From the moment you enter the resort through the jasmine-scented archway, you know instantly that you are in a magical place. Nestled in the Itria Valley among olive groves, vineyards and trulli, the property is stunning in its elegant simplicity and warmth. While we have stayed at the resort in the past and loved every minute of it, this time we came for dinner. It’s an experience you don’t want to miss when you are in Puglia.
We started with an aperitivo in the charming covered terrace lounge overlooking the olive groves, vineyards and pool. Then it was time to find our beautifully appointed table in the outdoor dining area. We chose the restaurant’s prix fixe four course menu and left the dining decisions to the chef. Right away, we were treated to a series of incentive courses grounded firmly in the Pugliese tradition but elevated and refined both in their presentation and flavor. From the amuse-bouche of new fava beans, beet puree and herbs to the pork belly with carrot veloutée and other root vegetables, we were off to a delicious start.
On the table, we found Ottolire’s own extra virgin olive oil. Along with the housemade bread, taralli and grissini, these flavors felt refined yet familiar. And the rest of the meal unfolded just like this—beautifully presented, thoughtfully composed plates that showcase the bounty of this region. A particular mention for the Spaghetto di Michele, a seemingly simple pasta that was complex in its flavors and deeply satisfying. We’d eat at Ottolire every night just to enjoy this dish on repeat.
A word about service. From the moment we arrived, we felt so thoroughly well cared for by every member of staff. Each individual was highly professional—gracious, friendly and attentive to everyone dining. It’s not easy to cause guests to feel so completely at home is such an elegant, polished ambience, but every detail at Ottolire seemed to communicate that we were at home in the best possible way. And as a final note, the ratio of price to quality is outstanding at Ottolire’s restaurant. We have spent far more for meals that represent a quarter of this value.
Dining at Ottolire is a truly special way to celebrate your time in Puglia. While resort guests are present at dinner, there were plenty of dinner guests not staying at the resort. Call for a reservation—don’t miss an experience like this if you can help it!
