A few friends and I dined at Osteria Di Passignano, and overall, it was probably the best meal I have ever had in Italy. Some of the dishes still amaze me.
I had not heard of the restaurant before I consulted the Michelin Guide, but was able to book a summer table with about three weeks' notice. The restaurant was not full when we dined there.
I didn't know what to expect, even though the menu was online. They had some absolutely amazing and inventive dishes, particularly a collection of meats in a tomato that had been boiled and peeled and cleared out. It was so unique and so delicious -- robably the best tomato-based dish I have ever had. The Ragu dish/pasta course was excellent, with a huge portion showcasing the best of Tuscan meats. While there were only four dishes before dessert, they were all sizable and you did not leave hungry.
The menu changes seasonally, so these masterpieces aren't available anymore. But I'm sure the next menu and the next menu are all outstanding and use fresh and local ingredients.
The wine list and sommelier were outstanding. There are some expensive options on this list, but the sommelier can guide you to your price point. There were many Italian wines to explore that I have never heard of or considered, and he guided us to some really good values that went with our food. (We did not do the wine pairing.)
Overall, an excellent meal with excellent service that I will remember fondly. That's why I trust the Michelin Guide!
