly and I got some icecream to try something new. The staff was again so friendly and quick to serve. Super helpful and again asked how our day was from yesterday and today. Will be back tomorrow before the trip ends!

Steve R.

Yelp
Mix is the closest you will come to a French-style bakery on this side of the Atlantic. Maybe there are others bakeries that are tied for first across the country, but none that surpass Mix in Ashland
