One of the best cocktail experiences in Hanoi! The drinks at Not were hands down the best we had during our trip. Huge thanks to Lam and Phong for their warm hospitality and incredible mixology skills, they made the night unforgettable. Fun fact: the name ‘Not’ is a clever play on the Vietnamese word “ngọt” (which means sweet). By dropping the “g”, they flipped the meaning — these drinks are not your typical sweet cocktails. If you enjoy bold, savoury flavours, this bar is a must-visit. We especially loved their TÂY BẮC Bloody Mary. It was unique, balanced, and simply delicious. While they specialize in savoury and adventurous cocktails, they also offer sweet and sour options to suit every palate. Highly recommend for cocktail lovers who want something different and daring in Hanoi!

Having heard of this place for quite a time, only now I get the chance to enjoy the precious moment here. “Not” is a very suitable place for weekends, especially within Tet holiday in Vietnam. The vibe is totally unique from other places that I’ve been to. Drinks were masterpieces. Although I didn’t order anything, the bartender gave me something appropriate: the flavor, mixture, alcoholic,etc. There were plenty of seats so it will be good for either groups or couple, or even alone. My money here is totally worth it, special thanks to the bartender that served me today.

I had a great time here. The overall atmosphere was on the calmer side. Drinks were amazing, the signatures are definitely must-trys. We ordered “Cốm Chuối” and “Cà phê Cốt dừa”, and were surprised by both of them—easy to drink, not too strong or heavy. The bartenders were not too talkative and took a bit long with our order, but overall pleasant.

By far my favorite cocktail bar in Hanoi!! The ambiance of this place was so chill and played a really great house mixtape. Got 3 drinks: Chả Có Rươi , Tom Yum Penicillin, & the Canh Chua Xơ Mít. The Chả Có Rươi was my most favorite drink as it was perfectly tart and pickle-y. Words can’t even describe how much I enjoyed this cocktail!!! If you’re a pickle lover, this is definitely a must try. 🙌🙌🙌 I was quite impressed by the Tom Yum Penicillin since the notes of how the actual soup smells and tastes like, were so bold (without any of the spicy and fishy taste haha). If you like sour fruits and cocktails in general, try the Canh Chua Xơ Mít; it was so refreshing and you could really taste the jackfruit. 😋 Staff was also so friendly and fun; look for Duc!! He was so lovely and kind enough to break down each drink for me! Overall, this place is a must to visit and it’s solo diner and foreigner friendly. Would come back to try more of their experimental & modern cocktails. 10/10 🤩

We were literally one minute from walking out, 35 minutes for two cocktails. They rushed over the drinks after remaking it from accidentally giving it to another group; it took them 2 minutes to make them. Overpriced. Waiter was rude to us but very friendly to the group of 4 next to us and served them first, even though we came 10 minutes earlier. Forced tip on the bill. Wouldn’t recommend, won’t come back.

Staff was very friendly, all of them speak English. Drinks were amazing with local Hanoian and Vietnamese ingredients.

The place was phenomenal, everything was spot on, we were welcomed warmly and the staffs could all speak english which was really helpful. Their drinks were nicely mixed and had a lovely vietnamese touch. Shout out to Lam, he was really attentive and kept asking us if everything was okay. The overall experience was10/10, would return in the future

Excellent discover, very nice place with really unique drinks. The bartender is super friendly, too. Highly recommended.
