I had dinner in this excellent, Guide Michelin recommended eatery located inside the medieval section of the town of Saillon a Thursday evening during the game season of 2024. You have the choice of three preset menus, one of which is "vegetarian" (including fish), all very well composed and including the same game garniture which obviously simplifies the work in the kitchen. The list of excellent local wines is equally well composed, featuring two wines of the chef. Service is impeccable and value for money good, despite a rather high per person cost. And as an extra plus, you return back home without your clothes smelling from the kitchen...

Wow, amazing restaurant worthy of a Michelin star. We were here hiking and turned up without reservation on a Saturday evening. We had the fixed Menu Bayard. Fabulous attentive service, superb food and wine at a very good price. We have traveled and eaten all over the world and this restaurant is one to definitely put in your agenda if you are in the region between Montreux and Martigny. Highly recommended!! We would come again without hesitation.

Oustanding - high end cuisine Thanks a lot for the wonderful evening! All courses were very special and will be remembered til our late days. Also, the wine was the perfect partner to the food. Cozy environment, friendly, supportive and flexible service.

Very nice exquisit place, the menu has not a lot of options but the things that or on it are really worth it! The fish was delightful, very fresh and made in perfect harmony with the sauce the waiter pours over it. The beef is also quite the spectacle. Perfectly matching the spinich sauce. If you are really hungry I would suggest you take 2 entries since the portions might be a little small.

Le cadre est élégant et moderne, l’ambiance chaleureuse, personnel super gentil. Les assiettes artisanales sont incroyablement belles. Un sans-faute du début à la fin. Au cœur du vieux bourg, un espace qui mérite bien son nom… Nouveau, innovant, original, le « Grande Chef » et son équipe proposent une cuisine puisant racines dans le terroir valaisan et en ses joies latines. TerrasseS, intérieur et accueil sont du même acabit : valaisan, saillonnais, méditerranéen. Des plats élégants et délicieux, du jamais goûté en une ambiance efficace, chaleureuse et attentive. Un moment d’exception au restaurant Nouvo bourg à Saillon ! La cuisine d’Andréa est un véritable voyage gastronomique, créée avec une passion palpable et une maîtrise remarquable. Le lieu est impeccablement tenu, et l’ambiance médiévale, chargée d’une énergie singulière, offre un cadre unique qui rend l’expérience encore plus mémorable. On y partage de superbes valeurs humaines et une qualité culinaire rare. Un endroit que je recommande sans la moindre hésitation.
