Excellent service! Must try matcha apple crumble bingsu (limited time only) and the pistachio mochi toast! Place is cozy and nimbo would be my go to place for dessert after lunch or dinner. Definitely would come again if I visit melbourne ♡

Deserving of 5 stars because of the ube bingsu. This is the best bingsu I've ever had. The balance of flavours worked perfectly. Ube jam, corn flakes, mochi, ice cream. This was as good as it looked. I've had a lot of bingsus before but I didn't think it could get any better. I've posted a full review on my Instagram: @karam.eats if it interests you. Even their earl grey matcha latte is really good. A combo I never expected.

📍 𝗡𝗶𝗺𝗯𝗼 ⭑.ᐟ ❤︎ 𝗠𝗼𝗼𝗱-𝗯𝗮𝘀𝗲𝗱: Windy weather outside, warm hojicha in hand, and a dreamy bowl of matcha snow 🍵❄️ ❤︎ 𝗙𝗮𝘃 𝗱𝗶𝘀𝗵: 𝗠𝗮𝘁𝗰𝗵𝗮 𝗕𝗶𝗻𝗴𝘀𝘂 🍃 ❤︎ 𝗚𝗼𝗼𝗱 𝗳𝗼𝗿: Matcha lovers, cozy dessert moments, winter comfort seekers ❤︎ 𝗩𝗶𝗯𝗲: Stylish dessert bar with peaceful ambiance and pretty plating ꫂ ၴႅၴ Dropped by Nimbo on a chilly Melbourne afternoon, winds blowing like crazy. I was only planning to get something warm—so I ordered the hojicha hot chocolate. But once I saw the matcha bingsu, I gave in. And oh wow—no regrets at all. This bingsu is a masterpiece: mochi, matcha brownie cheesecake, swirls of matcha whipped cream, and a creamy scoop of matcha ice cream sitting on top of snowy, fluffy matcha-shaved ice. Even the red bean, which I normally don’t like, tasted good when combined with everything else. If you’re a matcha fan visiting Melbourne, this place is a must. The balance of flavors, textures, and aesthetic? On point. ⴵ 𝗪𝗮𝗶𝘁 𝘁𝗶𝗺𝗲: Around 7–10 minutes (they prepare everything nicely) 𐀪 𝗖𝗿𝗼𝘄𝗱: Busy but still had seats ☼ 𝗗𝗮𝘆 𝘃𝗶𝘀𝗶𝘁𝗲𝗱: Weekday, windy afternoon ‎ 𐂐 𝗢𝗿𝗱𝗲𝗿: Matcha Bingsu, Hojicha Hot Chocolate 𝗪𝗼𝘂𝗹𝗱 𝗜 𝗿𝗲𝘁𝘂𝗿𝗻? 𝙄𝙣 𝙖 𝙝𝙚𝙖𝙧𝙩𝙗𝙚𝙖𝙩 💚 A matcha snow mountain I’d happily get lost in again.

The matcha tiramisu was below average and the chocolate matcha cake for some reason had a fishy taste. We let the staff know but they said that the fishy taste was from the maple syrup. I really recommend you not to waste your time and money here

Nimbo is a must-try dessert spot in Melbourne, with their bingsu being one of the best in town, offering a variety of flavors and toppings. Their toast is also super yummy with great toppings, and they have a wide range of cakes and cookies that everyone loves. The drink selection is great too, with matcha-based drinks being a favorite among customers, and they also serve other drinks like coffee. Overall, Nimbo is a great spot to satisfy your sweet tooth, with something for everyone to enjoy.

This is one of the greatest shaved ice desserts I have ever had! The flavours of the matcha apple crumble bingsu were perfectly balanced, with salty, sweet, and all textures also perfect. Never had anything like it, and could it recommend more!!!!

The first bingsu had a custard flan in the middle, topped with pistachio and some kind of fragrant powder — not too sweet, just right. The second one bingsu with roasted dango, red bean paste, and lots of crunchy almonds. The textures were amazing and the flavours felt really balanced. The shaved ice itself was super soft and just melted in your mouth. The shop is a bit small, but the staff were really friendly and helpful. If you’re looking for a unique dessert in Melbourne that’s not your usual bingsu, this place is worth checking out! #Genastar

No notes, 10/10. The Thai Kaya Toast healed something in me. Idk who thought of putting mochi in the middle of Kaya Toast, but I’m glad yall let them cook because it is my new fav thing ever. 🙏 PS they are a small-ish venue and it is a bit rough in winter to grab a spot but it is worth combatting the cold winter winds for this. 🥰
