One-Star Pas mus: A Former Architect's Culinary Revolution in Lithuania

"Led by a trailblazing former architect with a love for history, nature and the arts, this One-Michelin-Starred restaurant channels Vilnius’ legacy of welcoming immigrants and diverse religions and cultures into a contemporary menu that works with local Lithuanian ingredients while applying Nordic and Japanese techniques to refine and concentrate flavors, giving familiar products a new perspective. Dishes are deliberately restrained, with the team avoiding unnecessary details and sometimes limiting the number of ingredients on the plate. A deep connection to nature drives a focus on micro-seasons and whole-plant use: Mirabelle plums appear at multiple stages—from fully ripe fruit where both flesh and pits are used, to tiny, unripe specimens up to 1 cm with incompletely formed pits that proved delicious; plum blossoms become syrups, marinades and teas, and even winter branches are infused. Much of this produce is grown, harvested and preserved by the chef’s family, with her mother’s small yard helping to stock the restaurant and everyone collecting plum pits from jams and seeking out unconventional plants not usually used for food in the local culture." - Caroline Howley

Chef-Owner Vita and her small team do everything they can to make the experience thoroughly enjoyable and you can really feel their passion. Candles drip on the walls as you sit at wooden tables made by Vita’s partner, enjoying a succession of innovative dishes that blend together seamlessly. Truly amazing experience at Pas Mus. The service was incredible, attentive, and prompt. The food was delicious, so fun and innovative. It was my first experience with Lithuanian cuisine and it was an exemplary introduction. The highlights for me include a scallop dish, the tartar, and the most succulent duck. The wine pairing was fantastic. The sommelier took time to get to know our preferences and tailored it to us. We absolutely loved our experience and highly recommend it!

We had a great time at PasMus. Let’s start with the negatives. The dinner was advertised for 2h30-3h00, which is typical for a restaurant of this type. However, our four-and-a-half-hour meal for two people was quite long. The time flew by in the beginning, but the last hour was a bit painful. On the positive side, the restaurant is cosy and offers both table seating and a chef’s table. The staff was professional and passionate, and not a lot of restaurant could deliver such quality of service in Vilnius. I particularly appreciated the sommelier’s passion for sharing her knowledge during the dinner. The food was good, and we enjoyed the variety of marinated/fermented dishes they prepared themselves. Overall, we had a great time with the ten different dishes. Nothing extraordinary, but it was high-end cuisine. The dishes were simple yet delicious, and they were worth the price. The portions were the perfect size for this type of experience, and we didn’t feel overly full after the meal. Overall, PasMus is a good place to try, but there’s room for improvement in terms of time management.

Its an unique experience. Sitting at the bar like inside of a chef's kitchen. Every dish (10 of those) was carefully thought of. Every ingredient in the dish was original and carefully assembled. A complex symphony of flavors, excellent service, and a charming place.

It’s not only about food, it’s about the experience (by the way - food is also fantastic :)) if you want to have a great and cozy evening, with fantastic food and atmosphere, “Pas Mus” is that place. I truly understand why they received a Michelin. Thanks for an amazing evening!

A great experience at this Michelin restaurant. We had a lovely tasting menu packed with flavour that was balanced together with the wine paring. The sommalier was attentive and changed wine promptly as soon as we informed it wasn’t fitting out palatte. Cozy atmosphere and very neat decor. Overall we had a lovely experience and was warmly welcomed by staff present serving us.

Flawless experience from start to finish. I felt pampered and well taken care of. The team is young, confident and orchestrates the service harmoniously. Waiting times are ideal to enjoy a good bottle of wine at ease and not get bored waiting for the next course. The meal was inventive and fun, dotted with Lithuanian trademarks - the fermentations, local meat..flavour wise: it had umami, it was moreish and joyous. Could very well live off the duck, the scallop pizza and desserts. Curious to see what they do next!
