Bánh bèo, or "water fern cake," is a popular Vietnamese dish from the central region, particularly Hue. These delicate, steamed rice cakes are typically served in small, round plates.
Bánh bèo consist of rice flour, water, sometimes tapioca flour (optional)
Toppings: dried shrimp, scallions, crispy shallots, and pork skin.
Bánh bèo has a soft, slightly chewy texture with a mild flavor that pairs perfectly with its savory toppings. The dried shrimp adds a salty, umami punch, while the crispy shallots and scallions provide a nice contrast in texture. Bánh bèo is often served with a side of nuoc cham (a fish sauce-based dipping sauce) that adds a tangy, slightly sweet and salty flavor to the dish.

Herbs: (cilantro, green onions, another herb i frogot what it's called)
Vegetables (bean sprouts, cabbage, banana blossoms)
The broth of bún bò Huế is the star of the dish, offering a bold, spicy, and fragrant experience due to the lemongrass and chili oil. The soup also has a slight umami depth from the shrimp paste. The beef and pork are tender, while the rice noodles are soft yet firm enough to hold up in the broth.
Bún bò Huế is traditionally served with a variety of fresh herbs and vegetables on the side, allowing diners to customize their bowl to their liking. Lime wedges and chili sauce are often provided for an extra kick of flavor.
I am quite picky when it comes to these two dishes but I find Ngu Binh quite good. I also appreciate the ambiance here, open seating with nice natural lighting too!
