Dropped by Nimbo on a chilly Melbourne afternoon, winds blowing like crazy. I was only planning to get something warm—so I ordered the hojicha hot chocolate.
But once I saw the matcha bingsu, I gave in.
And oh wow—no regrets at all. This bingsu is a masterpiece: mochi, matcha brownie cheesecake, swirls of matcha whipped cream, and a creamy scoop of matcha ice cream sitting on top of snowy, fluffy matcha-shaved ice. Even the red bean, which I normally don’t like, tasted good when combined with everything else.
If you’re a matcha fan visiting Melbourne, this place is a must. The balance of flavors, textures, and aesthetic? On point.
