"Founded in 1932, Mon Sing specializes in fresh egg and wonton noodles and was added to San Francisco’s legacy business registry in March. Connie and Aaron Kong bought the business in the ’80s and continued its Chinatown roots before relocating the factory to an industrial space in the Bayview (part of 1950 Innes Ave. #2 and #3). Mon Sing custom-makes noodles—tailored to Nancy Bee’s mother’s recipes for San Mateo’s China Bee—and those noodles are the co-star of China Bee’s bestselling spicy beef noodle dish alongside a 16-hour beef broth.
