Ramen Shack, an OC Restaurant From Ramen Burger Inventor, Closes Permanently | Eater LA

"After just over a year in San Juan Capistrano, I watched the Ramen Shack close its doors at the end of July, its final weekend filled with regulars and devoted followers coming for one last bowl; the shop opened early at 10:30 a.m., the kitchen was slammed and tables were backed up, but no one seemed upset. The tsukemen with a thick tonkotsu dipping broth and the signature shoyu ramen were selling well, and small moments — a regular bringing Cream Pan croissants, Heritage Barbecue’s Daniel Castillo arriving with slow-smoked brisket and Shimamoto improvising an off‑menu dry noodle bowl coated in a sweet soy‑chili sauce with fresh arugula and a sizable slice of brisket — felt like reminders of why the place will be missed. Behind the scenes, staffing and supply-chain problems (his sous chef left in March and he couldn’t find the right replacement), worries about consistency, and the fact that his viral Ramen Burger was only an occasional special all strained the business; Shimamoto also faced significant health scares (chest pain and an ongoing evaluation of a lung issue) and said he’s stepping away to focus on his family. Apprentices from the shop have gone on to open places like Menya Hosaki in D.C., Shimamoto plans to bring his expertise to the Way of Ramen podcast/YouTube channel, and his partners will convert the space to a Filipino/island breakfast concept called Breezy — though he hasn’t ruled out bringing Ramen Shack or the Ramen Burger back in the future." - Jenn Tanaka

We stopped by for lunch. Service was friendly and prompt. My son accidentally knocked off his soda glass and they were quick to clean up. Food was so-so. We ordered Galbitang- beef rib soup. The meat needs to be more tender, simmer for probably another 30-45 minutes and it will also give the broth a deeper flavor. I never had Ttokbokgi that I did not like, until our order came out. It did have a lot of the fish cake slices, but the flavor and spice was just not there. Mom had the teriyaki salmon bento box with California rolls. The rolls were not seasoned right- it was flavorless. The salmon was kind of fishy. My son had the Gyu don- beef bowl. He said it was ok.

I loved this restaurant! The menu was very expansive and from the two things we ordered: A spicy tuna poke bowl and tongkotsu ramen- it was amazing! They even gave us two tangerines afterward which was so kind and cute. I will be coming here again with a hunger for more things on the menu

Nice people. But they skimp you on the protein in the ramen, and it’s also overcooked. Pretty plain. I haven’t tried anywhere else. But it wouldn’t be my first choice for Ramen.

Love this place! I always get their salmon teriyaki rice bowl with a side of spicy Mayo and crunchy onions, and it’s always PERFECTION! Salmon grilled perfectly, amazing rice, and the spicy Mayo and teriyaki sauce complements the rice bowl well! Can’t wait to try more of the menu items! The quality of the food here is really great and the service is excellent as well. I’ve tried other sushi places nearby for a salmon teriyaki bowl and this place is the BEST. :) Highly recommend!

I am a huge Poke connoisseur, especially when we travel! I see poke, I must break for comfort! Poke & Sushi delivers. Generous menu, yet very simple, fresh fish, and great toppings. Everything about this place was clean and fresh, well worth the stop.

My daughter and I randomly came across this place at dinner time and we were greeted very warmly. We decided on poki bowls and asked about how spicy the sauce was. Instead of just giving us a verbal answer, the gentleman said "there's only one way to find out!" And came out with a little cup of the sauce for my daughter to taste before ordering. We thought that was such an above and beyond thing to do and we really appreciated the customer service. After we ordered and were waiting, we witnessed a number of really great acts of kindness and excellent customer service from various members of the staff. We also watched the woman put our poki bowls together, and she did everything with precision and care...it wasn't just thrown together. Now for the actual food review! It was absolutely delicious! The fish was superior in flavor and quality to the poke bowls we usually get at a chain poke place. The masago was super fresh as well...noticeably better than any other I've had recently. All the ingredients were great and we enjoyed our food immensely. Will definitely be back again when we're in the area!

This is our favorite local poki and sushi restaurant. We've been coming here for 9 years now and they always have something new while keeping all our favorite dishes on the menu. The lemon roll is so fresh and bright. When they added ramen, we were able to bring our non-sushi friends with us and the ramen was savory goodness. I noticed, today, that they have added Korean items to the menu. I will have to give those a try. One of my all time favorites is the Boom Boom appetizer. Something about the crispy rice and spicy tuna combo gets me every time, so tasty with a nice crunch! We love staying local and supporting our local business and restaurants. Poki, Ramen & Sushi makes it so easy. Grab one of their poki bowls and you will see!

Great spot for great price sushi! Lots of specialty options of the day. When we went it was black cod and uni Staff was so beyond friendly they said hi the second we walked in. Set up a table immediately with water and menus, chop sticks sharing plates and wasabi and ginger. We got 3 specialty rolls. The super crunchy was beyond massive and super filling. Had 3x the spicy tuna on top as well as additional shrimp tempura on top. Food was great. Atmosphere was well done very casual dining. Food and service was also very fast. Perfect for a quick bite or Togo food. They also had build your own poke bowl for there to to go.

This is my favorite sushi spot! I always get the bad boy roll- it is phenomenal. I love that it is so fresh with spicy tuna and avocado. I also love their yellowtail submarine roll and their spicy garlic edamame. I know this restaurant also has ramen, bento boxes, poke bowls and a variety of other options. However, what I have enjoyed the most has been their sushi! Other than the amazing food, their service is excellent. The staff working there always greets us with a warm welcome and a smile. The lady working there is so sweet and has even brought us slices of oranges to enjoy after we finished our meal. The restaurant is so clean, has nice decor and plenty of seating. The prices are reasonable for the quantity and quality of the food you get. I appreciate that there is such a wonderful sushi restaurant in SJC :)

I have tried a good number of poke/sushi spots down in south OC over the last year, some better than others, but nothing has truly hit the spot until I found this hidden gem. Richard, who I believe may be the owner, has been phenomenal every time my family and I have came in! From remembering little things like specific sides and allergies to just providing amazing service, he has had us leaving more than satisfied with every visit. This welcoming energy goes right in hand with the ambiance of the restaurant. While more on the casual side, the restaurant brings top tier food with a cozy family owned feel. The salmon teriyaki was as tender as could possibly be, with the perfect amount of sweetness to the teriyaki sauce. The sashimi and poke bowl both tasted extremely fresh. We ended it with the curry ramen, which was a generous portion and on par with the rest of the food. With Japanese cuisine being one of my favorites I'm beyond happy to have found Poki Ramen & Sushi last week- so much that I've already gone back twice since my first visit! This place could compete with some of the best Japanese food money can buy. More than worth a visit if you're ever craving some sushi or a bento box.

Carry out review.: Came in at 1130 for a quick to go bite. Grabbed an unishy roll. Was out and ready in less than 10 minutes. Paid 16 bucks for an eight piece roll. AMBIANCE: place was nice and empty although not very big. Video attached. The front lady was super friendly.

Stopped in as a little last minute dinner for my mom's birthday as we were craving some poke and we were very pleasantly surprised with the quality of the food, the good service, cute decorations, and quick seating. The tonkatsu ramen and tonkatsu garlic ramen were delicious! The bowls came quickly and were steaming hot. Great portions for a great price. I will definitely be coming back soon!

When it comes to gluten free they are sooo knowledgeable! They won't even use faux crab meat in your rolls because it's not GF. They bring you your own aminos and do separate plating. Food wise nothing stands out but for a basic day to day place it's great. The sushi burritos are fun but not worth the buy when you want fish. I love most of the rolls here and for the price it's worth it. - the ex boyfriend roll is a top favorite of mine. Don't get their iced green powder tea but the regular hot green tea is wonderful. My husband gets the rice and meat bowls and loves them.

Service - My daughter and I went to the mission and wanted something different to eat. The thing is my daughter wants sushi and I wanted poke. Thank god this place exist. When we came into the resto, a young lady greeted us and took care of us rightaway. Very attentive too! Food - My daughter got the lemon sushi ( 8 rolls total ) she was so full nearly almost didn't finish her food. She loves the zesty taste. I got the Poke and OH MY GOODNESS! it was heaven! I know I know it may sound super exaggerated but not going to lie. The taste and the portion it was very satisfying! Yummy! Ambiance - The place looks vintage and reminds me of home. Very clean and organized.

I LOVE this restaurant. They have such a welcoming and friendly vibe here. The sushi is amazing and my kids love the poke bowls. We frequent this restaurant often because of the wonderful service and hospitality. Try their Alibaba roll and their Tuna Lovers. I also love their vegetable ramen. The garlic edamame is delicious. 10 out of 10 this place!

The staff needs to be properly trained to handle food. It is unacceptable to used one of no gloves serving sea food. Also I didn't see the staff washing her hands. No good.

The servers and sushi chefs here are wonderful. You can tell they put a lot of care into their work. Servers are always attentive and usually working alone, I'm super impressed at how well they are able to run the place. The sushi is yummy! And they have great lunch specials.

Ramen is not the best, I got a spicy miso ramen, the chashu pork is the worst I've ever had, extremely dry, taste old, no sear or marbling. Pork was bland and had a stale flavor. The egg toppings are average. Broth is 7/10 and the noodles were ok but definitely not worth $20.

Came on a Saturday night at 5:30. Was sat and waited on immediately. The rolls were large and the spicy miso ramen was good. I prefer a little more spicy and thinner ramen noodles but overall it was tasty. My 2 young daughters loved that the sushi chef made them a bunny out of a hardboiled egg and a butterfly out of a carrot. Great experience.

What a great option for ramen! Stopped here after a quick Von's run & ordered the Tonkatsu ramen. It was prepared quickly & it was super flavorful. It came with some fried gyozas that were cooked perfectly. To top it off, great customer service. I would definitely recommend for anyone in the area.

Good sushi and fairly quick for a pick up order. We order a California Roll and Soft Shell Crab Roll along with 2 Salmon Skin Hand rolls. My wife ordered the Miso Ramen as well. Pretty good saying rolls but they weren't very well made. Kinda loose and fell apart a little too easily. Ok though, they tasted pretty good. My wife said the seamen was good and she'd try another one of the choices if we go back. Unfortunately when you order online there is no description of the Specialty Rolls and as you know if you've veered sushi every place has their own rolls and you have no idea what it based on the name alone. I went with obvious ones that I knew what I'd be getting. Didn't eat there but had nice staff and a decent number of tables. Maybe a couple of small tables outside but no heaters and too cold to eat outside without them. Close to home so we'll probably try a few more rolls next time and see if we'll be going back.

This is a clean establishment that serves fresh fish and poke. They have a variety of rolls on their menu along with specials. My friend enjoyed the poke and I ordered the fashion island roll, seaweed salad, and we shared the melting in your mouth sashimi. All items were fresh, maybe a little too saucy for me. I only want to point out that the sashimi was more of seared (3/4 cooked) albacore rather than completely raw like I'm used to. Either way, it tasted good.

Was feening a poke bowl on New Years Day after a gym session, and they were the only place open out of the 4 I called. They changed their decor since I was last year (prior to Covid). It looks nice and clean inside, and a bit more upscale than I remember. I ordered a large poke bowl (5 scoops of fish) which included tuna, salmon, and salmon belly. I also got a double scoop of avocado and crab, and my total was $22.57 before tip. So not a cheap bowl whatsoever. The flavor of the bowl was excellent. The salmon belly was phenomenal. The fish was extremely fresh and just melted in my mouth. The lady who took my order was sweet and friendly. Every worker I encountered was polite and helpful. Only reason I am giving 4 stars instead of 5 is due to it being expensive. Everything else was 5/5 easily. I usually go to Wowpoki down the street since they're about $5 cheaper and quality is just as good (but they were closed). Wowpoki does have less options for bowl add-ons and no salmon belly, which gives this spot a half star. I will come here again for the salmon belly, but Wowpoki is still my go-to. I'd give this place 4.5/5. It is definitely worth checking out

We had the poke bowls here and they just missed in so many areas where other poke bowls have been better. They were not bad, but they didn't stand out. Super nice staff, but not enough to make up for a mediocre product, and lack of both ambience and cleanliness.

Ordered large poke bowl with 5 different fish, it was very tasty but the fish serving's very small - maybe 3-4 small pieces of each kind. The fish are also ice cold which affects the taste. The Tonkutsu black garlic ramen tastes okay, nothing special. The place is dated, in the women's restroom the soap and toilet seat dispensers are both rusty but at least they're kept clean.

Zero ambiance with low quality sushi. I haven't had the ramen yet so i won't rate that but as for the sushi part, go elsewhere. $50 for 1 person and 4 sushi items and a lemonade. Service was ok, but just wasn't it for me. Maybe a good spot for a quick lunch menu option but i won't be trying that.

Driving through and decided to try. Was pleasantly surprised. Sashimi was fresh. Chirashi was decent sized for the price. The sushi and ramen were delish. The size of pork they put into the ramen was filling. Service was fast and the waitress checked up on our table frequently. It was a relaxing hassle free dinner. Great job!

The fish, tuna and albacore, in the poke bowl was fishy. The albacore looked old and discolored. The price of the poke bowl was in line with everywhere else but the quality and freshness just isn't there. The calamari tempura is not tempura, it's some frozen premade bread stick with a tiny bit of calamari in it and the sauce served with it, what is that? I don't like leaving negative reviews for a small independent business, but your food is not good and your restaurant is dirty and not well kept. This is a one and done situation, will not be going back even though the lady in the front was nice. You're selling raw fish, clean your restaurant!

Was really craving my weekly Poke bowl so decided to try this place out. The Restraunt - it was very dark and hard to see, maybe some more lights added would be nice to create a better feeling entering Service - the front lady was so nice and that's why it's getting a 2 and not a 0... Food - this is where everything falls apart. The fish was hard, not cut properly and definitely was frozen not fresh. The only good part was the sauce and rice. I was almost scared to continue to eat the fish so i put it aside. Definitely won't be back until the quality of the fish can improve

Have driven by here too many times to count as we usually eat at the Himalayan restaurant nearby. Today the other restaurant was closed so finally we were able to try this place and WOW were we impressed! I had the Miso Ramen and my husband had the Super Philadelphia Roll - both were superb! The Ramen soup was very authentic, one of the best I have had and the Roll was made to perfection and tasted very fresh. The service was very friendly and quick. We will definitely be back

This is one of my favorite spots ever in the city. It's local, greatly priced and delicious. The customer service however can be worked on as you seem to be rushed and brought the check early, not greeted as you enter, and just stared at. The ambiance is mellow, nothing fancy or out of the ordinary. However, the last time , I noticed they also tip themselves when you pay cash, not bringing you back your exact change which is not okay. But, overall the food is excellent and I do recommend for a quick bite.

Just not good food! We had a poke bowl, tuna roll, edamame, and two different types of ramen. It wasn't cheap and everything taste bad/ weird. Go somewhere else! It's not worth it. The restaurant felt like a dive place location. You can feel it as soon as you walk in. The lady who helped, served us was really nice, but her service can't save the food.

I hate giving average reviews to restaurants but Poki Ramen and Sushi is just that average. The staff just seems to be going through the motions of serving. They are very cheap about certain things. When I asked for extra ginger it was very little. The dining room and booths need some up keep. I'm actually shocked by the reviews for food I had a teriyaki chicken bento lunch with a spicy tuna roll and it was very dry, no flavor. The roll they gave me was already in parts. I don't think the sushi chef even cared about the appearance. The food matched the attitude of the staff. I only went there because Oeshi Sushi had already closed.

Food is not fresh! Chicken tastes terrible and it is not fresh. Rice is dry. Sushi, something missing. I would not recommend. Everything is so expensive these days. Save your money!
