"I discovered a new spot in Spring Valley where fans of watching hand-pulled noodles prepared live in an open kitchen can enjoy both Chinese and Japanese favorites: Noodle Show, which took over the former Golden Dragon Chinese Cuisine space at the Tropicana Marketplace near Tropicana and Jones. The menu includes soups and entrees such as kung pao beef and walnut shrimp, and appetizers like “spicy beef shank with dry tofu,” fried edamame and takoyaki. Handmade noodle options include the $9.99 Shanxi knife sliced noodle soup and a variety of spicy-and-sour creations; ramen ranges from braised pork belly to an elaborate $18.99 sea cucumber, shrimp, squid, mussel, and fish cake combination that the restaurant promotes for medicinal properties and for helping “blood pressure” and “hyper tension.” Dry noodles feature the “Shanxi Oil Spill” made with garlic, ginger, and beef shank, and the chow mein selection highlights Mongolian beef and “hot pepper shredded chicken” for diners who like heat.
