I'm sure there's more than one dead Polidori groaning about the lousy dry Italian sausage their descendants are pedaling to Kroger, Spinelli's Market, restaurants around Denver and beyond. Thankfully, some of the local restauranteurs order their customized sausage from Polidori with a higher fat content to help deliver some flavor (and texture).
While their sausage matriarch, Anna Polidori, is likely none too happy with the recipe tampering, I'll bet you a wheel of Parmigiano-Reggiano she is beaming with pride over the marketing and business-sense of this Polidori generation. I admire them and truly I hope they are making a fortune.
In my humble estimation there are far better local options for Italian sausage. Try em for yourself, you'll see.
