I genuinely am in awe of Chef Ziska and how well he and his team respectfully pay tribute to the Faroese flavours, ingredients, and methods and put them on bold display in this wonderful course menu. I was really looking forward to this dinner, especially since I was admiring KOKS’ book prior. I was excited to see what Chef Ziska had in store and he did not disappoint! The horse mussel with carrot and sweet potatoes, the cod, the langoustine, and the fulmar were absolutely on another level. That’s not to say the rest of the dishes lacked, they were absolutely delicious and showcased Faroese flavours and techniques proudly. There wasn’t a single dish that disappointed, it truly was a meal for the ages!
