Efficient, friendly service. Beautiful setting, furnishings are modern and clean. Excellent soundproofing. When the door is closed it's a wonderful oasis, dark and calm. They lose a bit of the aura when the staff are hustling about and walking a dolly right thru the dining room though.
They're still new but I think their lack of menus or prices from the outside is not great and might be intentional. I'd have liked to see menu and pricing before sitting down but the curious Yelper in me took a leap of faith. But I had already read reviews and peaked inside so I had an idea that it'll be on the higher end for Viet.
On to the food. Had to get the classic special pho with rare beef, brisket, tripe and tendon. Tripe and tendon, I'm just happy they have it. The rare beef is fine, good quality and decent portion. The brisket is trimmed, without huge chunks of fat. This is appreciated. Noodles are fine, not too soft or firm. The broth is light and clear, sweet and enough flavor but doesn't cross the line into overly salty. It's not rich though but then again they never claimed it would be. Solid but underwhelming perhaps.
Ultimately, the experience is fine. I get what they're going for with the decor and ambience. It'll be a good sit-down place but it's pricey for lunch. The value proposition is also poor if you're doing takeout, as you're paying elevated prices but not really enjoying the ambience. I'll be back to see if quality comes thru to match the prices for other dishes but they'll have a high bar to clear.
