Craving for Thai food after a long day of outdoor exploration and coming back late via the Kingston ferry. Noodle Hut was a mere 10mins away from the Edmonds ferry and pick up for the take out order was a breeze with a phoned ahead order. The food was good though it tasted a tad sweeter than I liked. My fave Thai takeout remains elsewhere but Noodle Hut is a good second choice for when we are in the area.

Lost in translation / not good. I hadn’t been, had heard good things. My go to & test any Thai spot is Chicken Pad Thai w/ extra vegetables. Apparently if you get no star you get no flavor. I asked about cooking style, in Thailand they often say wet or dry. I prefer dry hot wok little char & umami. It had zero sauce. I asked for extra limes & peanuts. Got neither. I love other cultures & languages. But the guy who helped me probably shouldn’t be working with customers in Edmonds. Extra vegetables had weird tomato slices. Some nice little mushrooms. I wanted to like it, I don’t think I can go back. Better options in the area. I hate trying a place and genuinely feeling I got ripped off. 😔

I love the owner. It’s a small place and make you feel comfortable which makes you want to come back. The food is really good and they give you big portions. This is my go to place for Thai.

July 2023 -- I agree with another poster about the change in taste. I've been meaning to write this review for a couple months but have not gotten to it. We ordered the pad thai and a couple other dishes to go, and they were bland. The pad Thai was not tangy and the noodle was all broken. The man there seemed very proud that his parents were cooking authentic Thai food in the kitchen, given that his aunt, the main cook/owner was in Thailand. I'm sorry, guy, but we like your aunt's food better... And we hope she is back or will be back soon. We miss her food. Changing my ratings from 5 to 4 stars for now. July 2021 -- since we first ate from here, we've been repeat customers and have not been disappointed. We just hosted a party today and I put in a big order the day before. The food was delicious and everybody's favorite was the turnip cake. They kept saying how good it was! The person in charge of taking & making my order at Noodle Hut went above and beyond expectation by giving me an extra order prepared specifically without egg and oyster sauce. I had originally asked for an order without egg but failed to mention about shellfish allergy. When I came to pickup the order she asked me if there was also shellfish allergy. I said yes, she said let me make you another one! I said she didn't have to buy she did anyway and I really appreciate the thoughtfulness!! November 2020 -- Really good food. We were pleasantly surprised that everything tasted really good. We don't frequent enough small mom-and-pops shops, and this was certainly one of them. We're didn't have too much expectations going in, and perhaps that was why we were so surprised of how well everything turned out. The noodles were not over cooked or soggy as we tend to experience with stir fried noodles. The meats of all the dishes were very tender. I don't tend to enjoy curry but did find myself enjoying the Massaman curry. Hubby now keeps asking about when we'd reorder from here, and that shall be soon!

I'll happily contribute to the high user rating of this establishment. It's not what you expect at first when pulling in the parking lot. It's definitely what I consider hole in the wall. Finding parking can be fierce as the lot is so small, and shared with a few other restaurants but this place is primarily for take out. They have only three tables and by the time we started eating, all three tables were taken. So we arrived just in time to grab our table. The food was great! We ordered Pad Thai and pineapple fried rice. Both were delicious. Their Jasmine green tea served with the meal is also very refreshing. Their prices are very reasonable for the amount of food you get. The service is good. Recommend!

Super bummed. This used to be the best thai place around. But lately the food has been falling flat. My go-to dish is the pad see ew and I was missing the sweet tang it usually had and the spice was just not there. What really killed it were the trash end of the brocolinni. My dish was full of the chewy butt ends you might only eat at home when money it tight. Not in a $20 dish. Couldn't believe it. Eggs were burnt too. Update: Noodle hut reached out and remade the dish for me. See the second attached photo. The brocolinni was much better. A few pieces were bitter and needed a pre rinse or longer blanch, but overall, it was much better. 4 out of 5 stars. I hope they keep it up. I still miss the flavourful dark brown noodles from the rich dark soy sauce they served up a few years ago, but it's back on the right track.

It is a very cold and rainy day here in Seattle and I was greeted by an extremely nice Thai man with some warm tea. I hadn’t even ordered or asked for anything yet. I instantly felt at home. The food was very yummy and the atmosphere was cozy, authentic, and clean. Bathroom was clean and well kept. I will bring my lady here! Awesome place

I was starving so forgot to take photos of my take-out meal. Like another reviewer, I too am baffled by the great reviews of this restaurant. My partner and I ordered the Pad See Ew, Pad Khee Mao, and chicken wings. The only saving grace of this meal was the chicken wings. It was relatively juicy, but also only like 7 tiny pieces and a sauce for $11.95. Both the pad khee mao and my partner's pad see ew were more or less tasteless. Since I ordered online, the lowest spice option that I could choose for the pad khee mao was 2 stars. I was honestly a bit worried because I'm not usually a spice seeker. Turns out I had absolutely nothing to worry about. There wasn't even a HINT of spice in my dish or my partner's at 1 star. I honestly didn't even see any chilly flakes. Aside from also being bland, my partner's pad see ew broccoli tasted like it had been sitting in their fridge for a while before being used. There was no crunch and it just tasted...old. We had high hopes for this place because we've passed by it so many times and saw the great reviews, but for a $50+ take-out meal, we were thoroughly disappointed and definitely wouldn't be back.

This place is a hidden gem. It's a tiny "to-go" only restaurant but the food is delicious. I tried the Tom Kha soup and it was rich and creamy with fresh crisp vegetables and tender pieces of chicken. I asked them to make it only mildly spicy and it was still wonderfully flavorful. I'll definitely be back for more

It's a little saddening I have to update my review here. I've always loved Noodle Hut, and yes I did stop going to the restaurant so I'm not sure if they changed owners or chefs or something. It was interesting to see me be able to order from Noodle Hut from Door Dash, so I gave it a spin a couple of months ago and once again today. My normal order is that pad see ew. It was my absolute favorite thing before and it was a weekly order for me at one point in my life. Everything was covered in this sweet sauce, pretty similar to other Thai restaurants. I can see why people like it this way, but I don't believe this to be the best way to eat it. It used to have bigger/wider noodles and it was more like a touch of sauce to get a little bit of the sweetness mixed in. Not just have it completely covered making the whole dish dark because of the sauce. It makes it no different than all the other Thai restaurants all over this area honestly, which none of them I gave a good review either. Thai food is always good, but Noodle Hut used to be my favorite because of it's authenticity and also because it just wasn't completely covered in sugary sauces and instead you can taste the flavors of the food. Hopefully the other dishes haven't changed much. Will definitely go back from time to time but not too happy this time around.

Gave Noodle Hut another chance and was satisfied with the Pad Kee Mao. Great arrangements of vegetables that were cooked to a great texture and the sauce and dish was not burnt this time. Very good portion size as well! Glad I gave this small business another try.

I am baffled by the good reviews of this place. I sampled both their pad thai (with chicken) and their pad kee mao (with tofu) and each one was aggressively bland. The pad thai noodles clung together and tasted of dish water; no hint of tamarind anywhere in them. The dishwater taste may have been coming from the bean sprouts mixed in, which did not taste fresh to say the least. Despite its nice appearance, the kee mao was equally tasteless! On a positive note, the vegetables were cooked perfectly. I don't know what caused the dark color throughout the dish. I would have thought a sauce, but I couldn't detect it at all flavor-wise. There was a lot more heat in the kee mao, though I ordered both with the same (low) spice level. Each of these dishes is supposed to have a distinctive sauce on their own, so even going light on spice should have left them with some flavor. Perhaps I got a bad batch, but after $35 down the drain, I just can't bring myself to try again.

Fresh, authentic, and delicious! We ordered the radish cake, pad see ew with tofu (2 stars spice lvl), and beef satay noodles (3 stars spice lvl). The flavors were on point!! For the price point and the quality of the food, I must say it is one of the best Thai restaurants in the area. There is plenty of parking available in the lot. They only do take out services right now. Highly recommend! Incredibly friendly people and delicious Thai food.

This is by far the best Thai food around! It's the closest I've tasted to the food I've had in Thailand. We consistently get the Pad Kee Mao or the Pad See Ew. Perfectly cooked every time! We also venture out to other meals, like the chicken satay, which also have perfect spice, crunchy vegetables, and soft wide rice noodles. YUM! They don't have that fake overly sweet flavor other Thai restaurants can have! Here is there downfall, the wait time. You need to call them right when they open to put your order in. Today, on a Wednesday, we called before 5pm and the food wasn't ready for pick up until just after 7pm. There have been times we have called and the wait time is 3 hours (weekends)! So, plan ahead and be patient. If that doesn't work for you, look elsewhere! This a spot where patience is a virtue!

Very expensive, uncomfortable chairs and small tables, not conducive to relaxing dining due to the very small confines of the restaurant. You have to get up and get your own napkins from a dispenser located in front. Recommend takeout only.

Love their pad thai! It's more authentic than some of the others that you'd order from another Thai spot. Less ketchup-saucey and more of the light brown/tan color - not sure what the spices are, but it's very delicious. The spice here is also no joke. The pad see ew was also really good, lots of vegetables and flavor. I'm also a fan of their fried turnip appetizer - tasty and reminiscent of the XO sauce rice roll that you'd get at Chinese spots, or a similar Vietnamese appetizer. Overall, friendly spot and tasty Thai food! Highly recommend if you're in the Edmonds area.

As someone else said, "I am baffled by the reviews of this place". I couldn't agree more. This place gave me horrific food poisoning. I do not have a sensitive stomach, and I think this may have been the first time I've actually gotten food poisoning in my life. The food was bland and bizarre tasting. I did not eat anything else that day before their food so I'm certain it was their dishes. Seeing some other reviews on DoorDash about rancid tasting food as well.

What happened?? This was far and away the best Thai food anywhere and I would get take out at least once a week. A year ago I moved to a different neighborhood so have not been for a while. Tonight I ordered my faves: chicken pad thai and pineapple rice with pork. The minute I opened the pad thai I knew something was wrong. It smelled like smoke or dirty grill and this smell permeated the food. I have been eating that pad thai for 6 years and this was nothing like how it used to taste. It tasted burnt, was inedible and I had to throw it out! What a waste! The pineapple rice was not much better sadly. New ownership? New chefs? I am so so sad!

We've been going to Noodle Hut for over 2 years, and the last few times have been better than normal. Food is flavorful and portions are good (compare what you would get at any Thai restaurant in the area). I think the owners are doing an excellent job!

Very good and real spicy! I have high spice tolerence, usually do 3 4 stars at other places but this place 3 stars is no joke. Tom kha with pork and udon and pad kee mah were both good. Although I ordered Tom yum , they made its Tom kha, but its ok can order tom yum next time. The wait is long so call and order ahead. No dine in here.

Food was great. I've been to the locals and this one stands out. I found the environment very cool as the walls are plastered with all sorts of glad campaigns from throughout time. They include everything in their dining experience including a mini arcade for the kids at the front door. Literally a mini arcade. From the phone call to pick up the service was punctual and on time. Excellent food. I will be back.

Consistently great food. Tiny establishment, at the top of the hill. I didn't notice it when we first moved here. I'm so happy we did. My daughter loves Thai food, even her dad who claimed not to like Thai food...is now a fan, huge fan. Thanks to this place. We can call in an order, walk down and pick it up. We've never had a bad meal. Friendly employees. Quality food. Portion sizes are good for the price. You definitely should give them a try.

If I could give this place 0/5 stars I would. The food here is minimal of any Thai food. Also had almost no taste to my food but all spice when I only asked for a medium spice. Never eating here again and I quite frankly would rather starve than order food from here.

This place exceeded my expectations. The place is old and small and you would pass it if you didn't know it was there. I believe it's about a dollar more than your neighborhood Thai restaurant however I thought it was worth it. With large portion sizes and deep saucy flavor, this place is a great spot food pad see ew which is my favorite. I would come back!

We've ordered from here a few times over the years and it's always been a long wait and hard to reach people on the phone. However, recently, when I call someone picks up and is always so kind and helpful, the wait times seemed to have shortened as well. The food is still just as delicious too. No real seating there but an awesome place for takeout.

Very authentic Thai food. Pad See Ew is one of the most delicious I've had. Pad Thai is also good. Make sure you ask for less spice level than at other places. My dishes had plenty of heat despite being 2 stars only.

I highly recommend this place. The only reason I give this place a 4 star is because I only tried the pad see ew. If I could have explored the menu a little more my rating would change. This little hole in the wall has by far the best pad see ew in the area. Once you open the to go box, the aroma of fresh cooked seasoned noodles hits your nose. It looks appetizing and the taste is dynamite. Other Thai restaurants that serve pad see ew lack flavor and color, whereas the noodle hut is packed with yummy goodness! Small dining area and primarily more of a take out restaurant. Sooo good and I devoured my food quickly still wanting more.

This is a hole in a wall, almost literally. During COVID they don't take dine in, but pre-COVID the place can only accommodate 3 tables of 4. But the food is fantastic. It's not your normal Thai food, it's THE authentic kind and home cooked style sort of. They get a lot of to go order so they get super busy and when that happens, it'll take about an noir to get your order. So come during slow time and/or give ample time for your food order. First time ordering from Noodle Hit. I figured the Pad Thai would be a good start for a noodle place. It was unremarkable with no visual appeal - not even a carrot or cabbage or green onion. The taste was bland - no spice at all. Would not recommend.

I'm very happy that Noodle Hut had finally reopened! I am a regular customer at the former location in Everett. My top 2 favorites: Yen Ta Foh Pink soup (4*) and Tom Yum noodle soup(4*) The new place is smaller than the last place, so there might be a wait during lunch sometimes on weekends. But they do take out. Their food is delicious and authentic. Totally worth visiting!

It's like somebody's Thai mom made you dinner in their own kitchen. It's fresh and wonderfully flavorful. Your body feels better after you eating it rather than worse unlike most food that is takeout. Really clean & simple but wonderful flavors.

Noodle Hut is a hole in the wall and is take out only, no dine-in. However, it is one of the best Thai places north of Seattle, if not the best in the entire Puget Sound region. These are items I've had that rate 5 stars: Phad See Ew - the BEST. I've had it with beef and with tofu, and they use Chinese broccoli which I much prefer over regular broccoli. So full of flavor and not oily! Pad See Ew is the Thai version of the Chinese chow fun, and the Thai version tastes so much better. Noodle Hut certainly has mastered this. Tom Yum - they add noodles to the soup so it's actually a noodle soup meal in itself. The portion is generous and could feed 2-3 people. Tom Kha - it's a coconut lime soup with mushrooms and is similar in taste to Tom Yum. You can choose rice or udon and your choice of meat or seafood. Delicious, but warning - it's very spicy. Turnip cakes - no longer available. I hope they bring this appetizer back. I love the combo of sprouts and turnip cakes along with the tangy dipping sauce. Green curry with choice of meat (chicken, pork, beef, seafood, tofu). I've had it with chicken and with tofu and both were so good. Thai curries are the best when done right, and you can't go wrong with this green curry. Phad Thai - the only dish rated 3 stars as it was just okay. I've had much better elsewhere. I've seen reviews here that people love the Phad Thai here, so maybe it's just personal taste. To me, it was tasteless and nothing to write home about. They have these periodic specials that change every now and then. You can see these specials on the board inside the place, but only if you are there. If you call in to order, you have to ask and sometimes it's kind of hard to understand what the specials are. So I hope they find a way to advertise the specials online somewhere so you can order ahead (Not FB since I don't do FB). Overall, I love this place and it's a total 5 stars! Check it out and see for yourself.

I recently was craving phad Thai after work. I was sad because I knew past 10 no Thai place would be open in the area. As I passed noodle hut I saw their open sign on and decided to give it a second try! I met the new owner who has taken over the family business from his father. He is extremely kind and trying to get business to grow. I got tofu phad Thai and was amazed by the difference in taste and quality from my last review. The owner said they recently got a brand new stove and it is allowing them to use less oil and make better food. The phad Thai noodles were perfect. Still lighter on the sauce than I am used to but it was enough to pass my test. I got a 3 on spice and it was perfect. The price was unbeatable for Edmonds. Happy I gave this spot another chance and will continue being a customer of this family owned local business for my late night Thai needs. Delicious! When Pad Thai is served with lime and peanuts, I'm happy. Very tasty with lots of white meat chicken. Beware that "medium" spicy is extremely spicy! The crispy green beans and pot stickers were super crispy and sauce on the side of reach was great! I'll be back.Crispy Potstickers

The food here is amazing. This place is take out only and even with taking it home their fried green beans were crispy and flavorful. We get Noodle Hut once or twice a month and every time the food has been well seasoned and flavorful. There is a lot of good Thai food options in Edmonds but this is our go to!

The food is very good and affordable. I had Hot Basil Stir Fried with Crispy Egg for lunch and it tasted fantastic. Simple but good. Staff are friendly! Definitely comeback!

Their online menu hasn't been updated, but they have a printed menu tacked to the wall that lists several items available that aren't listed online. However, they do not have the turnip cakes, which are listed as available online, and the man at the counter said they haven't had it for a couple of months. I ordered the deep fried green beans (didn't seem particularly "Thai" but they were delicious) and the pad see ew and pad thai both at 3 stars, due to comments in previous reviews. Added soy sauce and hot chiles to both dishes. As for dine-in, that isn't an option. The place is literally about 6 feet wide and the only furniture, as of yesterday, was 1 chair. There is room to pick up your order and that's it. I've heard really positive comments about the food, so I will go back and give it another try and order some of the items from the flier that was available at the counter.

Noodle Hut has become a favorite place for take out for my partner and I. We love Thai food and Noodle Hut's recipes are some of the best we've had. Our favorites are the Satay Noodle (wide rice noodles with curry flavor, topped with peanut sauce + choice of protein) and their phad Thai. Their phad Thai uses tamarind and isn't the redish sweet version you see at some Thai restaurants. We usually get fried tofu as our protein and it's perfectly lightly fried and crispy- not the soggy blobs of tofu you might get at some places. They always have a special hand-written on their menu in the restaurant, in case you're willing to be adventurous. Be aware that the spice level is REALLY inconsistent. A "two star" might be mildly spicy one meal, then eye-watering bites the next. While we do enjoy spicy food, we err on the side of 2 stars at noodle hut. As other reviews have shared... this place is small! Usually ~2 people running the whole operation and seating for 8 total. The parking lot is small but there are 2 dedicated spots right out front for Noodle Hut only. Make sure you call ahead, expecting that you may need to wait 45-60 minutes on busy nights. It's SO worth the wait.

Updating this 4 years after my first visit to say I've tried so much of this menu, and each and every dish has been a revelation. One of the other reviewers mentioned that Anthony Bourdain (rest in peace), used to come here whenever he was in town, and I believe it. I've had Thai in a few spots around town, but there's really no point. Sone, and everyone else at Noodle Hut, have ruined me for all other Thai joints. And I'm ok with that. Personal faves right now: House Noodle Soup, Pad See Ew, Moo Sub Noodle, Beef Pad Thai, and always those Turnip Cakes. I would've bet a million dollars I'd get all the way through my life without putting a turnip in my mouth, but there you go. It's like crack, and I can't ever not order it. If a genie ever gives me three wishes, my first two will be that this place stays open and unchanged for at least as long as I'm alive. The third wish is that they create a new dish called "Pick 6", wherein you get a choice of six of your favorite dishes, sized down, so you can have a little bit of everything without breaking the bank, or ordering a month's worth of food. That would be Heaven. Choosing is so hard.

I missed this flavor sooo much! Too long have I gone without authenticity; spice levels and flavors not adjusted for the general populace but maintained in their pure and true forms. Definitely glad that the trip was made here. And why? Here's why: Pad Thai - Not orange - an indication that this place had exactly what I've been looking for; unsullied flavors. Each bite was a journey taking me back to the first couple of times I had amazing Thai food. Not sickeningly sweet, but having found the balance of sweet and savory. Even at the spice level of 2 (from 1-5) it had a bit of heat. (I am very excited to try it at 5 next time. With a glass of Thai tea close to my side, of course.) The lime excellently added flavor to the already-well-seasoned noodles. Loved the crumbled peanuts for the texture and supplementary tastiness. Pad See Ew - Tasty, but also very similar to other Thai restaurants. (It seems like most Thai places do a good job with pad see ew - thankfully.) Cheaper prices than most, but more than enough food to be eaten as two meals - stellar! Not only are the prices great, the owners are very friendly as well! Mind you, the wait time can be long (as from what I saw, only one person was cooking up magic), but it'll be worth it. Take some company with you (not too many - restaurant doesn't have enough seats for large groups) and enjoy wonderful food.
