The Coffee — “CONGRATULATIONS!” (El Vergel Estate)
This coffee absolutely blew me away.
It’s a special collaboration coffee processed using double fermentation with champagne yeast — something I’d never tried before. So, naturally, I dove into research with my coffee-geek partner in crime and learned how this process plays with flavor development.
Brew Method:
I brewed it using a 1:15 ratio in a drip brewer with a grind size between fine and coarse — a sweet spot that let the cup open up beautifully.
Aroma:
Before the sip even hit, the nose had a bright grape and sparkling wine-like aroma, almost effervescent.
Flavor:
The first sip burst with a champagne-like pop, followed by a rich, juicy grape note that wrapped around the palate.
It was playful, bright, and elegant — like a coffee that knows it has personality.
Finish:
The finish dipped into a gentle, deep wine character — present, warm, and fleeting — and then faded cleanly, leaving no bitterness. Just a soft return to your natural mouthfeel.
Verdict:
This is an easy 5-star coffee. Innovative, balanced, and exciting.
Double fermentation added complexity without overwhelming the bean — a perfect execution.
