Travelling between the States of Oregon & Washington the last few days, wanted to have a hot bowl of Pho as the weather cooled down to warm our souls.
After searching on Yelp, found this lovely little Pho shop in Vancouver, WA. The place is nicely decorated and has a warm feeling, especially the booth tables, the bamboo partition give diners a bit of privacy.
Ordered two bowls of noodle soups:
The House Special Pho: Very rich beef broth! With immense depth, spice and sweetness are well balanced. Pho was cooked to perfection and has a nice bounce to it!
Bun Bo Hue: Spicy, rich, filled with lemon grass fragrance, the beef shank slices are cooked just to the right consistency, the only thing that's missing from most of the BBH nowadays are the Pig's Trotters & the Pork's Blood to make it authentic, but I guess it has to adjust to the wider audiences' taste and I am beginning to get used to that trend now Oh, the noodles are slightly over cooked here hope they will take note of that. Overall, still a very solid bowl of BBH!
As I always say, when travelling in the States, it's almost impossible to find any towns without a Pho shop now, and their standards are pretty good too and some are even outstanding!
