NOVO New Dining

We were a group of 13 people and I did the reservation via email. The restaurant response rather quick and we manage to reserve the yuzu 3 courses menu. Interior design were more to modern minimalist style with open plating for guest to enjoy while waiting between courses. Middle of the room is a 360 rotatable table with minimum table available so if you are 2 people, would be fun to sit on the middle. The yellowtail fish with fig from starter was my favourite among all three courses although it might be a little bit too saucy but it fit to my palate. Service wasn’t top but passing the scores. Overall I have a pretty good evening and will definitely visit again.

I was a bit disappointed that there was little imagination to the request for a vegetarian meal. When reservation was made we were asked if fish was ok too. We said it was expecting that it some fish might be included instead it was all fish. An easy solution... Service OK but the hostess was not clear in her communication and the service at the table was almost robotic - when explaining the dishes it sounded more like it had been memorised - no passion. First you are offered something "extra" and after you commit you are informed of the price. Chocolates came around and we were offered one - only to learn that these are "extra" too. I am prompted to write this because I read some one-star reviews and the business' replies - all of which are argumentative and do not acknowledge the customers experience. Shame on you. Even going as far as to research person posting and checking how many reviews they've written on a given day. Really? Not the experience we expected. I recommend you go somewhere else for a better dining experience.

I visited Novo for the first time last year and had an absolutely amazing dining experience. You’re treated like a true VIP from start to finish. The food is impeccable, the atmosphere is both cozy and upscale, and the staff are outstanding. I can’t fault a single thing about this place and am already looking forward to returning this year.

Wow! What a surprise! Managed to get a table despite short notice. Even if our flight was delayed, the staff managed to rearrange things in order to accommodate us. Exceptional nice atmosphere! Great service! If you have the opportunity, we highly recommend trying the extra, Italian caviar. What a taste, what a flavor! What really stands out with this restaurant is its exceptional great value for money! One of a kind in these times. If you’re into cheese don’t forget to go for the cheese platter (extra). You’ll be served by the head chef and founder! Fantastic person to chat with.

Novo is one the experiences that you should have when you’re in Maastricht. A culinary, sensory trip in the best location in Maastricht. I always get surprised over and over whenever I visit. The attention to detail, the well thought menu, and the kind staff makes me want to come back with every special occasion I can to mark an unforgettable moment. Worth the wait!

A hip restaurant at the fifth floor of a repurposed industrial building. Access is with a lift into a chic interior. Pleaser cost seating, there is also a curved central table. Professional and friendly service. The highlight is the food, fixed menu. Creative presentation good taste combinations with good products. Wine pairing was good. It seems one must reserve a table months in advance and it is clear why.

This place lives up to its name- such a novel, gastronomic dining experience! Everything was delicious and perfectly plated, from the yuzu sake aperitif to the cappuccinos to end the meal. I highly recommend NOVO if you're looking to treat yourself to something special. Every single dish was bursting with flavor, each different from the other and equally memorable. The service is excellent, and the atmosphere is fancy but cosy-- which is a combination difficult to achieve. Also great value for money: a 5-course meal, 3 drinks each and a coffee, all for €75 per person.

Had a very nice evening there. 5 course menu with wine pairing for not even 70€. The service is very professional and the food was very good! I can recommend this place totally!
