Honestly this is one of those places that you go to try once to say that you've tried it and there's no real need to go back again honestly. I'm not really a Star Wars fan so I can't comment on the excitement and hype that goes with, but I do have to admit that I am a fan of the immersive experience at Galaxy's Edge.
My boyfriend and I were able to secure a walk in slot for Oga's Cantina as it's one of the dining locations in Disney that require a reservation. I've had other times where I've seen walk-ins available for Oga's Cantina so it's not super rare like say...Blue Bayou (have NEVER managed a walk in here sadly). Just keep in mind that if you're going the walk in route, you're more likely going to share one of those standing tables with a group of other strangers. Space is really tight for those tables and it DOES get quite crowded and cramped if you're not seated at one of those reservation tables or standing at the bar.
We were at a table with 6 other people and each person had a drink and shared a food dish, but I can't imagine what it'd be like if someone else ordered the entire menu or something lol.
Either way, once you get on the walk in list, they'll text you when to check in with the Cast Member there and you just stand to the side for a bit and wait and then you'll be escorted to your table with your group.
As I mentioned above it gets PACKED and it's really bumping in there. The actual bar area is the coolest as there's strange space/mechanical themed knobs, vials, glasses, smoke, and colored liquids to see. There is that robot DJ cracking jokes, MC-ing, and playing tunes in the back too. If you're in view of that, then it's pretty cool. If you're seated or standing elsewhere, it might not be as fun...
I guess the draw of this place is that it's one of the rare locations that you can get alcoholic drinks at in Disneyland Park, but I'm not a drinker so that fact is just whatever to me. I got to give it to the delicacies at Galaxy's Edge that they're unique looking and sounding to say the least, but overall, just mostly alright.
We got the:
1) Moogan Tea:
-Non-alcoholic drink.
-This is unsweetened tea with chocolate milk, vanilla, and cinnamon with vanilla whipped cream and some cinnamon cereal on top (I think they were Honey Smacks to be honest or a similar variant).
-It's a tasty chocolate cinnamon milk tea. It's not bad, but it's not something super fancy either. Taste about as sweet as a horchata.
2) Fuzzy Tauntaun:
-This is an alcoholic drink.
-It's Peach vodka and Schnapps with orange juice and sugar. There's "Buzz Button Tingling" foam on top.
-The tingling is extremely minimal, NOTHING like peppercorn or something mala like we were expecting (of course they would never have something like that at Disney). If anything it's like a pineapple foam so the tingling mostly comes from the acidity I'm sure.
-My boyfriend said it tasted like a mimosa or some other kind of orange juice with very weak alcohol to it.
3) Batuu Wild Bounty:
-This dish was the most "worth it" and unique of everything that we ordered.
-It's a focaccia bread with pastrami infused whipped cheese, mustard seed spheres, pastrami, chervil, pickle ribbons and salt.
-It's a neater looking bread and charcuterie type meat dish.
-The bread is nicely warm and herby and there's a good amount of meat and dip. Surprisingly not salty at ALL and an enjoyable snack dish.
Each diner gets a neat Star Wars paper coaster (different designs on each) and the Cast Members, as with every location, are attentive and great (albeit quite busy). We did hear people at our table complain how some of their drinks and food were too salty though which was unfortunate.
There's better dining experiences in Disney for sure, but if you truly are Star Wars pilled this may be worth it.
