Non-Fiction is the real deal. Up until this past year, I had spent nearly a decade working in coffee, and a good chunk of that time was spent with Non-Fiction. While there, I was able to go to Peru to visit one of NFC's producer partners (The Torre family), and provide training for some of the best cafes in the southeast.
NFC may not be the most well known brand in Birmingham (yet), but I firmly believe that their quality of product, mission, and team are unrivaled in this coffee-heavy city. After leaving NFC, I began searching around for other great coffees, both nationally and locally, and I've not found any coffee roaster that matches the quality of Non-Fiction.
I highly recommend their washed Guatemalan coffee from Max Perez and their new Origin Stories flash chilled coffees. They do an excellent job of curating and roasting coffees that are sweet, never burnt, and always balanced -- in my opinion, theirs are the only coffees in town that coffee nerds, like myself, and those who just want a "good cup of coffee" can both thoroughly enjoy together. Keep an eye out for their limited releases, as well -- they've always got a knack for finding exceptional coffees, but you've got to scoop them up quickly because they go fast!
