We came all the way from Australia, very excited to finally try the famous Chef's Max Mariola's recipes at his restaurant, but unfortunately my expectations wasn't fullfilled. My husband and I ordered for starters the Roman Artichoke and the Polpettes and it was great... we got very excited until the main meals arrived. We ordered for mains the Spaghetti Carbonara, Fettina in padella (veal slice) and mixed salad. The eggs mixture on carbonara pasta sauce was raw (trust me, I know it's made with raw egg yolk) but literally I could only taste the running eggs and burned bacon.... really sad...
The veal was given to us overcooked and covered in oil, it was not easy to cut. The salad, oh gosh... for a famous restaurant, it could be a little bit more than just a small amount of lettuce, tomatoes and onions... any other restaurant in Europe serves a better "Insalata mista" than that.
I really feel sorry for Max Mariola, because I do believe he has invested his hard work, name and soul in his business, but he needs to take his chefs (in the kitchen) to another level of service. At the end of our meal the staff were hovering around us to move us on despite the fact that we still had our bottle of wine to finish. The venue was not busy with plenty of tables to spare.
I have to say that the wait staff that attended to us at the beginning was very nice and friendly, so thank you for that!
