Road Trip Along the Vermont Cheese Trail

"A mile up the road, this farm store showcases Alpine-style cheeses from cheesemakers Rachel Fritz Schaal and Peter Dixon. Their four cows—Helga, Abigail, Clothilde, and Sonia—graze at a nearby school and yield delicious product like the two-month-aged smoked Kashar, a Balkan-style “pasta filata” cheese with a mild, buttery, slightly peppery flavor, given extra oomph by Vermont apple wood smoke." - Sophie Friedman

1st of all, if you go here on a Sunday (uncertain about other days), just be aware that this place is built off the honor system. You walk in an unlocked bldg and are expected to pay honorably, or no cashier on site - cash or Venmo* (*Beware: the Verizon cell service is awful here (I had 4G-1 bar) and was unable to pay thru Venmo) so I had to pay in cash. If you don't have cash on hand, you're likely SOL. Now, the cheese... WOW! I bought the large Smoked Kashar and Cornerstone. Both cheeses are unique and have their own amazing aroma, taste, and texture. If I had more CASH on hand, I would've likely bought a couple more blocks between their MANY varieties of cheeses in the fridge. I'll def try and stop by again someday!

We are fortunate to live near an Italian market that sells cheese from Parish Hill Creamery. The cheese is absolutely awesome! The Cornerstone cheese is outrageous and was unanimously loved by a large group of people we served it to recently.

West Wing Blue two-curd Gorgonzola is one of the best blue cheeses I've ever had. I'm so sad I only had a small wedge of it. Really friendly people, hope to visit the creamery some day to see the cheese making process

An awesome self-serve spot! Can pay via Venmo or cash box. Got the Cornerstone cheese, best described as a durian of cheeses: a strong funky odor but deliciously creamy and tangy. Sort of wished I got the black currant purée but maybe on the next visit!

Exquisite, real cheese that so worth its price. It is heartwarming to find places like Parsh Hill Creamery that take pride in what they produce. You can taste their defication in every morsel.
