Pavin 86 is a cozy, chill restaurant with solid pastas! I've walked by it several times in the UES but finally got to check them out before the dinner rush on a Friday night. It smelled so good upon entering!
Started off with their caesar salad and their complimentary bread. If you like a sauce-forward, creamy salad like me, then this is it! Veggies were fresh but most importantly smothered with their peppery and anchovy-driven umami salad dressing. The bread was fine but I liked the whipped butter and olive sauce/paste that it came with.
For mains, the pesto pistachio was very tasty! The sauce was nutty yet herbacious at the same time. The carbonara featured a good balance between cheese, egg yolk, and the guanciale. Each bite had a fragrant savory pork flavor. Pasta were al dente and matched the sauces respectively. Be sure to save from bread so you can soak up all the sauces!
While I appreciated how they didn't rush us out, service was on the slower side for NYC. Staff were nice and friendly. The brick walls and fairy lights made it feel very intimate. I wish I got a chance to check out the back area, which seems popular amongst other guests. Excited to come back to this solid neighborhood pasta spot!
