An exceptional fine dining experience at Palodu.
I was traveling solo in Málaga and really wanted to try Palodu’s tasting menu at the bar. Though unavailable when booking, I was accommodated at a table upon arrival—a fortunate turn, as the full view of the open kitchen truly enhanced the experience.
I loved everything about the place—the clean, modern vibe, the way they use local ingredients, and how every little detail was just right. I went for the Palodu tasting menu with wine pairings. The food showcased technical skill and thoughtful composition. Dishes incorporated wood-fired elements, fermentation, and subtle Japanese influences without overwhelming the core Andalusian identity. Standouts included precisely grilled hake and red mullet courses, and amazing vegetable courses of zucchini flowers and green chickpea with delicate sauce.
The wines were equally outstanding - a crisp, vibrant Palomino Fino, refreshing white to go with fish courses, an elegant style Ribero del Duero red, and an intensely floral Noctiluca Moscatel de la Axarquía - one of the most intensely perfumed sweet wines I’ve tasted - they really worked well to elevate the experience.
Yet beyond the food and wine, what truly stood out was the exceptional service and the seamless teamwork between chefs Cristina and Diego and their staff. Warm, attentive, and deeply knowledgeable, they made me feel completely at ease in the refined setting. Sitting close to the open kitchen for three hours was like having an extended Omakase dinner, or a front-row seat to a live Chef’s Table episode, it was inspiring to see the entire team operated with calm, focus, confidence, and synergy.
Having dined at several fine establishments across Europe and Japan recently, I can confidently say Palodu is among the very best. Their concept, culinary artistry, wine selection, and service are all operating at a very high level. They deserve recognition and are undoubtedly on their way to even greater success.
For anyone who appreciates fine dining, Palodu is a must-visit - a truly extraordinary experience that I couldn’t recommend more highly. My meal here was, without a doubt, one of the highlights of my time in Málaga.
