The chef here, who hails from Puglia (the region occupying the heel of the “boot” in the very south of Italy), proudly showcases a contemporary version of his homeland’s traditional cuisine, moving slightly away from the more commonplace Italian dishes and pizzas to offer a mouthwatering journey across the different regions of Italy.
