My friends and I visited this restaurant for dessert. We managed to get a table right away. We tried the Basque cheesecake, injeolmi bingsu, and ube mochi toast. Each dessert was delicious, and I couldn’t decide which one was the best! The mochi toast was particularly well-done.

The tiramisu bingsu is very well balanced, as in not too sweet but still creamy. The biscuits (?) inside gets quite bitter the longer you eat it as those were soaked in coffee. Just beware if you're sensitive to caffeine - we ate this at 9pm and couldn't sleep until 4am.

This shop features matcha flavored desserts. The machiamisu was very nice. Basically a macha sponge cake. I think it would be more misu-like if the sponge was soaked with green tea.

Iced matcha latte is thick and umami, very well made and not bland or overly milky at all. The earl grey matcha latte is also unique, you can taste both the matcha and earl grey, works as a pair. The cookie is a bit too sweet, but the iced matcha kinda neutralize it. Love everything here

What a nostalgic and creative bingsu collab with Ah Huat. The salty savoury biscuit and the sweet (but not toooo sweet) coffee cream combo is super yums. And that strawberry matcha slushie — one of the best thing I’ve ever had!

Cozy and welcoming café with a relaxing vibe. The matcha is rich, smooth, and not too sweet—great for real matcha lovers. Desserts pair perfectly with the drinks. Friendly staff and good service. Definitely a place worth visiting! 🍵

Deserving of 5 stars because of the ube bingsu. This is the best bingsu I've ever had. The balance of flavours worked perfectly. Ube jam, corn flakes, mochi, ice cream. This was as good as it looked. I've had a lot of bingsus before but I didn't think it could get any better. I've posted a full review on my Instagram: @karam.eats if it interests you. Even their earl grey matcha latte is really good. A combo I never expected.

📍 𝗡𝗶𝗺𝗯𝗼 ⭑.ᐟ ❤︎ 𝗠𝗼𝗼𝗱-𝗯𝗮𝘀𝗲𝗱: Windy weather outside, warm hojicha in hand, and a dreamy bowl of matcha snow 🍵❄️ ❤︎ 𝗙𝗮𝘃 𝗱𝗶𝘀𝗵: 𝗠𝗮𝘁𝗰𝗵𝗮 𝗕𝗶𝗻𝗴𝘀𝘂 🍃 ❤︎ 𝗚𝗼𝗼𝗱 𝗳𝗼𝗿: Matcha lovers, cozy dessert moments, winter comfort seekers ❤︎ 𝗩𝗶𝗯𝗲: Stylish dessert bar with peaceful ambiance and pretty plating ꫂ ၴႅၴ Dropped by Nimbo on a chilly Melbourne afternoon, winds blowing like crazy. I was only planning to get something warm—so I ordered the hojicha hot chocolate. But once I saw the matcha bingsu, I gave in. And oh wow—no regrets at all. This bingsu is a masterpiece: mochi, matcha brownie cheesecake, swirls of matcha whipped cream, and a creamy scoop of matcha ice cream sitting on top of snowy, fluffy matcha-shaved ice. Even the red bean, which I normally don’t like, tasted good when combined with everything else. If you’re a matcha fan visiting Melbourne, this place is a must. The balance of flavors, textures, and aesthetic? On point. ⴵ 𝗪𝗮𝗶𝘁 𝘁𝗶𝗺𝗲: Around 7–10 minutes (they prepare everything nicely) 𐀪 𝗖𝗿𝗼𝘄𝗱: Busy but still had seats ☼ 𝗗𝗮𝘆 𝘃𝗶𝘀𝗶𝘁𝗲𝗱: Weekday, windy afternoon ‎ 𐂐 𝗢𝗿𝗱𝗲𝗿: Matcha Bingsu, Hojicha Hot Chocolate 𝗪𝗼𝘂𝗹𝗱 𝗜 𝗿𝗲𝘁𝘂𝗿𝗻?
