This place has completely ruined me with coffee. Owners are very involved with the business and quality control. I have never seen a coffee shop so concerned with quality control. It’s not uncommon for baristas to regularly quality test shots that comes out of the machine and not uncommon to see them dump out a shot, readjust the grind due to humidity, pressure in the room, or just because they aren’t feeling it. They live for coffee and will nerd out about coffee to the point where you will go cross eyed. Every where I go outside of Palate (with an exception to Still Vibrato), I will always think “This doesn’t touch the quality of Palate. What am I doing here.” However, I don’t drink coffee for the caffeine because genetically I have a very low tolerance so I stick with decaf MOST of the time. Occasionally, I’ll get the real deal so I can see into the future a few hundred years but that’s followed by palpitations and paralysis. That said, it gives me more reason to be particular.
It’s not just about the coffee, they take a lot of pride in their atmosphere and are very intentional about who they hire which is why great conversation happens here and they have very low turnover.
If you like the burnt roast like what Starbucks does, you may not enjoy this as much.
