I written plenty about this place. Every time I visit I'm always extremely impressed by the people and the quality of their product.
Today was my first visit in about an entire two months, and calling my order in advance it was wonderful to be greeted by Kristen who greeted me by name. I hadn't seen her in perhaps as long as it's been since the days of snow had passed, so that was really nice. She immediately knew what pie I wanted as well as the roasted garlic addition that I love.
When I opted to order a second pie, I didn't know what I wanted but she suggested the Regina, based on my asking if there was a particular pizza that featured the buffalo mozzarella (fresh made in house) and being that this pizza was only a cheese and Basel I was uncertain of which protein. Pepperoni is too overrated, and I'm not a fan of sausage like I once was. She suggested ham, which brought to mind a very good, but I couldn't think of the name, Iberico, ham. So I said it was a great choice.
When I arrived, I realized I should've requested Prosciutto, so I asked her if it was what she had meant. No, but she said if I wanted it, she could still have it added!
I still don't know if the ham was indeed Iberico, but the uncooked prosciutto itself was a game changer!
I now have THE GO TO pie, that is going to take the Pulcinella from my top of my list and put it at the second tier.
Absolutely gorgeous flavor profile.
My little herb garden is serving up
Basel, tomatoes, thyme and other herbs to cook with. The ghost and scotch bonnets are still not ready to fry my taste buds and everything else behind my teeth, but I did have a scorpion pepper to accent this nights tomato pies, and my sweat is still burning as I write these words.
