Great brewpub serving tasty BBQ with a great beer selection. Very friendly servers and a nice patio atmosphere. I ordered the nachos per the bartenders recommendation and was not disappointed. They offer crowlers if you want to take any of their draught beer to go which is nice and also have high quality merch for sale. Will definitely be coming back.

Just back from Pro-Pig brewery. The brisket is a must - super yummy. Pilsners were a perfect accompaniment. Snack plate was good but I’d have preferred the tapenade a bit smoother. Summer sausage was delicious. Bar vibe was suitably moody but the patio, while dog friendly, is a little too tight for most dogs to find it comfortable. I hear Rivershed in Killington may become available- would be amazing if Pro Pig jumped in….

Just moved to the area and heard we had to try prohibition pig, so we stopped by last Wednesday. As you can tell from many other reviews, this place is great, but I would also add their mushroom BBQ bowl is delicious! It can be rough trying to go meatless in a BBQ place and I don’t even usually like mushrooms, but the marinade is perfectly smoky and tangy. Would recommend coming here, even if you have vegetarians in the group.

Finally was able to visit Prohibition Pig Brewery when I was up visiting family over Christmas. Beer was absolutely delicious and the vibe inside the brewery is great. Spacious inside the brewery and during the warmer months, plenty of seating outside. Food was absolutely delicious. We had the brisket nachos - very very good, brisket chili was great and so were the pigs in the blanket. Will definitely visit again in the future!

We had lunch and a few beers. The bartender helped us find great beers to fit our styles. We each ordered our lunch and it came fast! There are no sides with the sandwiches, but the size of the sandwich was perfect for a light meal. I'd go back again!

Prohibition Pig is a BBQ restaurant and brewpub that opened in Waterbury, Vermont in March 2012. It was founded by Chad Rich. About 20 years earlier, he had his first taste of Belgian beer and fell in love with craft beer culture. By 2009, he had an idea to open a restaurant that would marry his love of craft beer and cocktails with good local food. When Tropical Storm Irene hit Waterbury in summer 2011, it caused massive flood damage to the original location of The Alchemist Brewery. When the brewery moved out, Prohibition Pig moved in. The new restaurant quickly became popular with locals thanks to its excellent craft beer selection and southern-inspired BBQ dishes. In 2014, Rich acquired a historic former schoolhouse around the corner on Elm Street and opened it as the Prohibition Pig Brewery in December. Nate Johnson was hired as the head brewer to craft Pro Pig's own original brews. In 2018, Pro Pig was sold to restaurateur business partners Eric Warnstedt and William McNeil who also own Doc Ponds in Stowe and Hen of the Wood in Waterbury and Burlington. I recently visited Prohibition Pig while I was on a Vermont craft beer road trip. I've heard excellent things about them for several years. When I arrived in the late afternoon, the restaurant on South Main wasn't open yet but the brewery around the corner on Elm was. Pro Pig's delicious food is available at both locations. I could smell that delicious meat smoking from blocks away. I grabbed a seat at the bar and looked over the menu. I decided to order the "Brisket Smoked Meat Plate" (pickles, slaw, dinner roll) with a side of Cornbread (maple butter). The brisket was so falvorful and tender that it melted in my mouth like butter. I washed it all down with a draught pour of "Valentino" (Italian Pislner). Although I enjoyed Pro Pig's house beer, it was their delicious meat that really impressed me. Since I was heading back home to Connecticut not long after my visit, I ordered a "Brisket Sandwich" (slaw, BBQ Sauce) and another side of Cornbread to bring back for my wife. I also grabbed a four-pack to go. I really enjoyed my experience at Prohibition Pig and I hope to return in the future!

We came into the Pro pig brewery portion of the restaurant around 2:30pm on a Wednesday. The restaurant itself is closed but the brewery has some food items. This is a brew pub vibe with the bar inside where you place your order and a few tables inside with many areas to sit outside. We ordered the spicy hot link sandwich and the smoked meat nachos. Along with a Bloody Mary and on tap beer. Sausage had enough spice and wasn't dry. The roll had the right balance of crunchy and softness. The nachos had a nicely flavored smoked meat and plenty of cheese, cilantro and jalepinos. It was plenty for two/three to share. Service was quick too.

So my wife and I are big BBQ people and when we found this brewery who sold BBQ, we jumped for joy. Come to find out, they only have a few select things. UT they weren't all that bad. The brisket was a little dry snd the cornbread was a little spongy. The cider tasted more like a white wine then a cider. Overall the service was great and the environment was nice. Good time!

We decided to stop by at the brewery instead of the main restaurant thinking we will get similar food. Honestly, the food is not worth the price - ordered the brewery bowl and for $14 + $9 for added pork. There was hardly any pulled pork in this bowl. Not worth it. Don't waste your time. Also, the service kinda sucks too.

We stumbled upon this brewery bc the restaurant is in front of the brewery but we were glad we did. Service was friendly and helpful right off the bat of arriving. We got a seat at the bar. It was cool to see the kitchen preparing food. We had BBq nachos which was delicious and we also took home some brisket which was amazing! The vibe was nice and chill. Good music and it was a bit dark in there.

I loved this place. Everything was delicious and I don't normally eat pickles but even those were good. Loved the wings and pimento balls for apps as well. The sauce on the table is amazing and great with the food. Ultra yummy hot sauce! The only downside is that I think the prices are a tad high for the portions. The service was great too!

We stopped in here for lunch and loved it! The staff were super welcoming and gave us the lowdown right as we walked in (order at the bar, first come first serve seating). We got the chopped pork sandwich, the mushroom rachel sandwich (basically a Ruben sandwich with mushrooms) and an order of the pickle plate and it was all delicious. For drinks, I had the Eden cider and my guy had the vanilla bean porter. We loved the porter so much we decided to grab a 32oz crowler can of it to go home with! Would highly recommend stopping by here!

I was meeting a friend in Waterbury and, OF COURSE, I made it a lunch date. I hadn't been in Waterbury in actual YEARS. I mean, sure, I live just an hour south (an hour's drive is nothing when you live in Vermont - we don't have what you would call "density" here...in population or businesses), but there's really no reason for me to go to Waterbury. But it was a Wednesday and I was going to Waterbury and looking for a lunch spot that: (1) served alcohol; and (2) stayed open past 2 or 3 in case we were there a while. Anyway, I wasn't going to get there until 1pm. When I got out for a meal on a day off I do NOT want to rush. I want to ENJOY my time and go at whatever pace I feel (which is, invariably: steadily eating everything on the menu). Turns out this (end of April) is the time of year that restaurants in Waterbury close for their seasonal Time Out. I did, initially, find this confusing. Since I'm in Hartland and this is when we're finally starting to ramp back up from the DEAD TIME of March and the beginning of April. And then it occurred to me that they're more tied to the whole "ski economy" and those winter visitors/tourists. My spot is not. When the skiers come is when we're DEAD. So it was looking pretty freaking bleak for a decent lunch spot. But! Then I somehow figured out that Prohibition Pig (semi locally famous dinner spot) has a brewery located directly behind it that serves lunch and, more importantly, margaritas (I don't drink beer - although we do have EXCELLENT beer here in Vermont!!). I say "somehow figured out" because there is no separate Google or Yelp or anything "listing" for Prohibition Pig Brewery. Really the only actual info you can find is on The Prohibition Pig website. Which, let's face it, is a fail. In this day and age?? They NEED to create separate listings for the brewery. I will only HELP business. Now, let's be clear from the start that this is an "order at the register" and either pay or keep a tab open and they bring your food to your table. Water is self service out of an Igloo cooler (this seems to be ALL THE CRAZE in Vermont at the moment. Wtf.). I will say they give you an actual, like plastic diner glass for your water. Instead of a Dixie Cup. You can MISS ME with that disposable cup BS. This is NOT a full service restaurant. Adjust your expectations. They're brewing the beer right in front of you. Which is cool. I'm sure it's good. We know how to make beer here in Vermont! There is outdoor seating on a porch and it is aggressively "dog friendly." The dogs seemed psyched. I don't eat beef, pork or poultry. So I worry about eating at a "brewery." However the menu had PLENTY of veg and pescatarian options! I started with the seasonal pickles (pickle anything and I'm IN!) and smoked trout spread (also a sucker for the smoked fish spreads). Pickles were in a good sized bowl and a variety of veggies and I ate all of them. Delicious. Lots of crunch and snap. The trout spread was served with Trout Roe over top and Townhouse Crackers. WINNING!! I. Love. BOTH. I considered ordering a second helping. But decided that would be exceptionally weird. Plus there were other things I wanted to try. Like nachos!! I love nachos. If there are nachos on a menu I'm going to try them. And! These had a vegetarian option: smoked Portabella Mushrooms. I was excited! They're served right on a baking tray. Which is LEGIT. But I can't give full marks. First, the mushrooms were HUGE wedges and, IMO, were way too smoky. Like overwhelming. Second, pickled jalapenos. No. Use fresh or please just don't. Problematically there was pretty much nothing else to the nachos (pickled onions were good), other than the chips and the cheese. HOWEVER! Those chips and that cheese? DELICIOUS. Then I got the New England Shrimp Roll. Which is their take on a Lobster Roll and I am HERE FOR IT! SO GOOD. Shrimp, Old Bay "aioli," pickled onions, cilantro, parsley in a buttered and grilled bun. AND. The Margaritas?? Look. Many, Many, MANY places serve Margaritas. They're mostly trash. And served in stupid glasses like a Pint. The Margs here are actual perfection. I had THREE. And I had them spicy! (It's a choice - get the spicy salted rim!!) They're served in a rocks glass with a wedge of lime. Because someone here is a drinks genius. I don't know who needs to here this but! The ONLY beverage that should ever be served to you in a pint glass is a beer. NOT YOUR MARGARITA. Oh! I can't give 5 stars low key because of the nachos but also? Because of the bathroom. Snaps for gender inclusive. Taking those snaps away for the fact that someone need to HIT that bad boy with some BLEACH to kill the whole "urinal smell." Also? Paint/stain/something the upper half of the walls. The bathroom is giving "college bars in the '80s." I was there. I know...

So Pro Pig has two sides to it - the restaurant and the brewery. This location is the brewery (which is literally around the corner from the restaurant). The setup is fantastic - you grab a seat and use the QR code to order. There are a few apps and tacos for food and an extensive beer list. The beer was great. The tacos were okay - a little bland but the housemade hot sauces saved them from obscurity- the sauces were delish. What really shines about the brewery is the atmosphere. There is indoor seating and a huge deck and patio area with outdoor seating. We sat outdoors in Nov and there were a bunch of solo stoves and heat lamps going. Service was super fast and it was family and dog friendly. Would def come back for drinks and apps!

It's been a couple of years since I've been here and I was sad to say that this place didn't taste quite the same as it once did. I remembered the brisket being so tender and melt in your mouth but my brisket sandwich was so dry unfortunately. There were pieces that I had to remove because pieces of the meat were stringy and tough to eat. The queso tasted good but I was sad how little you get. Not sure if it's Covid related or what but the brisket was disappointing.

We had a reservation for the patio bar area last Thursday (10/15), and were pleased with the seating area; seats were well distanced and were cleaned regularly. For their COVID setup, we had to place orders inside for both food and beer which was no issue; the servers still bring out the food once it's ready. While the beers were good, the menu was limited and portions were small. I had the pork carnitas and my husband had the grilled Cuban sandwich. Next time we will try the main restaurant but for now they're only offering indoor dining.

Update: 7/2019 We have been going to the Prohibition Pig for about 3 or 4 years. Their beers are excellent. I love their porter. However in the past we went because we liked the food even better than the beer. No more- totally disappointed. I ordered the carnitas taco and a jerk chicken taco. Each was $4. The amount of meat was minuscule. The flavors of the jerk chicken were great but again- little food. I left hungry. My husband ordered the carnita bowl for $11 and said it was basically black beans rice and a side of store bought tortilla chips. Typically they have specials including grilled cornbread which is to die for but today - no specials. No cornbread. The place was packed and maybe that was the reason for the disappointing food. Anyway, I would stop by for a beer but won't be returning for the food. So disappointed.

Nice little lunch spot. Order at the counter. First come first serve seating. We had pork nachos, beer and the star of the meal was the jalapeño margarita. Nachos had a sweeter pork and sauce than we are used to in Texas, but they were pretty good. Shareable size for two.

I'm defensive about Pro Pig. It's been MY little post-hike or bike spot for many years. Some of the best beer in the country paired with a few warm fresh tacos prepared in front of you? Every day please. Rustic and unpretentious. Just straightforward great comfort food.

I came here hoping that the Prohibition Pig restaurant was open, but it wasn't. But, I was pleasantly surprises by this brewery! The menu was more on the side of tex-mex. I'm veg and I ordered the dip trio and the collard greens. I loved the queso dip! The salsa was nice and garlicky. The guac was okay, but how can guac be bad? The collard greens were more like an Indian curry. The rice was tasty and usually I just skip rice! Then I dropped a ridiculous amount of money at the gift shop because I wanted to bring home souvenir cups and a trio of beers to-go. They also put it all in a fancy pro-pig reusable bag and threw some coasters and stickers in too. I love Prohibition/Pro Pig. I came two summers in a row from NY and I'll be back again in the future! Can't wait for covid to be over for full menu and dining experience but Pro Pig did a great job with cleanliness and contactless ordering and social distancing.

A bbq joint with a brewery attached, sign me up. Even if you're not a beer snob, they have a full cocktail menu. Started out with the duck fat fries, remarkably salty... A fine salad if you're not up for the meat sweats. But if you are, dry rubbed wings and the half rack of ribs hits the spot. The beef brisket sandwich was sloppy, but oh so good.

We stopped on our way to Burlington after a friend recommended it. We are so glad we stopped! The Beer was really good- I tried a couple of IPAs and they were all good. My husband tried a variety and really enjoyed them all. The bbq was delicious- tried the pulled pork- Smokey and sweet. Tried the brisket- very tender and flavorful. The staff was helpful. It was one of our favorite restaurants on our weekend getaway to Burlington. We will be back!

The Prohibition Pig Brewery and Bar seem to be two very different things, so I'm going to write it up as two reviews. The "brewery" section was an interesting experience. When we first walked in we were greeted by a friendly Bartender and took 2 seats at the bar. I browsed what appeared to be a pretty solid menu of mostly in house beers, before going with their Bantam. The beer itself was phenomenal, the food menu however left something to be desired. The menu was much smaller than advertised online and my wife (who is a moderately picky eater) was unable to find even a single thing she would eat. Very important to note at this time that the brewery and restaurant have different menus, although when we packed up to go the Bartender failed to mention this. Also, a complaint I had about this place was the decor. I get that exposed brick and metal and wood are big right now, and they get some cool points for the bar, light fixtures, and some of the seating area, but large sections of wall were just particle board. Didn't fit with the rest of the bar and honestly felt lazy. Overall I would of probably given our experience a 3 but that beer was fantastic.

Amazing beer!! We needed to wait for a table at the restaurant so we put our name in and headed to the brewery out back. We tried the Kellerbier, the vanilla bean porter and the eden specialty cider. All three were exceptional. Very cool outside seating area. The food options are limited but looked very good as they were served up to fellow customers.

Stopped in for lunch after a B&J tour and loved everything! Meixcan lager beer was delicious...the carnitas bowl was super tasty, and the merch was on point! Would love to come back and have dinner at the restaurant. There's a lot of construction happening around the brewery right now, but worth it to navigate through it and stop in!

Still somewhere between a 3 and 4 star. The food options are pretty limited, and the portions are pretty small. The braised oxtail tacos were super bland - doesn't seem like they were braised in anything or had any spices. So it's just braised oxtail, chopped onions, and cilantro - no sauce of any kind. Your only only is to add some hot sauce. Won't be getting this again. Chipotle Caesar Salad was okay. Nothing really stood out. Beer options were pretty good. The restaurant next door has better food and drink options. So why come here? Outdoor seating that is dog friendly.

I found this a little confusing. This is the brewery just off Main street right behind their full service restaurant. They have a limited food menu. The staff is friendly and explained the difference to me. I ended up leaving to eat at the main restaurant as nothing on the limited menu was appealing to me. The place has a nice vibe with tablets inside and outside to sit. There is a little gift shop in the corner.

Always busy, so you know it's good! A local favorite. They have great beer that they brew. As a vegetarian the food is slightly more limited, but they also have some good food! I love that you can sit inside or outside and it's very artsy and you can tell that they brew there. I recommend going! It was recommended to me by multiple colleagues and friends, so when I friend moved to Waterbury of course we had to go!

I wish I had the opportunity to go to the restaurant instead of the brewery - next time I guess. We were traveling through Waterbury and stopped at the brewery for lunch. We shared a brisket sandwich and guacamole with chips. The sandwich was bland and the guacamole seemed to be avocado with a few pieces of cilantro. I'm trying to think of a worse guacamole at the moment but it escapes me. I'm happy to provide the guacamole recipe I personally make. I also ordered the homemade lemonade, but it's more sugar than lemon - hard pass. The servers were friendly but the food left my tastebuds bewildered and saddened. As my partner finished his beer, I was on yelp looking for another place nearby to renew my foodie heart's faith in flavor.

If they say you need to come in to order take-out, that doesn't mean that they will actually take orders for pick-up. We called on Sunday night to see if we could make an order for pick-up and were told to come in to make a take-out order. When I arrived 20 minutes later to make an order for take-out, we were told that they were not taking orders for take-out. If you call and they tell you to come in to make a pick-up order, you should be sure to explicitly ask them if they are really taking orders for take-out. I would think that would be assumed. Apparently it is not.

Great food! Fun and eclectic. Best brew pub around and I wouldn't expect any less from them. My brother and I were up in Stowe for a long weekend and kept going back. The tacos are awesome.

We visited the brewery for a beer a week ago. The beers were great and the brewery has a good atmosphere with excellent service. We sat upstairs overlooking the side street which we really liked! But our only suggestion would be some background music upstairs. It's awkwardly quiet with guests at the other tables and hard to have a private conversation in the small, quiet room. Other than that, I'd love to see the upstairs space stay as a regular seating option post covid.

Good beer and beer selection. Overpriced food. Got the $10 salad plus $3 for added tempeh. It was tiny and barely even filled the bowl it was in. It costs almost nothing to add a little more lettuce, cucumber, cabbage, and, yes even black beans. You really have to be incredibly chincy to want to stiff customers like that.

My partner & I have heard amazing things and we have been wanting to stop in! When we finally got the chance to, we called the morning of to make a reservation (covid times) & they were very accommodating. We ordered & then sat at our table inside, where you can clearly see the kitchen & kitchen staff. Here is where we noticed multiple kitchen staff employees not wearing gloves, touching their face, itching their heads and picking their skin then touching food. Additionally, we could see a cell phone resting on the cutting board where food is being prepared. We both work in the service industry so we get just washing your hands but customer perception is real - especially during covid times when sanitation is key. So unfortunately, we stopped eating our food, finished our drinks and closed out our tab. We were super bummed but can say that the hot butter rum was fantastic!

This place was right up my alley. Fantastic NE IPA's, killer tacos, and a ridiculous selection of homemade sauces. It's a casual and a bit divy eatery but the food and drinks are on point. Will definitely return if I find myself in the area again.

Chill dog-friendly porch/patio seating, nice draft selection, and a limited but tasty selection of food. Highly recommend the chicken mole soft tacos, a great value at 2 for $10- amazingly flavorful and tender!

Busy place but you go next door to their bar while you wait. Bar even had games for my kids! Server was friendly. Food was delicious and really fast! Overall great experience.

Was pumped to try this place out coming back from World Beer Fest up in Montreal with my friends; however, it let me down. Ordered a beer and some food. Drank my beer...waited in line for a 2nd beer, and closed the tab. Food started arriving, but not mine...so I waited in line and got a 3rd beer...by the the time I finished beer 3 all my friends had gotten and eaten their food, luckily my friends were nice enough to share a little with me since we were all pretty famished. Beers were decent, nothing to write home about. Unfortunately for me, my food was never delivered. We needed to leave for another few hours of driving so I took my mobile-receipt to the front for proof of purchase and to get reimbursed for the food I never received. They wanted to take the food off the bill and call it even, despite the fact I tipped on the food I never got. Awesome practice, guys. Unfortunately I had to be the bad guy and make them refund the whole purchase, they begrudgingly obliged and rang me up for only my beers (A little uncouth to do to someone who had been waiting over an hour for food that was never coming if you ask me). I won't go out of my way to go here again, nor would I recommend it right now. But I'd be willing to give it another go because yeah, sometimes crap happens. Whole time spent there was about 1.5-2 hours.
