"Opening a new 6,000-square-foot headquarters at 7701 East Colfax Avenue by late March or early April, this longtime Denver coffee shop is adding a retail cafe, commercial roastery, training and tasting lab, and offices. I had the pleasure of stopping into Pablo's Coffee today. The ambiance is amazing!!! The artwork on the outside of the building, the flowers, the plants and decor inside are all awesome. I was greeted warmly upon entering and felt welcome. I ordered a Chocolate/Caramel Latte. And the lady making it was an artist. The flavor was rich and smooth. Not extremely sweet. Perfectly sweetened so that it doesn't ruin the lovely flavor. There is plenty of seating inside. And the ambiance is calm and warm. The employees are chill and friendly. I really enjoyed my experience at Pablo's Coffee! I do highly recommend.

I found this place on a whim and it was the best find ever! Pablo's Coffee is full of natural light and there are so many plants! And I freaking love plants so this was a huge positive for me! The staff are super kind and the lavender vanilla latte she recommend was delicious! The cheese danish on the other hand was just okay...which bummed me out because I'm a sucker for a good cheese danish. Although if it was warmed up, that might have helped! But I honestly still ate it all so it doesn't hinder my 4 stars at all!

Large, very good coffeeshop with some pastries. The latte was smooth and tasty. When I was there the pastry selection was limited. Service was fast and professional and the coffee came out quickly. The space has varied seating from a counter to tables to couches. They do have password protected Wi-Fi available for guests. The parking lot accommodates more customers than the shop is likely to have at a given time so parking is not an issue.

Beautiful, spacious and unique coffeehouse inside and out. Definitely not one of your generic places! Love all the greenery! Plenty of seating and some cute nooks...perfect for a coffee date...or simply to read a book alone while enjoying a coffee drink. Diverse coffee menu. Organic. Had a Cortado on this visit. Limited amount of pastries, but still delicious.

Nice coffee but had to wash out my mouth after trying their sickeningly sweet matcha. A good place should ask if you want sweetner. If the sweetner is in the mix usually its because their matcha is low quality and they need to cut the bitterness

Good selection of drinks and they actually have milk here which I appreciate because I definitely don't want oat milk in my coffee LOL The ladies working were super friendly and cool the building is filled with beautiful plants some of which are for sale and it was a really nice space to relax in! It's our first time here from out of town and we will definitely be back!

Factory store for Pablo's coffee. Roasting happens in the back. Small pastry selection in a comfortable, albeit industrial setting. But the coffee is delicious. If you're a coffee nerd, stop in to get a taste of one of their coffees before you buy a bag.

I stopped in because of the 'bean thinking about you' sign. Also I am a small business owner on E. Colfax and need to stop going to Starbucks. I'm going with 'Draegon' for the two employees working that I interacted with - amiable and readily creative when I gave adjectives of how I enjoy my lattes. I've been converted. Better lait than never ;) !

I love the staff, the service, the coffee, and the snacks. All around 5 star experience. There s always plenty of parking and seating available. I appreciate that they have a small amount of kiddo toys so I can have a few minutes of quiet to let the caffeine kick in. While the space is large with tall ceilings, people seem to keep their conversations calm so it doesn't get too noisy.

Enjoyed this coffee shop when I utilized it mid last week. I was going to a different coffee place that's only several block away from Pablo's but it was unfortunately closed. Upon realizing it, I did a quick search for an alternative on Yelp and Pablo's came up and it was a walking distance from where I was. This is on the busy street of Colfax. There is a huge sigh right in front of the shop so it's definitely eye-catching for many drivers. For that, I'm pretty sure people make a spontaneous stop to satisfy their coffee needs. Very spacious place with high ceiling. Plants are visible throughout. Eco friendly place always resonates with me. The lady at the ordering counter was so welcoming. She made what I just needed: triple shot of cappuccino!! She did ask me I truly wanted three shots because 12oz cap already comes with two shots. I said my loud and firm "yes" to that!! The stout cap hit the spot! I stayed there to finish it thoroughly enjoy the atmosphere. Since it was past noon, the store was close to empty with only a few other patrons. This allowed me to have a relaxing "me" time. Much needed break from my day job. Upon exiting the place, the same lady who was at the exit door thanked me for coming and asked me how my cap was. I, of course, told her it was great. Her pleasant smile made my day.

Cute space! Pretty quiet on a Saturday around noon but I loved the environment! The plants and decor made it very modern but also cozy. I got a lavender latte and it had the perfect amount of syrup. Will come back to hang out and read sometime.

Pablo's coffee has always been my go to.. absolutely love the coffee..the girls that work here are the sweetest people they always make you feel like family.. It's a very large space that is comfortable and there is always a place to sit! If not you can always do the community table! They do pop-up donuts on Saturday that are so delicious I always seem to miss it so get there early! Honestly they have 3 locations and they're all great! But the East colfax is my go to..6th Ave in the spring and summer nice outdoor sitting..

Super cute coffee shop with lots of space and an open floor plan with natural lighting everywhere. They have some really lush greenery as well that gives the space a comfortable natural vibe. The coffee itself is reasonably priced ($3.25 for a latte) and delicious! With the free wifi and large parking lot, this makes for an ideal spot to hang around to do work, read, or spend time with a friend or 3. Unfortunately, they don't have much in the way of snacks/food. There's some limited pastries that are available to purchase but otherwise its pretty much just caffeine. Definitely worth a stop if you're in the area!

Great coffee place at the corner of colfax and Syracuse. They make a terrific oat milk latte. They have any and all kinds of dairy alternative milk options and the traditional ones, too. A classic coffee menu with something for everyone is what you'll find here. Service is friendly and the vibe is always positive in this place. Don't drive by, head in for a great coffee drink and maybe a pastry.

This is one of the best coffee shops in Denver. Excellent espresso and skilled baristas with a wonderful drinks menu. I love that they have so many allergy friendly pastries. (Try the chocolate chip cookie...you won't be sorry!) I also love that they will make drinks in mugs to have there instead of to go cups. They have lots of comfy seating and even kid's toys for the little ones.

Stopped by on Friday morning to try this place and right beside the front door is a woman selling cheap backpacks to raise money for abused children. She was nice but it annoys me that she was SO close to the only entrance and bugged everybody going past. Awkward. Once inside the rather large building, it's confusing where one was supposed to order as there were no signs. I mean, the interior was nicely decorated with green plants and plenty of tables, and it wasn't terribly crowded either. Nobody was behind the counter and I certainly wasn't greeted by the young woman who finally came. I saw there were "homemade" flavorings and asked for sugar free vanilla but she showed me the Torani syrup. I chose to go without and ordered a large latte. Nobody was making the drinks for at least 5 minutes and I was told the barista was on a break...? The girl didn't take my name either so there was some confusion about who's drink was who's. I finally got my drink and it was rushed so the milk wasn't warmed very well and it cooled my overpriced drink WAY too much and it was only warm. Tasted good, but I was disappointed that it wasn't hot.

How have I not reviewed Pablo's yet? This is my GO TO Place on the regular! The coffee is never bitter, burnt or old. Legit can smell them roasting in the back. The baristas are amazing at their job and never too busy to chat about a drink or what's new there. Super cute ambiance and easy to work! I will not move out of the neighborhood unless Pablo's comes with me.

I can't believe I didn't try Pablo's earlier. Across the city, they have the most consistent espresso I've had. It's dark, bold, and delicious. This is the most modern and spacious Pablo's location, and perhaps the only one WITH wifi! Because of where it's situated, it's a lot less crowded than the other spots. A good amount of room to work and mingle, though the tables are somewhat small. A small patio. Fresh treats. All around a great vibe.

We stopped in for a coffee and a quick bite to eat. The two ladies at the counter could not be less friendly. When asked for the wifi password, one of them just points at a sign without actually speaking. We watched as they didn't speak to each person who walked through the door. Too bad, we always try to go to local cafes when traveling but this one we will skip in the future.

Nice to see an upper end coffee shop On Colfax. First time here . Wifi should be in a pronounced spot .. Staff was not friendly at all .. I asked for a warm up if my latter which was barely warm and the woman acted like I was putting her out .. Honestly she shouldn't be working in a coffee shop . Everyone was confused on what coffee was there .. They do not make any of their own food either! It's a one and for me sadly ..

New Pablo's, who dis? Although the E. Colfax coffee shop has been around for a year and a half, it seems new to this guy! The open space is a damn dream for folks like me who need to get sh*t done on their laptop. It's also a wonderful space if you're looking to catch up with a friend. Is drip coffee your cup of tea? (See what I did there?) Stick with the Danger Monkey blend. It lives up to its name ten fold. Oh, did I neglect to mention free refills? Please and thank you! Baristas were so nice I wanted to start my own business just so I could hire them. They were quick-witted and extremely friendly. In fact, they demanded that I come back to the counter for my free refill. I couldn't keep up with their sarcasm pre-caffeine, but I appreciated their sense of humor immensely. And compared to most Denver coffee shops, there's plenty of parking. Win, win!

Excellent cold brew and lattes. The prices are reasonable and you can bring your own reusable cup for an additional discount! I love it when businesses encourage customers in this way. The interior is very cute and they let you self-serve your milk, even oat milk, for your cold brew. We don't live in the area but visit Denver a few times a year and always try to visit this place!

A beautiful new Pablo's! This place feels 100% different than their location on 6th and while they're both good in their own ways, this one feels like a step up. Lots of space, a modern new look, great coffee, and friendly staff. Did I mention parking? The perks of getting out of Cap Hill! Made it in for an Americano with oat milk that totally hit the spot. Prices are standard for Denver and the baristas were the furthest thing from snobby. It looked like people were working on laptops which is a no-go at their location on 6th, so add this to your rotation of coffee shops, remote workers! Happy to see this local spot grow. Congrats, Pablo's!

My husband is big Pablo's fan, even more so now that they've got a location on East Colfax. We stop in every few Saturdays to pick up a bag of beans and enjoy a pastry or breakfast burrito. Blueberry scones are pretty damn tasty! And now that winter is over officially, the garage door is open for plenty of sunshine and warm breezes. There's plenty of indoor and outdoor seating for customers. Very welcome addition to the neighborhood!

There is not a lot to say about Pablos. They have the best espresso in the metro area: Period. And if one is an Americano aficionado, this is where you go. Being allergic to nuts, I do wish that they offered uncontaminated nut-free pastries. I often just bring my own, but it feels a bit awkward.

Try their vanilla latte; you won't be disappointed. Their chai was okay, a bit on the spicy side if that's your cup of tea (; The layout is spacious, minimalist, and super cute. It makes you feel fancy just to be there. I love their variety of plants and the grey wall with the 2 chairs.

As I am starting to explore more of East Colfax and all the coffee shops in the area, I find this location a major let down. I feel like they have gotten away from the ambiance of their original spot, which is one of the big reasons people go there. This building just feels generic and has been overdone in Denver. I had the Vietnamese coffee and I didn't particularly like it. I usually like Pablo's coffee so maybe I should just stick to the basics here. Everything else was pretty status quo. In the end, the experience of it all was very mediocre from the ambiance to the coffee, especially in comparison to some other coffee options nearby.

I have loved Pablo's Coffee since I first moved to Denver and when I had the chance to make it to the East Colfax location a few months ago I was pretty excited that they had come to this side of town. And it didn't disappoint. After my first trip there I've found myself at Pablo's countless times - for meeting friends or to buy coffee for myself or to give to others. They have Wi-Fi if you are looking for it. And a few snacks, but not a ton of food. This is also where they have the roastery as well as a training and cupping lab and I've read somewhere that they will do classes for the public using the lab which sounds pretty cool. I personally like the design aesthetic here. It's light and airy and doesn't feel cramped. The tables are on the smaller side so two people working together might have a hard time fitting, but two people talking or one person working would be just fine. There are a ton of great coffee shops in the area and each of them have their own feel and purpose. I'm glad to have Pablo's join them!

This was really disappointing! We were so happy to see Pablo's move into this dilapidated building on Colfax. Unfortunately this was our first and last visit. The space is huge and very open. Unfortunately it is cavernous and barren. A few tables and chairs and some plants. Not cozy, comfortable, warm or inviting. A few sofas, big comfy chairs, a book nook with books/magazines/board games all would help. I would never want to spend an extended period of time here. More importantly I ordered a soy chai from a distracted barista whose only greeting was, "I'm listening". I was informed no soy, but oat milk is delicious in the chai. I took the recommendation and it was undoubtably the worst chai I have ever had. It was undrinkable. She also filled the cups so high that when you carry it to your table it spills everywhere. I like to support like local vendors but I will take Starbucks over this any day. Big miss here Pablo's... try again or this building will be vacant again in no time.

If there is a coffeehouse in Denver to avoid it is Pablo's on East Colfax. I was given to understand that this coffee was special roast and worth it. Nothing further from the truth exists. Terrible both in product and service. I had a regular coffee; hello McDonald's you have competition. My girl had a chai with oat milk. After one sip, she said, "this is undrinkable." There are ways to improve the experience. First, offer more and better coffees and stock chai. Second hire baristas who are inviting and customer service-oriented. Our person greeted us by saying, "I'm listening." How about "hi, what can I get started for you?" Add more furniture and make it comfortable. For us Stapletoners, we want a new destination coffee joint. Please Pablo's find a way to deliver!

So sad that I get a bad product, did not post a bad review, waited and tried to see if the baristas would make it right- offer me a free drink, or even at half price. Unfortunately one of the employees said, " try a different one next time." It was not that the drink was a wrong fit, it was a bad drink- either bad milk or an imbalance of ingredients, not what I ordered ... not sure which.

On a recent trip to Denver, we kept driving by this coffee shop. Finally on our last day there, we decided to pop in half an hour before closing. Nobody seemed like they were over it or trying to rush us out. On the contrary, they were super nice and talkative. They had even made too many baked goods, and literally gave them all to us for free (they were delicious by the way. Especially the blueberry scone). I had their iced mocha, which was a little too sweet for my liking, so I gave it to my wife and ordered an iced soy latte, which was perfect. If I'm ever in Denver again, I plan to go back.

Pablo's is just cool. Just cool. I admit first time I came here I never thought I'd love it so much. Only thing that came to my mind was just how cool the entire atmosphere is. It's so serene, all the design are just mellow and fantastic with nothing screaming out for attention in your face. And the touches of green plants here and there are just perfect to complement the whole aura. They also have a really nice customer service at Pablo's that rivals any around the area. And the coffee! Oh just don't get me started on the coffee. It's just heavenly. I totally recommend to anyone.

Pablo's newest location and there's WiFi!! Space was formerly "Compton Mart" - I've got mixed feelings about gentrification but can't help but loving the space, the coffee, and the staff! Lots of plants, lots of light. Feeling a little bit sterile at the moment but they did just open. Overall, a great addition to the neighborhood.

I like the Pablo's on 6th and Washington. This location has an industrial feel to it. But what is more off-putting is that the baristas at this location, who are decidedly less then friendly..., though they have worked at the shop on 6th and Washington, insist on improperly making Americanos. Any well-trained barista knows that when making an Americano, that after filling the cup with hot water, one should slowly pour the crema down the side of the cup to create a nice crema. No matter how matter how many times we have asked them, they just toss the espresso into cup. It just turns out to be a cup of coffee. It's infuriating because PABLO'S ROASTS THE BEST ESPRESSO in town, IMHO. (They could take a lesson from Evan, the barista at QuinceEssential, just across the street. He does it right!) In addition, Pablos should have a free "coffee refill" policy for those who have bought an Americano. Why? Because they have a free refill policy when someone buys coffee and an Americano costs more!

Okay, I love their espresso and like, most of their roasts. I have frequented the shop on 6th & Washington for many years. It's a great store. This shop on E. Colfax is sterile in appearance and atmosphere. But what annoys me most is that no matter how many times I tell them, "no room," the person making the coffee, even though it has often been someone who previously worked at the store on 6th & Wash., they always leave way too much room in the cup. AND, everyone who has ever worked in a coffee shop making drinks knows, that one does not "toss" the shots of espresso into the water. You slowly pour the shots down the side of the cup to create a nice crema. Everyone but the baristas who work here, evidently. Or, worse, and this is what I fear since we have quite politely asked them to please slowly pour the shots in the water, they just don't care. Wanna see how it is done. Go down the street to QuinceEssential Coffee House (Quince and E. Colfax) and have Evan make you an Americano. You will be so pleased sipping on the rich crema, you will even forget that you are drinking Kaladi Bros. espresso and not Pablo's.

So happy to have another coffeeshop in the East Colfax neighborhood. The space is light, bright, and airy and includes plants. The staff is friendly. Unlike their other locations, this one offers wifi. I can appreciate that they don't want to offer wifi at their other locations, but I am so glad they have it here. I'll definitely be back. If you live in the neighborhood make sure to stop by soon!

Great new spot on east colfax. Location is very light and airy and the price for an Americano is super reasonable. Definitely a much needed spot in the neighborhood. Came in here to work for an afternoon. Sat at the community table with a friend. Some of the other tables are a little small for two people with laptops to fit and the only drawback is the lack of outlets in the space but I'm guessing this was intentional so you can't be a workaholic there all day long. Coffee was delicious and service was very friendly. Good job Pablo's!

I've tried quite a few coffee shops in the Denver area, and this is easily my favorite. With other places, you might get a really good espresso drink but it's often highly dependent on the barista. Some are good, some are not so good. At Pablo's, they're all fantastic. I don't think I've ever gotten anything other than an expertly poured latte here. On top of that, they're all super friendly and will go out of their way to give you the best experience possible. Every time I go someplace else, I find myself comparing it to Pablo's and inevitably, the competition falls far short.
