Super crowded spot, mostly young people; probably because their plating and social media game are strong, which fits younger customers perfectly. I came around 8 PM after dinner, and the place was completely full. Since we were just two people, we found seats in about 5 minutes. If you’re coming in a group of 4 or more, you’ll probably have to wait or visit during off-peak hours. The shop is small, with tables packed tightly to maximize seating. I ordered the Ube Matcha and Matcha Bingsu. - Matcha Bingsu: Looks exactly like the photos online. Pretty big portion, definitely meant for 3–4 people because it gets heavy if you eat too much sweet stuff. Flavor overall is nice and easy to enjoy, but if you break it down by toppings, nothing really stands out. For example, the basque cheesecake inside was dry, not smooth, and oddly salty — not in a good way. - Ube Matcha: The taro milk tasted very artificial, not like something made in-house with real ingredients. The matcha also wasn’t good; felt like Taiwanese matcha: nice color, zero matcha aroma. When you mix the taro and matcha together, it turns into a brown-ish drink with a weird taste; the two flavors clash badly. If I come back, I’d only go with more friends and stick to the bingsu. The matcha here isn’t worth the price.

I’ve been coming to Nimbo since it first opened years ago. I really like their mochi toast dessert, they even had a pear foie gras flavour toast at one point. On my recent visit I enjoyed the matcha tiramisu most - it was well balanced and moist. The cookie was too sweet though but mango matcha was decent. The venue is really tight, so any groups larger than 2 will need to wait during peak times. Prices are moderate high and service is ok. Definitely worth a visit for dessert in the CBD.

I have read some of the reviews before that if you arrive after 10pm they won't serve any dessert, so by the time I arrived I asked the staff and they said the last order is at 10:30 pm. Luckily today wasn’t that busy don’t have to wait to be seated. The matcha bingsu is really gooooooooooood, I'm enjoying it a lot not too sweet.

I need to say first their food is really good and I really enjoy almost everything here. I am so sad to give this low rate since it’s my favourite dessert place to go in Melbourne and I’ve been here many times. However, the experience I had today made me super upset 😠 The staff came to our table twice during our stay within one hour, asking for taking away our plate even we just had half way done. The people sitting next to us who were coming earlier than us never got asked to leave during our stay. I understand that there is a limited sitting time at peak time, but the way the staff treated us was so unfair and disrespectful 😡👎🏻

My friends and I visited this restaurant for dessert. We managed to get a table right away. We tried the Basque cheesecake, injeolmi bingsu, and ube mochi toast. Each dessert was delicious, and I couldn’t decide which one was the best! The mochi toast was particularly well-done.

gotta be one of the top bingsu places in Melbourne. ordered the strawberry bingsu AND THEY DELIVERED. the flavour was 10/10 and so so fresh too. would defos come back to try the other flavours.

The tiramisu bingsu is very well balanced, as in not too sweet but still creamy. The biscuits (?) inside gets quite bitter the longer you eat it as those were soaked in coffee. Just beware if you're sensitive to caffeine - we ate this at 9pm and couldn't sleep until 4am.

Iced matcha latte is thick and umami, very well made and not bland or overly milky at all. The earl grey matcha latte is also unique, you can taste both the matcha and earl grey, works as a pair. The cookie is a bit too sweet, but the iced matcha kinda neutralize it. Love everything here
