In Anahuac, the Alligator Capital of Texas, Gators Are Big Business | Eater Houston

"The largest alligator processing operation in Southeast Texas, this Anahuac-based facility handles festival and seasonal catches (around 600 gators during the core season), converting whole carcasses into edible meat and trophy hides. Hides are sent to a tannery and turned into leather products or mounts, while meat is deboned, cut, soaked overnight in a vinaigrette mix, tenderized twice, and vacuum-sealed in 1- or 5-pound packages; white meat is packaged for restaurants and red meat is typically processed into sausage for meat markets. The company supplies regional restaurants and hotels, and supports conservation by collecting, incubating, and hatching alligator eggs for export to rearing facilities in Louisiana." - Brittany Britto Garley

DON’T GO ON AN ALLIGATOR HUNT OR GET YOUR HIDE PROCESSED BY CASEY!!! The owner Casey threatened to fight me after I proved that he gave me the wrong alligator head. Not to mention my hide wasn’t tanned all the way through which ruined the hide! Didn’t find that out till it was cut up for boots, belt and wallet. My wallet wore out and was totally white after a few months.

Incredible experience with Casey, hearing how they are working to maintain both the land and the species through their guided hunts. Even had the privilege of meeting Mark Porter himself. True conservationists for the great state of Texas. If not for a hunt or meat processing, stop by to chat with these guys and hear a story or two.

Porters is a first class establishment. They offer full processing services as well as hide and taxidermy options. They don’t do actual taxidermy on site but have quality, dependable work done through their outfit. They have been in business for years and are a respectable group. Just like ANY other business they make money. If you bring in an alligator for processing they will be forthright and let you know all the expenses associated with having an alligator processed. There are no hidden fees and they are honest people. Just like getting a deer processed. If you drop one off, don’t expect to pick up a free bag of deer meat once it’s done. I would trust them with all of my alligators and have been dealing with them for 13 years. If you are anywhere from Matagorda to Louisiana and need a gator processor, these are the people for you. I will continue to use them for as long as I trap alligators. They are great supporters of their community and all around good, honest people. I wouldn’t go anywhere else. As good as it gets.

Was recommended to use Porter's to get my gators processed and skinned from my guide. I left one gator with them and took the other home to do my self. Was told I had to pay $200 processing fee. They only accept cash. Wasn't told anything else of when things would be ready. Send them an email a few days later and still have no response so gave them a call and he tells me now I should have been given the meat the day I dropped off the gator. Also tells me now, a week later that I have to pay $5 per pound for the meat if I want it back. He says he is in the business to make money off the meat. Also tells me that a 200 lb alligator will only yield 40lbs of meat. That would mean you only yield 20 percent of the total weight. Which seems low considering I yielded 65 from a slightly smaller gator, and I'm not a professional gator processor but yielded more meat then this guy is claiming to have.
