"Unlike other European cities, Madrid didn't boast much of a bread scene until graphic designer-turned bread baker Javier Marco came along with his artisanal sourdough and opened Panic in 2012. To this day, he sells six basic loaves, for which people continue to line up around the block, complemented by some incredible cakes baked by HomeCake. You'll occasionally find some pretty epic sandwiches (bocatas) here too, along with his magic touch on the traditional Pan Tomate. Make sure to ask about their occasional bread baking workshops."

The best baked good in Spain so far, their sourdough cinnamon roll is simply amazing!! It’s soft in the center, perfectly cinnamony without being too much, the edges are crispy and it’s not too sweet.

Wow. I’m blown away by the chocolate roll — soooo chewy and moist and pure deliciousness 😍 I’m super picky about my cinnamon rolls too so this place is definitely impressive and worth it!

Amazing bread. Heard about this place reading online and figured my husband and I could grab some along with cheese and do a cheaper sandwich lunch on our own, since it’s very pricey to eat out every meal while traveling. All the breads are fermented. Note, if you are interested in getting cheese - you have to check out the cheese shop next door!

The bread is as bad as the owner is in bed. Very limp and gives you a bad taste you in your mouth. I have to go to the doctor now.

Walk in and the place immediately smells like fresh sourdough. The basic bread has a thick sturdy crust and an extremely chewy stretchy texture. It has a strong sourdough flavor. Great loaf of bread

Simply the best bread in Madrid! Very nice people as well. The only issue for me that you have to reserve by phone if you want to collect it in the afternoon. WhatsApp booking would be a nice option.

I'm super impressed with this bakery. It's extremely rare to find a place that uses stoneground flours and slow production methods. I ordered a loaf of sourdough. The flavour is deep and complex, I'm going to struggle not to eat the whole loaf in one day! The staff are nice too. I have limited Spanish, they were patient with me.

Rude and smug service. Twice have I been mocked for asking for sliced bread, despite it being a product that is sold at the bakery! "Don't you have a knife at home? We should charge more for people who can't pick up the crumbs after cutting their own bread," they said, rolling their eyes. Well, I'm sorry for not being part of the "elite" bread clique who cut their own bread. If you feel so strongly about a product, maybe you shouldn't sell it? Thankfully, there are too many bakeries around for me to have to put up with someone who judges and belittles my taste — all the while charging well above market price for the dubious privilege.

Excelente!! Definitely worth going out of the way for a bollo de chocolate or really any of their fresh breads! This is pick up only - no where to sit and eat. Still worth it!

The brainchild of former Graphic Designer Javier Marca, Panic ushered in a new era of baking when it opened in 2012, Madrid's prior lack of artisan Loaves soon flourishing and still anchored today by six basic styles sold at Calle de Conde Duque 13. Mixing modern thinking and classic technique, essentially a workshop across from Conde Duque cultural center, it is prior to Panic's 09h30 opening that a small queue starts to develop including locals, tourists, old and young alike. Focused more on Bread than Pastry, but well-priced across Wheat, Rye, Spelt and organic Grains amidst Sourdough, travelers are fortunate to find half-Loaves available surrounded by hearty Crust, the Crumb's texture precise with just the right amount of stretch whether in Marca's Centeno or unparalleled Cinnamon Roll that frequently sells out before it has time to cool.

Anyone who does not give this place 5 stars is a grumpy human whose taste buds were burnt off years ago. NO, even in absence of taste buds this bread is still a textural treasure! Came for a whole wheat loaf but they were sold out. We were told there would be more around 3 pm. We purchased what turned out to be a wonderful sourdough. After the first bite I looked at my watch so to calculate exactly how long until I will be returning for my hot freshly made Whole wheat Sour dough. Fun tips- there is a wonderful cheese shop next door so you can basically get everything you need in this world to be happy. - you can call ahead to reserve your loaf of creatively crafted carbs!

It is suggested that you pre order your loaf and with good reason. While anything they have will be a explosive gluten filled delight most breads sell out shortly after being removed from the oven. This is the best bread we had in not only Madrid but Spain! We knew we had found our Spanish fortress of fermentation when we molested the crust and it crunched so load it almost woke my daughter. This crust protects a chewy pillow of small air bubbles Incased in expertly fermented dough. Celiacs can come here also... not because they have a single gluten free item, it's simply worth the near death experience.

Good bakery selling mainly whole loaf of bread but also croissants and some cookies. I had a croissant that although a bit pricey (EUR 1.80) it was really well made.

Fantastic bread. Definitely worth a trip if you're nearby, and if you're not. Another reviewer mentioned limited quantities and recommended a call first. That is wise. Look forward to visiting again when in Madrid.

Without a doubt the best bread in Madrid. Besides bread they sell nice cakes down the block and seem to be starting experiments with interesting cinnamon rolls. I recommend getting the pan de semillas (seed bread) and grabbing enjoying with some butter or, better yet, blue cheese from the place just down the street.

Great bread, hand made, truly artisanal. Especially the white sourdough boule and the "palo" . Be aware that there is limited production so you might want to call ahead to reserve.

Among all the tapas and pinchos, I was missing good bread. The crunchy, flavorful artisan bread common in Portland, Oregon. Thanks to yelp, the internet and the fact that I was staying just a few blocks away, we bumped into this place. I don't get the name, but I did get some cheese tart and yummy bread that I was missing.
