"Closing on Sunday, December 28 after nearly three years, this 24-seat cheese and accoutrements counter—the first brick-and-mortar home for Kara McGrath’s locally sourced cheese company that began during the pandemic—operated in the former Dio Wine Bar space and offered cheese plates, charcuterie, and wine pairings in a sit-down setting. "After deep and painful consideration, I’ve arrived at the decision to indefinitely suspend bar operations at the end of this year," McGrath writes. Local Cheese Takes Center Stage at H Street’s New Paste & Rind | Eater DC

"Opening on Thursday, February 23, I learned that Paste & Rind has become the first brick-and-mortar home for Kara McGrath’s locally sourced cheese company in the long-vacant space that formerly housed Dio Wine Bar. The sliver of a space seats 24 and operates as a cheese counter and accoutrement shop with a sit-down area for cheese slates, charcuterie, and wine pairings (initial hours Thurs–Sat 3 p.m.–9 p.m., Sun 11 a.m.–5 p.m.). At any given time there will be about 30 cheeses in the front case with four to five featured on rotating slates; one- to two-person slates focus on a single cheese with accompaniments (chocolate, dried fruit, nuts, jams), bread from Fresh Baguette, and a suggested wine pairing. The opening menu highlights FireFly Farms’ “Bloomy Breeze” (pasteurized cow’s milk, soft, bloomy rind) with honey, dried strawberries, and candied pecans ($13) and an “Amber Cheddar” from Chapel’s Country Creamery presented with Old Bay popcorn, Bartlett pears, and onion jam ($15). Customers can add duck prosciutto and Spanish-style fuet salami from Maryland’s MeatCrafters or beef liver pâté, curate slates for three to four with wine pairing suggestions, and choose from a full wine list plus a handful of beers. McGrath — who grew Paste & Rind out of pandemic-era online sales, markets, gift boxes, catering, guided tastings, and a cheese club that grew from 10 to 35 members — plans to retain and expand programming like members’ nights and producer-led tastings, and emphasizes sourcing handcrafted, artisan cheeses from small regional producers (D.C., Maryland, Virginia, plus some from Pennsylvania and Vermont) whose practices are ethical for animals, the planet, and staff." - Emily Wishingrad

I had new appreciation of cheese and charcuterie coming to this place. You don’t come here for the fanciest or extensive cheese collection. You come for the amazing charcuterie/cheese pairings. The two person team was very fun and knowledgeable. The Appalachian cheese with shallot confit was my favorite bite.

Paste and Rind was one of the best things to come to H Street while I was living there. The perfect wine and cheese bar with owners and staff who you can trust to steer you in the right direction with their recommendations each time you come in. It’s been great to see their business grow since they opened. Even though we don’t live right across the street anymore we still make the trip in to see them regularly. The trolley club they have is also great and a fun way to try new cheeses and accompaniments each month.

I am so incredibly grateful for Kara & Aaron (& the whole Paste & Rind Team!). They put together the wedding "cake" of my dreams. I can't believe how lucky we were to have found them. They were so amazing to work with it was unbelievable. They picked the perfect cheeses for our Wedding Day cake, and were on site to assemble (and more importantly disassemble!) our beautiful spread of cheese. It was literally a dream come true. This is an amazing business run by incredible people who truly know and love their cheese! I can't thank them enough.

My bff and I visited this place on Saturday and we loved it. It's a small cheese shop with quaint seating areas. The owner, Kara, was very friendly and made us feel welcome in the shop. (My friend was extra elated to meet another Kara spelled with a 'K' just like her daughter) We ordered the three cheese sampler and my favorite was this Alpine style cheese. We also had a couple glasses of the rose. All of it was delicious and we will definitely be coming back. I would say the place is a perfect spot for a first or second date. It's also a great spot to have an intimate conversation. The only issue I have is that it is not exactly metro accessible as it's a 20 minute walk from either union station or NOMA station. But it is worth the visit. So please stop by and support a small business if you are in the area.

Such a lovely place filled with subdued, stinky and intense cheese (and wine). I watched the owner build this place on Instagram and it is so great in person. We tried the black and blue cheese slate and it did not disappoint. They also have a wonderful selection of cheeses for on the go guests. Looking forward to many a nights drinking wine and eating cheese at Paste and Rind!

One of the best places in DC. Their staff is wildly knowledgeable about the cheese they serve and the makers they come from. Celebrating American cheese with tried and true "old world" sometimes available. Constantly updated menu with seasonal pairings, amazing wine list and delicious beers. The focus is often on local. Cannot be beat, go get some cheese!

We got the cheddar plate and the cheese roulette. The cheddar was absolutely amazing and came with a delicious pear mustarda. For the cheese roulette, they gave us a Gouda which was also delicious. The service here was great and the staff were very helpful when ordering. I will definitely be coming back!

Great little spot. I ordered a medium board for my daughter's bridesmaids while they were getting hair and makeup done. The cheeses were unusual and tasty and the board was thoughtfully crafted.

What a sweet wine spot! We came just before close on a Sunday and I am so glad we stumbled in! The small shop is bright and airy with high ceilings. Their tiled bar seating seats at least 10 people, with tables up in the front near the entrance for larger groups. There were also 2 seater high tops in the back that people were reading books at while enjoying glasses of wine. The service - amazing! The two people behind the bar knew all about their wines and were able to suggest some glasses to us off their Women in Wine list for March. I liked that while the rest of their wine list was from your typical wine producing regions, their Women in Wine selections were more local. They also do events and try to incorporate themselves into the community since they're local - so really a great local wine and cheese bar! They also have a wine and cheese subscription - it looked amazing and pretty affordable, too. They also just recently opened a spot in Union Market - I can't wait to check them out there!

We stopped in shortly after their grand opening and had a pleasant experience. The space is VERY small and tight, but if you're able to snag a table or barstool, you'll be able to better enjoy the offerings. Fun Charcuterie boards almost outshine the wine. Wish they did flights/tastings as the per glass prices are a bit high.

I haven't tried this place because they decided to close for a private event and post nothing on their site and not answer phones. We, and several other people, stood out front trying to figure out when they'd open today and nobody bothered to come out and let paying customers know when we could buy cheese. We waited 30 minutes and tried to call twice but I guess customers aren't worth it to these guys. Ouch.

From the moment I walked through the door I could tell this place is special. The ambiance is that of a cozy, intimate living room you'd gather together with friends to engage in stimulating conversation for hours. It's just that welcoming. The service was exceptional. I was greeted by the cordial husband and wife duo that own the establishment and immediately was offered the menu, suggestions on wine pairings, and which cheeses they'd recommend to a novice like myself. I ordered the 3 cheese slate with the Cava Brut Métode Tradicional wine per the owners' recommendation. The pairing was spot on. I also ordered the Duck Prosciutto. The Wild Rosemary cheese will throw you off at first because it actually tastes like rosemary - go figure! I'd highly recommend that and the Duck Prosciutto which is insanely delicious, so much so that you'll want more! As much praise as I give this establishment, there is a con. Given the intimate setting, it is quite small - seating can be limited especially if you have a larger party - so I'd be curious to see what happens on a busy day or night. Despite that, I'd highly recommend you check them out!

I was introduced to this business by receiving a present of the "Twelve Days of Chessman" last year. Loved it and so recently spent a happy Sunday afternoon with friends enjoying the wine and beer and cheeses. Fantastic cheese selection by people who really know their business. Great service; nice ambience and there wasn't any other dining business that day so we could sit as long as we wanted. I see from other reviews that it's sometimes very busy--Sunday seems to be a good bet. The only downside is that it's a long way from our home in Rockville--but the trolley means you can get there on public transportation. Tip: The chessman wheel makes a great gifts for parents/parents in law. Try it! We're hoping for a repeat this year.

Absolutely fantastic little cheese and wine shop. We stopped in shortly after they opened -- perfect pit stop ahead of a reservation or nearby show. Charcuterie boards are on point. Friendly folks working the bar. A few weeks later, we ordered a charcuterie board for a party and they hit it out of the park. Board was the perfect size and received rave reviews from guests. And don't sleep on their Trolley Club... they even deliver locally! Very much recommend.
