Late lunch stop before heading out to Vegas. We haven't driven to Vegas for a long time, found out HWY58 has replaced the local route through the town in Bakersfield which cut down approximately 30 minutes to Vegas, without traffic should just take 8 hours from the East Bay.
This was a Mom and Pop type of restaurant in a rough neighborhood (we were skeptical about the location), nothing fancy, comfy bench, spacious.
Service was good and attentive, the owner chatted with us (probably she heard we spike the same language), offered us tapioca dessert and asked if I needed my drink to go and gave me more ice.
My hubby had the beef stew egg noodles soup was a bit too sweet but not too spicy, the egg noodles had good texture.
I had the beef combo rice vermicelli soup, the vermicelli was very good, silky, smooth and I could see each strand of rice noodles, not sticking together, good rice flavor. The soup was a bit oily, tasted less herbs than other Vietnamese restaurants where I had back in the Bay Area. The fried egg rolls, we both could taste some of the filling was not fresh, as my father always said: "if there aren't many customers or no customer in the restaurant at all, the ingredients might not be fresh". They need to pay more attention to the quality control, I thought that was a miss, because the quality of the rice noodles was really good.
My hubby used the restroom, he told me the trach can was full but no one went to replace the trash bag, when the restaurant was quiet in the middle of the day.
However, when we have ro drive to Vegas and must stop for lunch, we would give New Saigon another try, and chat with aunti (the owner).
