This is not your typical Mexican bakery. There are no pastries here. Pasteleria Gama makes cakes. And only cakes. "Pasteleria" means "cake shop" in Spanish.
Entering the small shop one comes face-to-face with a huge display case filled with a variety of cakes in a rainbow of intense colors. A feast for the eyes (there is nothing subtle about the Mexican color palette).
We pre-ordered a tres leches cake for a birthday celebration. The cake was ready when we arrived at the appointed time. While the counter person showed me the cake before packaging it, my eye kept wandering to the cake decorator in the rear of the shop. He was definately in his element, a "performance artist" carefully applying a layer of white frosting to a tall cake that slowly spun on a lazy susan. Had I not been in a hurry I would have stayed to watch him complete his work.
Our 8" tres leches cake, which easily serves 12-15 people, was pricey at $30, but it was fabulous. Moist, but not soakingly wet. Flavorful frosting that was not too sweet.
