How Atlanta Chef-Turned-Bladesmith Michael Behn Started Sharpening Knives | Eater Atlanta

"I came across Moshi Moshi Knives, a new professional sharpening company in Atlanta owned by chef Michael Behn, and found not only the solution to my dull-knife woes but welcome comic relief in Behn, who stars in entertaining Instagram videos that mix instruction with interpretive dance set to everything from classical music to hip hop. Behn sharpens everything by hand on whetstones, charges on average about $2 per inch, asks customers to reserve time slots via an online form, and has drop-off Monday and Friday from 1 p.m. to 7 p.m.; knives are returned in mint condition in three to five days, wrapped in Japanese newsprint with anime-branded stickers warning the blades are sharp. Watching his clips you see the range of blades he handles — standard kitchen knives, unusual and super-expensive blades, pocket knives, even axes and machetes — and he once said one of his favorite knives to sharpen was the curved blade Sikh men carry as part of their religious tenets. I find my knives stay sharper longer — even my battered school-issued chef’s knife from California Culinary Academy — and Behn is now training other cooks to sharpen so they can earn a livable income and have a more sustainable lifestyle." - Jennifer Zyman

During Covid Michael was a word of mouth reference for knife sharpening. His bubbly, kind, and educational demeanor won over many folks, including myself, in addition to his innate ability to sharpen not only knives, but scissors, pizza wheels, pocket knives, etc etc etc. Over the last four years I have taken everything that needed sharpening to him and have never been disappointed. He has excellent rapport with people, a constant desire to learn more and improve his craft, and a lot of fun with his growing staff and customers. I can truly say I’m a fan and a friend. Moshi Moshi sharpening is a one of a kind experience and tip top service. They go above and beyond. Michael personally helped navigate me through the qualities of a knife to purchase in Japan. There’s no one else I would trust with its care than him. To see him and Moshi Moshi grow is heartwarming and inspiring! Please enjoy the most fun I’ve had as evidence of the “Moshi” experience!

I’ve had my entire knife set sharpened by Moshi Moshi at least once a year and my main knife more often for the last 4 years. Every single time it’s like getting a new knife out of the box. I have a kikuichi, shun, wustof, etc. I wouldn’t trust anybody else with your steel if you want them to be the sharpest.

Moshi Moshi got my knives sharper than when I first bought them! Michael was easy to communicate with, clear, and super nice. Quick turnaround, too, and he offers a loaner knife if you need one.

Amazing job – everything is razor sharp! They did an absolutely fantastic job! I had them sharpen a bunch of pocket knives, all my kitchen knives, and my meat scissors, and I couldn’t be happier. Every single blade came back scary-sharp and cutting better than ever. Super professional, quick turnaround, and very fairly priced. I’d recommend them to anyone without hesitation.

If you're looking for someone who truly knows and respects the craft of knife sharpening, look no further than Michael at Moshi Moshi. Not only is he incredibly skilled at what he does—he’s also friendly, trustworthy, and a genuine pleasure to do business with. I bring all my knives to him and have even started buying Japanese knives directly from him because I trust his eye for quality. When I recently picked up my knives after a sharpening, they’re razor-sharp and feel like new! Moshi Moshi is conveniently located right by the DeKalb Farmers Market, which makes it super easy to drop off and pick up while I’m out running errands. It’s rare to find someone who takes such pride in their work and cares so much about their customers. If you care about your knives, do yourself a favor and go see Michael at Moshi Moshi. You and your kitchen won’t regret it.

I found this knife sharpening place near home and glad I did! Michael provides excellent service and will deliver samurai sword sharp knives so be careful!! Prices are based on size and any issues. Mine cost $89 for reference. Keep in mind the turnaround time is about a week but definitely worth it!! Thank you again, Michael! I am a repeat customer and highly recommend!
