Really wasn't expecting such a fabulous find, while wandering the side streets of Astoria, but Pilot House drew us in and wowed us, from the layout of the tasting room, to the various liquors available.
We were alone when we first arrived, although other guests show up shortly afterward. It was so quiet, at first, you could hear a pin drop; I didn't even see the bartender at first, until she greeted us. We poked around and marveled at the distillery in the back at first, then browsed the menu, while our server explained the history of Pilot House's operation, as well as the various products available on the tasting menu. I settled on the $10 flight of three, selecting jalapeno lime vodka, chai tea vodka, and ocean aged whiskey. I also ponied up for the separate absinthe tasting, itself $10, because apparently I am a fan of absinthe, despite abhorring licorice flavor in all other forms.
I should have asked how many times they're filtered, because each of the sampled liquors was incredibly smooth. Other than a quick hit of spice upon the first sip of the jalapeno lime, each of them went down easy. It would be hard to choose a favorite, although the chai tea vodka would probably see the most play in our house, as it would mix wonderfully in just about everything, from coffee, tea, eggnog, and whatever else we could come up with. It bears a wonderful aroma of gingerbread, and immediately warms you up! As for the other two, the ocean aged whiskey was a pleasant surprise; apparently it is aged in barrels that are stored and rotated through various ocean-faring vessels for months at a time, imparting a gentle saltiness that is almost imperceptible. The absinthe was also excellent, the bitterness of the wormwood cut down by the dissolved sugar. I would get in a lot of trouble if I had bottles of that at home!
We grabbed a few bottles and mixers to go, and learned, thankfully, that there is another tasting room back home in Portland, off of Mississippi Avenue, so I expect to drop in and check that location out soon, as well!
