New Wave Ramen - Review - Central Retail District - Manchester - The Infatuation

"Decorated with Japanese movie posters and designed so solo diners at the stainless steel bar can observe the steamy theatre of the kitchen, New Wave Ramen in Central Retail District is immersive and well-executed. Starter portions are generous and the deftly wrapped, gloriously caramelised pork gyozas should take precedence. As for the ramen, the noodles come satisfyingly al dente, and the O.G Paitan is the one to order. The creamy broth is as unctuous as tonkotsu, but a tad less intense, with the triple threat of chashu pork belly, smoked coppa, and fudgey, stained eggs sealing the deal. Know that the vegetarian soy milk-dashi broth also packs an umami punch, is almost as creamy, and comes with celeriac chashu, a respectable stand-in for its porky counterpart. I had been visiting this ramen bar about twice yearly since it's opening. When it comes to ramen in Manchester, it is always and only New Wave for me. However, the quality of food and service has slowly deteriorated. This time, the broth was still immaculate, but the handmade thick noodles were likely not cooked properly and/or tasted unfresh. The noodles stuck together and were too chewy (not in al dente way but resembling low-quality instant noodles). If that wasn't enough, there was also a small fly in my soup, indicating that the kitchen staff wasn't attentive enough to the food and presentation. (Sorry that I didn't take a picture evidence of it. It was shocking and unsettling for me because I drank the soup, and I only tried my best to take the winged insect out from the broth using the black tissue provided without causing a scene.). All these for £16, a £3 increase in main course price since last year. This experience made me reconsider my loyalty to the brand. I will start giving other restaurants a try. Thank you for the lovely ramen experience over the last two years, you'll forever have a special place in my heart.

Tried this ramen spot recently, and for the price, it’s definitely a good deal. The ramen isn’t exactly traditional in texture (taste like chinese egg noodles), but it still hits the spot if you’re looking for something quick and warm! The broth is good, although it might not be the most authentic, but honestly, it’s good enough for £10!

Absolutely good at price with such quality of the lunch set. A drink, a side and a ramen just cost £15. Should be a first choice for lunch in the centre of Manchester. But, I think there are something left in the ramen when compared with the other reviews.

The BEST 🍜 ramen in Manchester so far. The creamy chicken broth is to die for on national ramen day! The broth is full of flavour the service was rapid we got our food before our drinks. I couldn’t recommend this place enough. The staff are friendly and it was a calm ☺️ atmosphere. A big plus as the toilets are clean restaurants neglect this point and they have happy hour Tuesday to Friday.

Not the first time coming here and definitely not the last! The food is incredible and it's served quickly, always looking beautiful and fresh and super tasty. There was 4 of us so we got a bottle of wine and some beers, starters and a main each so around £30-40 per person is a very good price! We got sat very quickly and it was a very busy service- which must be every day for these guys. Thank you for accommodating!

Small ramen shop on tib Lane. Went on a saturday at 1 pm and it was quite busy as there weren't many seats - try to make a reservation if possible. Ordered the paitan ramen, and it was amazing! I've had my fair share of ramen from my holidays in Japan, and the ramen here is definitely on par with the ones from Japan. The soup was creamy and addictive! It's creamy in taste but not too heavy. The noodles were cooked perfectly, and the pork was fatty and soft. I would definitely come back for the ramen again! I also tried the matcha pana cotta dessert, and let's just say I wouldn't order it again. Maybe it's more of an aquired taste, but the matcha pana cotta was very... soft jelly like and had a lot of lumps in it. The cheesecake cream thing on top was nice, but I didn't go that well with the match. The blueberry compote had a fizzy vimto like feeling to it. Final verdict: definitely try the ramen! avoid the desserts.

3 of us came today for the first time as this place is highly recommended by a HK Facebook group. The waiter suggested the best seller, OG Paitan, which is a creamy chicken broth ramen, so we all ordered the same with different toppings. The soup base is really delicious and the noodles are just al dente. The best ramen I had so far in Manchester. It costs only £10 for a ramen between 12-5pm, very good price. Great vibe, good service and the noodles arrived very quickly 👍
