Came here around 12:30, and the parking lot was nearly full (one more empty space). The restaurant was also nearly full, so we were afraid we'd be in for a bit of a wait. But we were greeted instantly, and seated less than a minute later, after a table was cleared. A very friendly waiter took our order.
I ordered Pumpkin Red Curry, which arrived in under 20 minutes, accompanied by a combined 2 cups of brown rice (we'd each ordered one). Unfortunately, it was nearly another 10 minutes before my husband's order arrived, with no explanation or mention of the extra wait. The orders must have somehow been separated, and his got pushed back.
I asked for my Pumpkin Curry to have extra veggies substituted for the chicken and shrimp it normally comes with, and they delivered. It had a great variety of veggies, including lots of pumpkin, broccoli, carrots, cabbage, bok choy, basil, snow peas, and squash (zucchini?). The red curry sauce was the usual, delicious coconut-based curry - very tasty. I asked for the max spiciness level (5), and it was really hot. I loved it! The only thing I didn't like was it came in a fried tortilla shell "bowl", which I didn't eat.
My husband had the Vegetable Delight, which sounded boring to me, but he said he liked it a lot. There was a slightly sweet sauce mixed in with the veggies, and he added some chili flakes to spice it up a bit. He noted how well cooked the veggies were, leaving them crunchy/snappy, but still fully cooked.
We enjoyed this meal enough to have a second lunch here a few days later, with similarly good results. I had a Papaya Salad, which was quite unlike any other I've had before. Not only in looks, but in taste. It seemed to be in a peanut sauce (with peanuts halves), which was a bit sweeter than I would like, but I still enjoyed it. I got it at a spice level of 4* (out of 5*), and it was pretty hot, without overwhelming the flavor of the ingredients.
My husband had an Eggplant Lovers. He did love it! Eggplant usually soaks up a lot of oil when cooked, so he requested it be made with less oil, and that seemed to work, as they weren't too oily. He asked for 3* spice level (medium), and that worked for him. There was some heat, but not too much.
My Thai Cuisine is my favorite Thai restaurant in the area.
