The Hottest New Restaurants in Las Vegas, October 2024

"The hospitality group behind Carbone Italian Restaurant opened a location of its wildly popular Italian restaurant right next door, inside the Proper Eats Food Hall at the Aria. Its most popular dish, the chicken parm sandwich is slathered in melted cheese between seeded Italian bread." - Janna Karel

The chicken parm sub is one of the best I've ever had. Chicken had crisp to it, the bread was soft and tasted fresh. All around really good flavor and texture. I highly recommend!

Parmesan: It's like glitter for your pasta, but way tastier and less likely to get you uninvited to craft night. The menu of Parm Famous Italian is inspired by the cooking of Michelin-Starred chefs Mario Carbone and Rich Torris. Impressed? Well, sit down because you might be disappointed. We ordered the Chicken Parm Hero ($18) here at Parm. A Parm Hero? More like a Parm Villain. The flavors were off and the chicken wasn't crispy. Chicken cutlet with parmesan and mozzarella on freshly baked seeded Italian bread should be great but here at Parm, it's decent at best. Parm Famous Italian sits inside the Aria's Proper Eats Food Hall and adds variety to this great dining area. Perhaps they were having an off day so why not give them a try? I'd be willing to give them a second chance. Lets kiss and make up, Parm!

Have eaten here twice over the past year. The chicken parm sandwich is pretty solid as are the mozzarella sticks. The pizza knots are ok. Like everything at Proper Eats, it is pricey for what you get. You can order at an electronic kiosk or via QR code on your phone. I like the Vegas food hall concept and Proper Eats is one of the best options in that group, but I'm probably headed for Hattie B's of the secret pizza place at Cosmo for a quick meal on my next trip. I'd put Proper Eats above the food hall area at Caesar's.

Google
only tried the mozzarella sticks at Parm Italian, but wow—they were the biggest mozzarella sticks I have ever had in my life! (These mozzarella sticks are HUGE!) Not only were they massive, but they were also well-seasoned with a perfectly crispy exterior and gooey, melty cheese inside. Even though I didn’t get a full meal, these mozzarella sticks alone made an impression. If you’re craving a solid appetizer, Parm Italian definitely delivers on size and flavor!

Google
Untasty. Disappointed with this dining experience at Parm inside of Proper Eats at Aria. First, there was a table with seating that blocked the order kiosk so I had to order from the side of the kiosk while a man sat at the table blocking the view of the screen. Then it prompted to add meatballs as if the meal didn’t come with meatballs so I spent extra money and wasted food because I didn’t need a side of meatballs. All items were in separate categories and the spaghetti didn’t come with bread but the ordering system didn’t suggest that and didn’t show a picture. Regardless of my mistakes or lack of awareness in ordering, the spaghetti was not good. It was microwave lava hot, tasted basically like stewed tomatoes and the meatballs were squishy with a weird flavor. The person that laid out the trays was nice. That’s an excessive tip system for me to place the order on a kiosk and have a tray laying out for me (see receipt). I will choose wisely next time and go to Moneyline in the casino gaming area for a hot slice of pizza.

Google
Ordered two Italian subs the bread was very cold and hard. The mozzarella sticks were flavorless. They boast on their sign that the bread is made fresh daily but it’s not.

Google
Ordered the Meatball Sandwich. Good dish and delicious. Easy ordering process using the kiosk or the food hall website.

Google
Tried the roast beef sandwich a s it was perfect. Bread was really good, the beef wasn’t dry and had a good taste of herbs.

Yelp
SO GOOD After eating at carbone the night before we had to come here for a little snack. We ordered at the kiosk and our food came out very quickly. Took a minute to find a table, but all in all a fast & easy experience. The food is just like the menu at carbone! Rigatoni carbone: AMAZING. So yummy, Caesar salad: so good, only differences from carbone was the crutons weren't as good and there was no anchovies, but all in all, delicious! Will definitely be back!

Yelp
Mid. I think the staff does a great job but I'm not impressed with the food. Next time, I'll wait a while for a worthy reservation at Carbone. The spicy fusili wasn't that good :/ It's located in the Aria food court! I think they overcooked my pasta and it tasted funny.

Yelp
Parm Famous Italian is a food stand located in the Famous Foods Food Court in the Aria Hotel/Casino. We heard lots of hype about this place and wanted to give it a try so we shared a Chicken Parm Sandwich. It. was a very average chicken parm sandwich with a thick chicken breast that was prepared reasonably well. I thought the bread was on the squishy side. I also thought the cheese was rubbery and the sauce was bland. The sandwich wasn't bad it was just ok. Maybe some of the other menu items show what a Michelin stared chef can do?

Yelp
Eaten in this food court many times - usually the breakfast place. Decided to try the Italian place. Went with a meatball parm instead of my usual chicken parm. What I got was undercooked, flavorless meatballs. Quite disappointing considering other meals here have been above average at worst. Perhaps the chicken parm might be decent. I may give it a shot in the future as long as it's being picked up by my folio. LOL

Yelp
Located in the food court area of the Aria, Parm is a solid option for a grab-and-go or counter service meal. I ordered the chicken parm sandwich, and it was average - nothing really stood out, but the portion was hearty, but so was the price tag. Food was ready about 5 minutes after placing the order at the central kiosk, so pretty efficient in that regard. Seating is open, first-come first-served.

Yelp
More of a 3.5 stars. Been wanting to try this place since I heard they were opening. I ordered the chicken parm hero and the spicy vodka pasta. The pasta was great! Really, really good and an excellent substitute if you can't get a reso at Carbone. The chicken parm hero on the other hand was not good at all. I REALLY wanted to like this. I've been dying to try it and unfortunately it really was bad. Something tasted off. I thought it was the bread but upon tasting the chicken on its own, it was definitely the chicken or the breading. It just did not taste good at all which I'm very sad to report. I feel like people have been haters in these reviews so I really wanted to give them a win but am unable to with that parm sandwich. I would absolutely recommend the pasta though and I would come back to try some of the other items!

Yelp
This shit was smack and a HALF. Styled like a fast food joint but tastier than many high end Italian restaurants I've frequented. Rich, creamy basil pesto with speedy service and plentyyy of parm, my favorite ;)

Yelp
Currently in soft opening. Tried the roast beef hero and garlic knots. Portions are generous and service was fairly quick. The roast beef was tender and flavorful, but the garlic knots were a bit too hard/crunchy. Looking forward to trying their pasta dishes!

Yelp
Much nicer than other food courts but the real draw is the food. The Caesar salad at Parm is excellent and the spicy rigatoni is also very good. Portion sizes could use a slight upgrade but all-in-all this is a top fast casual option. You can easily order from your phone using the link in the food court or from the in-room tablet if you're staying at Aria.

Yelp
Proper eats newest addition has some growing pains for sure. I've tried many of the other spots in proper eats and though they are quite pricey. The portions are decent ish. But $15 for these salads is a war crime by Parm. Mixed in with these $12 meatballs that are obviously rare in the middle. At least the sizes of the meatballs were decent. But dang a $15 tiny salad. I guess only go here for the pasta and sandwiches. At least the portions were decent.

Yelp
It's pricey for the portion sizes but the rotini and spicy vodka sauce could satisfy the craving. It's just unreal fountain drinks are now running $7.

Yelp
I am a huge Carbone fan for some select items so was anxious to try their legendary Caesar @ the new Parm Famous? when I read about in on Eater. Its Carbone minus for the masses in a hurry. Carbone may have one of the best Caesar salads in the world in all my decades of fine dining. It also has a great vibe. Parm has a negative noisy jam packed food court vibe. They could have come up with something better IMO but ok moving on it is what it is and its not Carbone and never will be. Brilliantly they put the Caesar on the Parm Famous menu! While the salad here was what got me to their door and it is a respectable one it loses something in the transition from its Carbone original recipe. Its quite chilled (a good thing) but served in a paper bowl which immediately loses something and the dressing doesn't get the smooth creamy texture a made to order salad does @ the real Carbone. This may be as the dressing comes right out of the refrigerator pre made likely so it congeals somewhat rather than spreads magnificently. That said its a great thing for those that may not pay the price or have the opportunity to ever experience the real deal @ Carbone. There are no anchovies on top a plus for me I don't like them except in the dressing. And the croutons were room temp not warm like the restaurant. A Carbone Caesar made to order is a 10 this one comes in at a 7 close but no cigar. That said I will be back for it as it takes time to dine at Carbone and reservations can be tough to get.And this one satisfies enough of the craving The chicken parm The main event? Hard pass for me based on reviews and watching them make it. Its more bread than chicken & pricey. I'd rather go for a few bucks more and go to a sit down venue who does a full size portion in fine dining.Vegas has a number of good spots for that already. I plan to try their pasta next. But if I decide to overpay for a sammy I'd likely go to Wexlers adjacent and try their 28 dollar pastrami sandwich.Looked pretty good. If I was deciding for the parm folks I would make a bigger thicker chicken parm more like what they do with their chicken or veal parm @Carbone. Not do a high end fast food version. That would get folks talking.Maybe big enough for two thicker, tender, juicier. People see more value in big size portions even if sharing.Perception now is high prices skimpy portion. Not good in town where everything bigger and flashier is better in the eyes of many. The overall concept is good but expectations run high for a high priced self order take away.Team members while hard working were unfriendly and seem bothered when I asked how to order. They grunted over there! As if I should know better. I imagine its a lot of work but kindness goes a long way anywhere. Even for first timers there like myself. One must get on a line to order @ a kiosk and there is only one or two of them in the restaurant I spotted where the should be at least 6 in a high volume food court side by side. The screen works ok but the payment system works poorly and it wobbles as you try to swipe tap or insert your credit card into the subpar device.Highly irritating and time consuming and then they ask for a tip for your work lol. What could be worse? Arias ATMs asking for a tip to access your money for a fee? Alternatively you can scan a code and order on your phone a royal pain when you go to pay My early assessment its worth a try for some of Parms items I still think they could do better and I expect a lot of love hate posts As even in their fine dining unit Carbone the food runs from sublime to why bother. That said always with a true touch of class and great music to dine by. My only suggestion to the Carbone/ Parm folks is bring in the lemon cheesecake from Carbone and I promise to be a regular! One of the best recipes in the world always fresh always perfect and a must have! Bon Apetit Food court lovers @ Proper Eats

Yelp
Not good. Got the chicken parm sub, bread was soft, shouldve been toasted. I only went to this place because the bread looked good. Everything else was hot, so that was weird. Ceasar salad was good. Annoying how every place in the casino and really most of vegas asks for grutuity for something that shouldnt require it. I have to walk up and get my food, then throw it away when im done, so why are you asking for a tip? Even the donut shop there asks for it, so tacky

Andrea J.

Yelp
Spicy Rotini was up to par with Carbone's Spicy Rigatoni. Almost got another order. Chicken Parm was decent but could be a lot better if the bread was a french bread type or at least toasted. Prices are also insane but that's Vegas for you.

Jean-Luc P.

Yelp
Wow what a huge disappointment! From the owners of Carbone I was expecting really good Italian food and bigger portions for the money. Almost $20.00 for a six inch chicken parm sandwich which quite frankly had zero flavor and was very bland. The chicken had no seasoning to it and the tomato sauce was bland with zero flavor. Ragu tastes better to be honest. Not worth it at all. Very over rated and I would not come back.

Yelp
Mozz sticks were unimpressive. Cheese was barely melted inside. I've been to this place in Manhattan and the Vegas location is shameful compared to the original.

Yelp
Love Parm in nyc. The pasta here was just as good. All of the entrees are in sub form. The food was hot and fresh. The food court was comfy.

Yelp
Who goes to a place called Parm and doesn't get the Parm sandwich? The bread is soft but doesn't fall apart when you eat the sandwich. The sauce is simple, not too acidic, the cutlet cooked well and not dry. Friendly service completed my 5 star review.

Scarlett C.

Yelp
Only had the mozzarella sticks here, and they were fine. The sauce was too thin. Definitely overpriced, but that's the food hall at Aria for you. Too bad they got rid of the 24 hour restaurant with good, solid food.

Janet Y.

Yelp
The food wasn't the best. My family got their sandwich but thought it was bad so we got their pesto pasta instead but it was still average. I got a burger from another place instead and enjoyed it more, but the service was great.

Andrea C.

Yelp
Food was absolutely fantastic, easy to order, fast friendly. I can't wait to go back still crave the roast beef.

S F.

Yelp
TERRIBLE ..... Meatball sandwich cold, Roast sandwich cold, way salty on a rock hard roll! Eat anywhere else in Proper Eats, but not here!

Adam ..

Yelp
Food was not tasty. I had high expectations. But the delivery was poor. Sandwich was not tasty. It looked good, but didn't taste that great. I won't be returning here.

Beast M.

Yelp
Food was poor. No flavor and sauce to acid. Took a while to get the food. The staff was very friendly though.
