Josh Henderson Was Going to Be Seattle’s Next Celebrity Chef. What Happened? | Eater Seattle

"At its best, this smash‑burger outfit kept things simple: a toasted, buttered bun with American cheese, pickles, and Big‑Mac‑style sauce. The Seattle Times praised it, and J. Kenji López‑Alt called it “my new favorite burger in Seattle.” The straightforward build let the crispy‑edged patties shine, a clean, unfussy expression of Henderson’s burger instincts." - Harry Cheadle

We visited this new Burb’s with weary expectations since we loved the “old” one so much, and wow, this place is great! The bar it’s located in was up our alley so we already started off strong. The new owner greeted us and walked us through the menu and told us about the new battered fry recipe - so delicious! The perfect crisp, great seasonings and just great texture compared to the original shoe string fries. The burger itself was as delicious as we remembered it to be. We’re so happy to know it’s back!

Burb’s Burgers, located on Oahu’s North Shore, is a hidden gem that delivers one of the best burger experiences in Hawaii. This food truck is a must-visit for anyone in the area, offering juicy, flavorful burgers that will leave you craving more. Whether you’re a local or just visiting, Burb’s Burgers guarantees a satisfying meal that perfectly complements the laid-back vibe of the North Shore. The menu at Burb’s Burgers is simple yet packed with flavor. Their signature burgers are made fresh to order, using high-quality ingredients that elevate each bite. From the perfectly seasoned patties to the soft, toasted buns, every detail is crafted with care. Popular options like their classic cheeseburger or the mouthwatering bacon burger are always crowd-pleasers. For those who like a little extra, their crispy fries and indulgent milkshakes are the perfect accompaniments to round out the meal. What sets Burb’s apart is the friendly, welcoming atmosphere. The staff are always upbeat and attentive, ensuring your experience is as enjoyable as the food. Plus, the food truck’s location near some of the North Shore’s most iconic beaches makes it a convenient stop after a day in the sun. With fresh ingredients, unbeatable flavor, and an inviting vibe, Burb’s Burgers easily earns a perfect 5 out of 5 stars. It’s more than just a meal—it’s an experience that embodies the aloha spirit. If you’re on the North Shore, don’t miss it!

Ordered a chicken sandwich and fries to go. The fries were less than half cooked and extremely pale. The chicken was inedible, literally. I couldn't bite through it. I peeled off the breading and it had fake grill marks on it. It was so tough and woody I couldn't pull it apart with my hands. I've never experienced anything like this in my life. Totally baffling experience.

The food is pretty cheap, which is good, but they aren't anywhere near the best value burger in the area. I ordered bacon on my burger and they seem to have sprinkled some bacon bits on it and that's it? I also got a milkshake which was very small and wasn't anything special.

Showed up to try the new Burb’s burgers. Left feeling nauseated due to all the cigarette smoke. They’ve got a sign on the patio saying “no smoking” but it’s obviously just a bad joke. Unfortunately the food is not as good as it used to be. Almost there! But not quite right.

As a regular of the old Burbs, I am disappointed. I ordered a chicken sandwich, burger and fries. The old chicken sandwich was probably one of the best I’ve ever tasted, but the new one is very uninspiring. They switched chicken thigh to chicken breast which is much drier, and they also removed the spicy rub. The breading also seems less flavorful, and the texture isn’t as good. The burger was pretty dry, not a whole lot there. And for the fries, they give a very small quantity. The old Burbs used to give you a huge amount of fries which was one of the best parts. I miss the old Burbs and am really hoping the recipes can return to their former glory.

Like many reviews say they were great for $6 but in the last 4 weeks (since Dec 24) prices have moved up $3 making Dicks the better option again. I also think in this same price increase time frame they changed their buns and possibly their meat, it isn't the same. The frequent changing of names "old" "new" just "burbs" make reviews hard to track for what prices are and what you're getting. Even in the bar the printed menus were $1 cheaper than when you order and online it showed $1 cheaper than the menu - lots of inconsistency like the burgers have had recently.

I considered Old Burbs the best burger in Seattle and would eat there several times a month (okay lets be real, it was once a week). When I heard they were reopening as New Burbs I was ecstastic and raced right down opening day. I've eaten there a few times now in hopes that it would get better with time, but alas it never does. You can tell the new owner wants to excell, however he keeps changing things that puts New Burbs further and further away from the glory of Old Burbs. New Burbs doesn't have the same crispy, charred smash patties that Old Burbs did. They have little to no Maillard reaction which, let's be real, differentiates good burgers from mid burgers. The new owner also just upped the patties to 4oz which, imo, is too much meat for a truly crispy, lacey, scrumptious smash patty. Additionally the burger are now dripping in sauce which sounds like a good idea in theory, but really it just makes it difficult to eat. As far as fries, you used to get an abundance of delectable golden shoe strings at Old Burbs that was always enough for me and my partner to share. Now we each need to order our own, which wouldn't be an issue if they were just as good... but they are limp, colorless and slightly starchy from being under cooked. LEAVE THEM IN THE FRYER FOR A ANOTHER MINUTE OR TWO DANG IT. I really want this place to succeed, but I feel like in order to do that thet need to leave other things off the menu that don't belong there and focus on making a limited menu as good as it used to be. I wouldn't even blink twice at the price changes if the quality was the same as Old Burbs. As the saying goes... if it ain't broke don't fix it. Is it something I would eat after a few drinks at a bar? Sure. Is it something I would go out of my way for when I am craving a burger? Eh...

Yelp
There are so many great burger spots in Seattle, it really is impossible to try them all without giving yourself high cholesterol, but New Burbs Burgers is worth it! If you want a great smash burger this is the place to go. Really nice Maillard reaction (aka crust) on the burger patty. The toppings only add to the flavor of the burger instead of covering it up. The fries are pretty standard but a nice accompaniment. The service was fantastic! I ordered online as I was walking out the door, and I got the text that it was ready while I was still on the way. It's only a 5 minute drive! Next time I'll drive over there and then press the order button.

Yelp
The old Burb's non-meat burger patty was AMAZING. The new one is disappointingly blah - like it came right out of a box. The new fries are good though.

Yelp
Good God. The best smash burger around, hands down. Juicy, crispy, and cheesy. And no line, waited like 5 mins after I ordered it. You've got to be freaking kidding me. If they had milkshakes on the side that would be gg, game over.

Yelp
I was very excited to see Burbs back. I was a big fan of going to Great Notion and getting Burbs there and was disappointed when they closed. B's Burgers is under a new management and is located at Last Call bar. Last Call bar is not a family friendly establishment like the Ballard brewery district. Last Call bar is more like a divey sports bar with packed people when the Eagles are playing, and folks smoke cigarettes and weed on the patio (even though there's a decade plus long RCW that you can't smoke within 25 feet of entrances, exits, open windows, or other means). So that's the crowd you might encounter. There's free ping pong and pool inside though- just hard to play when a game is on. The food though, I really really wanted to like them--I love burbs, but it's not the same. The burger is kinda wet? It's not the classic smashed burger with onions that I enjoyed. The fries were not the same crispy brunch. There have expanded their menu which I appreciate, like a Philly cheesesteak, but the bread is not what you expect in a Philly cheesesteak- it was too soft and not a sturdy Italian roll, Amoroso, or Vilotti-Pisanelli rolls. The meat was good though.

Yelp
One of the best burger spots in the Seattle area, is back under new management! I tried what is now called "B's Burgers" and was delighted to find out that it is practically the same menu that the old Burbs had. I ordered the "Special B" which was great and reasonably priced for a quality smash-burger. Service was quick and friendly as well. Really hope this place does well and continues to expand.

Yelp
The burger was so delicious, that I'm typing this review now because I'm daydreaming about eating one right now. I got the burger fresh off the grill. it was perfectly cooked. The fries are delicious too. there's something mixed in with the salt that gives it a bit of a kick. maybe paprika? The person next to me ordered the Philly cheesesteak sandwich and my mouth was watering. Will try that next.
