The 18 Best Restaurants in Tbilisi, Georgia | Eater
"The name poliphonia is a reference to Georgia’s traditional polyphonic form of overtone song, and hints at this restaurant’s overall aim to celebrate local traditions. Poliphonia’s cave-like interior, wool carpets, classic style qvevri wines, and a seasonal menu all fit within the theme of old meets new. Dishes — many plant based — are smart takes on Gerorgian classics with an emphasis on fermentation." - Natalie Shafrir
Had the most amazing dining experience at Poliphonia. Great Georgian food with a touch of international fusion, awesome selection of natural wines. The guys were very kind, relaxed and helpful, they suggested me the best wine pairings with the food I had. I can't recommend this place enough. If you're in Tbilisi and you love good local cuisine, this is a must!

Wine restaurant just next to funicular station. We came early and a nice lady welcomed us and offered wine until the staff came. We really enjoyed the amber natural wines from Georgian winemakers for reasonable price. Food was interesting and surprising for me, more sour taste which is suitable for amber wines but a bit too sour and intense for us. If you are looking for natural wines this is the place! Service is very friendly.

Poliphonia is where Georgian tradition meets modern magic. Each dish surprises you with bold flavors and beautiful presentation, while the atmosphere feels both stylish and cozy. It’s more than a meal — it’s a delicious journey I’m so proud to recommend!

We were really disappointed with our food here! The wine was delicious, however we came away feeling like the food was very overpriced for a not great experience. The bread tasted very old and some of the food was really oily without much flavour at all. The menu was also really different to what we expected, and not great for vegetarians. Maybe we caught this place on a bad day, but with such high prices in Tbilisi I was expecting a lot more.

The wine was really good, the choice is very wide. But the food is absolute crap and the service is not good also. And prices are also a bit high
If you want just to drink a good wine - come here. If you want to eat something, never come here
