Visited Lyon for a few days and came across this absolute gem of a restaurant.
The menu was as follows:
-Beetroot cream, beetroot and nut textures, lemon
-Brioche, lemon filling and salted butter
-Oysters, apple jelly and clear oyster juice, vinegar and shallot granita
-Trigon sous vide, pressed, lemons and capers, sage and butter sauce
-Langoustine tartare, oyster caviar, lemon caviar, puffed quinoa, langoustine jelly consummé
-Turbot, brown butter, lemon puree with almond milk, celery puree, butter and champagne sauce
-Scallops, two shapes, one made with artichoke puree, lemon beurre blanc sauce
-Scallop carpaccio, lemon meuniere sauce
-Chartreuse Elixir dessert, sorbet, whipped cream and caramelized Chartreuse daikon chips (sweet and salty)
- 80% chocolate dessert, lime sorbet, caramelized hazelnut and peanut dacquoise, lime twill, cocoa beans and caramel
- Madagascar vanilla flan before going home
Everything was delicious and the service was impeccable.
