Upon opening the door to Pinky's, I was awash with the smoky, redolent, and unmistakable scent of crisply fresh pizza. A promising sign!
On a Saturday at 7:30pm, there was one table and a few seats at the bar open. I opted for table. The room was dim yet lively, and the service very friendly. My friend and I opted for two 10" pies, as we were hungry and didn't know that they did split pizzas.
The Melito (marinara, mozzarella, pepperoni, sausage, deep applewood smoked bacon, pineapple, serrano pepper) was salty, spicy, and balanced. I am a moderate spice eater, and Melito had the perfect kick. The pineapple offset the spice and salt well.
The Buscemi (mozzarella, roasted potato, bacon, rosemary, walnut & ricotta) was an interesting combination of textures and flavors. For my personal taste, the potato and the ricotta combined made for too much soft wet texture without adding much flavor. The bacon was not sufficient to salt the pie against the ricotta and potato. The walnut was a good crunch, but would have been tastier toasted. My friend said there was too much rosemary for his preference, but I enjoyed it.
The crust is medium thickness; not the overwhelmingly dense/thick bread type nor the high-risk-for-collapsing thin neapolitan type. My friend the pizza making aficionado noted that the crust was slightly overdone, to which I would agree it was a bit more chewy and burnt than I would have liked.
I have faith that Pinky's other pies deserve another chance and that this was a one off for me; I just didn't order the right item. Their other pies had amazing combinations of ingredients and I'll be back to try another pizza with a drink too.
