"El Parian Atelier combines European techniques with bold Oaxacan accents, and the results are nothing short of incredible. The chef, an alumnus of Grupo Olvera, does wonders with fish and vegetables like cauliflower prepared as a velvety risotto, oyster mushrooms that surprisingly have the same texture as pork carnitas, simply grilled fish, and hollandaise leveled up with epazote. However, meat stands on its own thanks to dishes like a New York strip served with celery pureé. While the bar on the first floor is enticing for spending an afternoon sipping agave-based drinks, we recommend reserving one of the four tables upstairs." - Mariana Camacho

We recently ate dinner at El Parian and it was delicious. Our table was upstairs in The Salon, our bilingual server was friendly and efficient. He also did excellent job of helping us balance out our order. Cocktails were very good, I loved my mezcal-tequila-Sauvignon Blanc drink! Might sound odd but it was spectacularly good. Between two of us, we ordered the tacos de sepas (must have!), the gorditas de pavo (good), teradito (very good, not heavy on the soy like many ceviche-adjacent preparations in Oaxaca) and the mole with duck (also excellent). The food is delicious, service was above and beyond. Highly recommended.

Some of the best food that we had in Oaxaca! The menu is thoughtfully crafted and well executed. The cocktails are very original and the food was gentle for my stomach after days of heavy ingredients! Would definitely go back.

Incredible food, amazing vibes, and excellent service. Our waiter was fantastic — we asked him to help us choose dishes to share between the four of us, and everything we had was SO delicious and different from what we’d normally order. The cocktails were also incredible — perfectly balanced, creative, and just as memorable as the food. We’ll definitely be back!

From the moment you walk into El Parien Atelier, you feel the warmth. The thoughtfully lit space and staff are so welcoming! Then there’s the food!!! Chef Israel Loyola puts so much love into what he does, and it comes out in the delicate and creative flavor profiles! He’s a master and is on a mission to deliciously push the boundaries of contemporary Oaxacan food, while remaining humble and open to keep learning and growing! An absolute must if you’re in Oaxaca. You will not be disappointed!

The food is as delicious as it is beautiful. The mole negro is a must have. It was our favorite we had while in Oaxaca. Our server, Alejandro, was so warm, friendly, knowledge! And he is fluent in English.

Wow! What an incredible experience. From the atmosphere to the music to the service (thank you Valerie & Alex) to the food! Every bite was wonderful. So many flavors perfectly put together. My regards to the chef. Valerie recommended the 5 course tasting menu which was off menu, and I could not have been happier. I will be back the next time I’m in Oaxaca!

We stopped in for a small bite and a cocktail (which were incredible!) and after Juan told us he could do a customized mezcal tasting for us, we came back the next day. He was knowledgeable about mezcal, coffee, and shared a bunch about Oaxaca’s cultural landscape. We’ll definitely come back to this place next time we’re in Oaxaca.
