"Montreal has been blessed with a handful of fine American-style barbecue institutions over the years, but that’s no reason to miss out on the goodness located just two hours away at this Waterbury, Vermont institution. Smoked meats are the thing to order here — and don’t miss the pork cracklings, either — along with a pint of one of many craft brews on tap." - Allison Van Rassel, Ashley Joseph

SO GOOD! We got the brisket and the smoked turkey, as well as some premium sides which were Vt Cheddar Grits & Potato Salad. The meat was absolutely fantastic, there’s a selection of various sauces available on the table but we just didn’t need them. It was already all so perfect! Brisket was tender, turkey was flavorful. Cozy dark atmosphere! I felt like the meat portions were a tad small but it’s also possible that it’s just very tasty. Definitely going to come back! :)

So we stopped by to try it due to everyone recommending it. We got duck fries and the half pound beef brisket. The fries were okay but not the best we have had. The brisket came with coleslaw but it was barely any in a little sauce container. It also came with pickles that were good and carrots but the carrots tasted like straight vinegar very strong. The roll was okay, it wasn’t made in house which was surprising considering it being Vermont and a very well-loved restaurant. The briskets flavor was very good but overload of fat on our brisket was very surprising. I wouldn’t recommend this dish if you don’t like fatty in the brisket. (Photos below also show fat content cut out). Very shocked about the food considering Vermont's standard.

Great place! I am from the south and haven't been able to find good BBQ until now. The chopped pork is awesome and the sauce was phenomenal. Loved the atmosphere and waitstaff was great. Highly recommend! The brewery is behind the restaurant with outside fire pits and inside seating. Very comfy.

It is rare that a restaurant can bring out the genuine joy from my picky eater wife but Pro Pig (and probably the beer) did it! Everything from the smoked fish dip to smoked brisket were all well seasoned and flavorful. The service was very friendly yet low pressured. Light was a bit dim but the candle helped set the mood.

The beautiful scent of wood-fire smoke permeating the surrounding air always stirs up a desire to partake of carefully prepared meats and beckons one to make a quick visit regardless of schedule and time. Entering before a long line formed was a BIG plus. Friendly staff asked if it was my first time before guiding me through their menu and highlighting local favorites. Ordering was seamless and I headed over to one of the open tables in the back. It was a very chill and friendly place. Lots of banter among patrons, drinks poured nonstop and the kitchen worked together like clockwork. The ribs and brisket were great. Definitely something I’d totally order again. However, the nachos and the pickles were nothing spectacular - if not, actually quite boring. Not going to ding them for this if locals obviously like them so much (as could be seen consumed by half the patrons there that day). Definitely stop by if you’re in the area!

This place definitely lived up to the hype! My wife and I are vacationing in the area and came by on a Wednesday night, and although the place was very busy the drinks and food came out incredibly quickly. The cocktails were really good, the brisket and ribs were fantastic, the slaw was tasty and the duck fat fries were a nice touch! We’d definitely come back here happily

Cocktail and beer were good. Our waitress was nice and very helpful. Brisket beef stew tasted great. My smash burger was pretty good, the Mac and cheese was good. Pork sandwich was dry and seemed like old meat.

Tip -Park on the street, parking lot across the street was $16 for two hours. Check out teeshirts, have couple nice designs. BBQ was awesome! Rids were tender and tasty, smoked lamb leg was moist paired well with the side toppings. Highly recommend lamb as it’s not a common smokehouse item. For sides we had the fried pimento cheese, my wife was not interested until she tried with sweet dipping sauce. Had to fight her off eating all of them. The duck fat fries tasted as good as you’d expect, excellent crispness with a touch of salt. The only thing average was the just a cheeseburger my son order, good but really you’re better with order the BBQ. They also are also brewery, but honestly the my food was so good I really didn’t pay attention to my beer, sorry.
