The food here was really solid. The crushed cucumber salad was fresh and flavorful. The duck fat fries were a highlight, perfectly crisp. The brisket and wings were also very good. The only downside was the service. We waited a long time before anyone came to take our order, which was frustrating. Still, once the food arrived, it was worth the wait. Overall, a good spot with good food.

Absolutely loved our experience at Prohibition Pig! The atmosphere is warm and welcoming, with a great mix of rustic charm and lively energy. The food was outstanding—everything from the smoked meats to the locally sourced sides was flavorful and perfectly cooked. Their in-house craft beers were a real highlight, especially the APA. The service was friendly and attentive without being intrusive. It’s the kind of place where you instantly feel at home. What a fabulous restaurant! The ProPig brewery is right next door too. From minute one, the friendly and lovely young hostess greeted us with an update on timing. The online waiting list was awesome-we could use Yelp to track it. Then we were seated and given waters immediately and the amazing waitress took our orders soon thereafter. She as so helpful with my food issues! Food was delicious. I had a green salad with maple Dijon vinaigrette and smoked chicken thighs - excellent! My husband had brisket that was amazing. Great vibe although pretty loud. Cool seating right up front with big windows too!

I made a stop here with my wife and absolutely LOVED it!! We had a little bit of everything: Cornbread with Maple Butter Brisket Greens & Sausage Duck Fat Fries Cornbread Churros Everything we had was phenomenal. This was some of the best barbecue we've had anywhere. On top of that, they had a great selection of craft beers and incredible bar offerings whether you prefer a straight pour or a well made cocktail. I highly recommend a stop here for a meal and their brewery right next door is not to be missed.

We were excited to try Prohibition Pig given its reputation in town, but unfortunately, the experience didn’t live up to the hype. The hostess who seated us was exceptionally unwelcoming—she barely acknowledged us, offered no greeting or pleasantries, and made us feel like an afterthought rather than guests. That set the tone for what was an overall impersonal dining experience. Service throughout felt detached, lacking warmth or engagement. As for the food, it was mediocre at best. The BBQ, in particular, fell short—especially disappointing given their claim to match North Carolina standards. In a small town like this, Prohibition Pig may be one of the more well-known spots, but in our view, it’s nothing to write home about.

Oh Pro pig, how I miss you already. And I was here today, but I haven't reviewed you, despite coming here for a few years when I'm on a pilgrimage to bring beer from Vermont home to New Hampshire. Where do I even start... Walking In, you can smell the food. Immediate mouth water. The seats are comfy, the staff is super nice, and the BBQ is quite litterally what I wish I could eat daily. ENC - whole hog and vinegar based sauce. Normally I would get chopped pork / sausage. But today I was feeling brisket. MAN HAVE I BEEN SLEEPING ON IT. I brought in my girlfriend for an adventure in Vermont and BBQ was what we both wanted for lunch, I told her I knew the spot, and immediately punched it into the gps. To start, burnt ends and grits. I don't think much needs to be said about this, here till it's gone was enough for me. They came out lightning fast, and were juicy, fell right apart, were sauced flawlessly and garnished well so we got vinegar, meat and creamy all at once. I want that for breakfast, every day. Forever. Brisket sandwich. Normally I'm a chopped pork guy. When I think ENC that's where my brain goes too. But I had just tasted brisket and needed more. Let me tell you when I said I couldn't open my mouth wide enough for the monster cuts of brisket. I honestly didn't think I was gonna be able to power through all that sandwich, and pro pig is not known for skimping on the portions. Blew my mind. Came with slaw, and pickles on the sandwich, I drowned it in the hot sauce. So so so so so good. Duckfat fries. Crunchy, perfectly fried, perfectly salted, accompanied with a ketchup and an aioli? Tbh could of been just mayo, and I still would of crammed them into my face hole at light speed. Partner in crime got the chopped pork, and she said on the car ride home, that I needed to make that asap. She's Canadian, and now she knows what's up. pro pigs beer Fluffy little clouds and crispenbauer: I have zero complaints, they came out swinging, were refreshing and left me wanting more. Honestly, my one regret is not living closer. The food is great, the atmosphere is comforting, the staff is friendly, the message is clear. We make great food, we make great beer, and we respect our patrons. Thank you Pro Pig. Your dedication to the craft, and bold flavors have kept me making the trip. But also if your ever looking to show someone how to make that sauce, I will officially start a religion in your name. 5 stars, worth the trip, go hungry. Thank youuuuu!

I meant to write a review last week, but I forgot anyway we went in for dinner Saturday night. It was 530 6 o’clock anyway sat down at a table just inside the dining room like the first table. A lot of servers walked by and we were there for five minutes. Nobody waited on us 10 minutes nobody waited on us and then my wife finally grabbed the waiter and stopped him in his tracks and said like is somebody gonna wait on us and the waiter was very apologetic very professional took our orders we ordered a couple appetizers and then we had our dinner. We had the chicken wings and we had the fried pimento cheese balls for appetizer. I had the pulled pork sandwich for dinner with some fries. My wife ordered the mac & cheese with the brisket. The meal was awesome. Everything was awesome. We’ve been in the restaurant business for a very long time. I’ve been a chef for my whole career, I generally give people the benefit of the doubt I wasn’t too worried about being ignored for the first few minutes because I wasn’t leaving cause I wanted to pulled pork sandwich, but anyways the meal was awesome. Everybody was very polite professional and by the time we left, they were pretty damn busy. We had the cookie in the cast-iron for dessert with the vanilla ice cream that was spectacular asked for the check they brought the check come to find out they had taken the two appetizers off the bill. I didn’t ask for any special treatment. I thought that was way above and beyond what my expectation was as a chef, I didn’t complain about the food. I didn’t complain about the service yeah they might’ve missed us at the beginning, but they really made up for it at the end of the meal so I just wanted to tell people the restaurant is awesome. I’ve been here before always had good food and good service so get in there support the local businesses especially in this DNA because everybody needs our help be respectful and tip well

We stopped at Prohibition Pig on our way to Burlington on the advice of a friend. It was a busy Friday night with wait times of 45+ minutes. Although this restaurant doesn't take reservations, there is an online wait-list through Yelp which was very convenient. After joining the wait-list from the road, our table was ready when we arrived. The cocktails, beer, and wings were amazing. The brisket was a little dry but still tasty. Our server was knowledgeable but a little slow. Overall, we really enjoyed this restaurant and would definitely come back. Absolutely worth trying if you are in The Waterbury, VT area.

Our first meal in Vermont, the last thing I expected was life-changing wings, but that's what happened! The dry rub wings were maple/sweet, spicy, and crunchy, and incredible in every way. This is the kind of top-tier food that induces food dreams. Everything else was so satisfying too. The coleslaw was full of flavor, the cornbread was soft and sweet (no dry, bland cornbread here!), we loved the marinated carrots (so tart and crunchy), and the meats were perfectly seasoned. Not surprisingly for a BBQ place, it smelled amazing from the moment we walked in the door. Our server was so friendly and knowledgeable about the menu. Wish we didn't live across the country from this gem!

The only meal I've ever eaten in Vermont, so I can't compare it to other local options. Good beers. Good BBQ. Interesting sauces. Sweet was good, the other two were pretty vinegar-y, so those are what I stuck with. My wife reports the sweet was good, too. Great cornbread churros! I'm not a churros fan, but these were really nice. Service was good: we didn't have to seek them out once.

This place nails the bar vibe--great energy, creative cocktails, and plenty of fun options. We loved the ambiance and enjoyed trying a seasonal dish. The watermelon dish was tasty, though we wished it had been chilled to really make it pop. Biggest downside? We ordered food to go, and by the time we got home, the bag was soaked in grease--not from a spill, but from the bottom of the container itself. Awesome bar scene, but definitely hoping the to-go packaging gets some love.

The beautiful scent of wood-fire smoke permeating the surrounding air always stirs up a desire to partake of carefully prepared meats and beckons one to make a quick visit regardless of schedule and time. Entering before a long line formed was a BIG plus. Friendly staff asked if it was my first time before guiding me through their menu and highlighting local favorites. Ordering was seamless and I headed over to one of the open tables in the back. It was a very chill and friendly place. Lots of banter among patrons, drinks poured nonstop and the kitchen worked together like clockwork. The ribs and brisket were great. Definitely something I'd totally order again. However, the nachos and the pickles were nothing spectacular - if not, actually quite boring. Not going to ding them for this if locals obviously like them so much (as could be seen consumed by half the patrons there that day). Definitely stop by if you're in the area!

Food was great, I definitely recommend the cheese balls. This place was very busy and is very loud not for people looking for a quiet meal. The wait time was around 20 to 30 minutes on a Saturday afternoon, which is not bad at all. I think small groups 2 to 4 people will be comfortable. Bathrooms were clean. Service was normal. Our server was attentive and checked on us several times. Sauce and meat is made in the house. Coleslaw was a little bit blend for my taste. Overall I will recommend this place, and most likely I will go back again if I am ever around that area. There is street parking and conveniently, there is a Pay to park right across the street is $17 for a minimum of 2 hours.

We visited the area from Alabama and decided to drop in for lunch. We were not disappointed. The waitress was great, very friendly, and offered menu suggestions. Being from the south, we wanted to compare the styles of bbq. Not the same but very good. Loved the smoked mushrooms. Brisket did not disappoint. The restaurant had a good vibe with locals brews. I was not able to try these since we were on a tight schedule. Wish I could have though. Overall, we felt right at home and welcome in the area.

Always a great meal at Pro Pig and they're beer is great too. Got the brisket sandwich this time, wife got a burger, and our uber picky daughter got a hotdog. Sandwich was huge and ended up being a k&f job but the brisket was awesome. Their house bbq and ENC are great. We ordered some fries just to dip them in the sauce! Had a bantam IPA as well. Perfectly balance double IPA.

Casual dining - we ordered Sliced Brisket, 1/2 Rack Pork Ribs, side of Smoked Mushrooms, ProPig Burger, Mac & Cheese and Duck Fat Fries. Ribs were excellent - tasty, tender so it falls off the bone when eating. Brisket was ok. Pass on the mushrooms. Burger was solid. And we all tucked into eating the Mac & Cheese and Duck Fat Fries - these were both a must order. 2 pieces of cornbread $8 - when did this trend of charging for bread start - didn't we used to get this for free? We had first tried ProPig back in Dec2021. It had been a horrific wait and the food mostly unmemorable. This time our experience was much better and we'd definitely return when hankering for Ribs and Mac Cheese.

This was a fun spot in the cute town of Waterbury. I loved that we were able to join the waitlist from the website, which is such a convenient option. This is definitely a popular spot so you should plan ahead. The dining area is not too big so it fills up quickly. Our server was nice and the food came out pretty quickly. We got a couple things off the menu and just split everything. We really liked the flavor of the ribs, which had a great smokiness to it. The fries and mac & cheese were good but nothing too crazy. Overall it was a good experience and we enjoyed it.

We stopped into the Brewery for a drink and dinner. Overall, the was good and service was fast. My husband and I both ordered the brewery bowl. I had it with the brisket and my husband got the sausage. When it was placed on the table, both of our first impressions was, wow that's really tiny, but it ended up being the perfect amount of food. Brisket was great and the rest of the bowl was very tasty. Beer was good. The band that was there on 10/16/24 was excellent.

Stopped by on our way to Stowe for a late lunch. The ambiance and smell of the bbq is very inviting. We were seated almost right away for a larger group. The staff are friendly and helpful. We were shocked how small their menu was and seemed to be more alcohol but gave it a try because we were starving. We ordered wings for the table as an appetizer. The wings were juicy and flavorful, I highly recommend. We ordered the brisket sandwiches and pro pig burgers. For the hefty price tag of $16 we assumed that some type of side would be coming with the sandwich. It did not. And when our food came out we asked our server where our fries or sides were and she said oh you have to order those separate. It would've been nice to know this upon our initial ordering. The food was good, a bit disappointed on how much food was priced and it was just a smaller sandwich. The brisket sandwich needed way more meat on it. The burgers were great except for I asked for no mayo and it came out with mayo. Make sure you fine street parking and don't pay across the street in the lot. Maybe we are going to try it again. But there are other options in the area.

Prohibition Pig is a BBQ restaurant and brewpub that opened in Waterbury, Vermont in March 2012. It was founded by Chad Rich. About 20 years earlier, he had his first taste of Belgian beer and fell in love with craft beer culture. By 2009, he had an idea to open a restaurant that would marry his love of craft beer and cocktails with good local food. When Tropical Storm Irene hit Waterbury in summer 2011, it caused massive flood damage to the original location of The Alchemist Brewery. When the brewery moved out, Prohibition Pig moved in. The new restaurant quickly became popular with locals thanks to its excellent craft beer selection and southern-inspired BBQ dishes. In 2014, Rich acquired a historic former schoolhouse around the corner on Elm Street and opened it as the Prohibition Pig Brewery in December. Nate Johnson was hired as the head brewer to craft Pro Pig's own original brews. In 2018, Pro Pig was sold to restaurateur business partners Eric Warnstedt and William McNeil who also own Doc Ponds in Stowe and Hen of the Wood in Waterbury and Burlington. I recently visited Prohibition Pig while I was on a Vermont craft beer road trip. I've heard excellent things about them for several years. When I arrived in the late afternoon, the restaurant on South Main wasn't open yet but the brewery around the corner on Elm was. Pro Pig's delicious food is available at both locations. I could smell that delicious meat smoking from blocks away. I grabbed a seat at the bar and looked over the menu. I decided to order the "Brisket Smoked Meat Plate" (pickles, slaw, dinner roll) with a side of Cornbread (maple butter). The brisket was so falvorful and tender that it melted in my mouth like butter. I washed it all down with a draught pour of "Valentino" (Italian Pislner). Although I enjoyed Pro Pig's house beer, it was their delicious meat that really impressed me. Since I was heading back home to Connecticut not long after my visit, I ordered a "Brisket Sandwich" (slaw, BBQ Sauce) and another side of Cornbread to bring back for my wife. I also grabbed a four-pack to go. I really enjoyed my experience at Prohibition Pig and I hope to return in the future!

Service was fast and friendly and the long bar and bourbon selection was next level ambience. The pimento cheese jam was a-mazing!!! Lick your finger good. Great burger too. Visiting from Boston we heard great things about the prohibition pig and when we called to see if they were kid friendly and they had high chairs we were all in. Traveling with our then 16 month old, the place is definitely more of cocktail bar speakeasy vibe, we were thankful they had tall high chairs to accommodate the high top tables in the bar area. Waited about 45 minutes to be seated on a Thursday night. Super friendly staff and I honestly loved the vibes. They were running a tiki drink special and my hubby and I LOVED the drinks. Great presentation and well thought out. I'm giving three stars solely because we really didn't think the food was all that and more as these reviews say. Could be personal opinion but just being honest here, the Mac and cheese was so dry it was inedible, corn bread same thing extremely dry. The meat was dry and it needed something more to it we felt it to be very bland. Such a bummer since staff was awesome and the drinks and overall vibe is amazing. For the price paid and the taste it was just a big miss for us.

Stopped by Prohibition Pig about week ago while visiting the Waterbury area. My husband and I joined the online waitlist, which I would recommend, as it helped us save time waiting in line. Once seated, we ordered the Royal Hawaiian Mai Tai and the Knob Creek Rye (flight). Flight was great of course. Cocktail was ehhh - pretty watered down tbh. I ordered the Mac & cheese with the chopped pork plate with a side of cornbread. I really liked the texture of the Mac & cheese as it was quite cheesy and creamy however it could've used a bit more seasoning. I also ordered the chopped pork plate which tasted good. Only wish it wasn't such a small portion for the price as half of the plate are sides which I didn't think was needed. I also could've done without the cornbread. Husband ordered the brisket sandwich with duck fat fries. He enjoyed his meal and the taste. Had no complaints. Probably would come back but would be more mindful about what I ordered.

An amazing stop to grab some lunch on our way to Ben & Jerry's factory. Quite busy for lunch on the weekend, however wait time wasn't long. We put our name in the waiting list and then head to their brewery, located in the building behind the restaurant, to grab some drinks while we waited. I love the decorations inside, especially the whiskey wall behind the bar. Host and server were cooperative, since we had a stroller. They had a high chair ready when we got back to the restaurant. For drink, we ordered the Bantam (American double IPA) and cider. Drinks were a good start before we ordered our entrees. For food, we ordered the brisket sandwich with a side of fries and sliced brisket from smoked meat section which came with pickles, slaw, and a roll. Foods were tasty and came out pretty quick. Overall, would definitely recommend this place for lunch and come back when we're around Vermont.

There was a 30 minute wait when we arrived so they offered us two seats at the bar. We took the seats and enjoyed our experience. I ordered the Mac & cheese and was not disappointed. My wife had the steak tips and they were excellent. I would come here again.

The brisket was so flavorful and tender and the burger was great. If you like whiskey and bourbon they have quite the selection, as well as some great beers on tap.

My wife and I are from the South, and came to see the foliage that we've always heard about. We stopped in this quaint little town to visit. We barely made it out of the car when we smelled the meat smoking. We walked the town and the smell was intoxicating. We made it to the door and realized they didn't open until 4:00 pm. I was truly bummed out. We saw the pit master at the pit and I told him how sorry we were that we were not going to be able to try the food. He told us that the bar opened in about five minutes and that food would be available. We walked behind the building just as she had put the sandwich board out and we walked right in. We sat at the bar and were quickly greeted and given menus. Everything looked delicious, but first we ordered a hot buttered rum and a craft beer. We saw the pit master bring the brisket to the bar area to the chef. It looked amazing and the chef talked to us as she started prepping the food. The bartender was very nice and answered several questions for us. We wanted to try a lot of different items and ordered the brisket chili, one jalapeño sausage, a brisket plate, and cornbread. It was all amazing. The brisket is by far the VERY BEST brisket that we've ever eaten. It was complete perfection. They also have a cool thing there called a "high five" which a patron can add on for the all the workers in the background that no one sees. It's just a way to give the workers a little extra tip ($5) that hourly workers wouldn't normally share in. The quality of the food is worth the price. We hope to find our way back to this gem of a restaurant/bar. Our trip included Boston to Vermont and this was by far the best meal of our trip. 5 stars!

Prohibition Pig exceeded our expectations. The waitlist process on the yelp app was convenient and easy to use. We got there when we were 2nd in line, and got seated at our table within a few minutes. The atmosphere was great and the service was helpful and friendly. The beer was delicious. The brisket was excellent. The mac & cheese with pulled pork was amazing and we all loved the cornbread. The burgers were great too! We can't wait to come back here for dinner again next time we're in Waterbury.

Food price to portion ratio was not great at all. I paid $17 for my burger and for that price I would expect it to come with fries or some other sort of side. Instead, we paid $9 for an average side of fries. Service felt a bit rushed. The atmosphere and decor was really cool and there was definitely a lot of potential, but we were pretty let down by the prices and food quality.

My husband and I have been stopping in this place for years while vacation against Stowe. The atmosphere is fantastic but the prices for what you get just aren't worth it anymore. $8 for what's basically just a cup of BBQ beans that really have no flavor at all. And $8 for 13 oz. Of beer. That's brewed on site, you can do better than that. $8 for two pieces of cornbread. I understand about inflation but this is a little out of control. That service was just so so. There was one very nice bubbly waitress that unfortunately was not our waitress. The two male bartenders had no personality whatsoever. Needless to say we won't be back again.

I want to start off by saying this place is amazing! We went to both the restaurant and the brewery behind. The brewery and the restaurant located in a different building next to each other. We went to the brewery first. Everyone was so friendly in the brewery and place had a nice dark vibe that made it relaxing. If you want you can get some Mexican food here but it is not the same as the food in the restaurant. The beer was good, the seltzer was good, the merchandise was great and there was seating outside, in the main bar here and is a little upstairs nook that was cute. Dogs can site at the outdoor seating. After the brewery we went to the restaurant and had an amazing meal. Everything tasted so good! If we lived here we would be here all the time.

Wow. My family and I shared the "Buy the Farm" and it was absolutely amazing. The highlight was definitely the fried ribs. Probably the beat ribs I have ever had. The sausage, brisket, wings, and corn bread were also amazing. Both the barbecue and hot sauces were also delicious. Easily the best barbecue food I have ever had. Atmosphere is also quite nice. My only "complaint" would be that the service was a bit weird because I could not tell who our server was. One guy took our order, another brought drinks, another brought the food, and another gave us the check. The food more than made up for that though.

Terrific place and one that has become a favorite on our annual Vermont vacation. Service, quality, and ambiance all are top-notch. The bar is filled with yummy bourbons and the staff is knowledgeable and helpful. The food itself is excellent--some of the best BBQ I've had in the northeast. Highly recommend.

Three adults and a two-year-old went there last Sunday evening (8/11/24). It was raining, so I went inside to check the waiting time, leaving folks in the car. It looked busy, but I could still see a few empty tables. The host asked for my name, the number of the parties, and my cellphone no. She said I would get a text once a table becomes available. Since there was no waiting area and it was raining, I told her I would go back to my car and come back after getting a text message. 30 minutes passed, but I didn't get any text messages, but I could see I was no. 1 on the waiting list. 45 minutes passed, and I was still no. 1, but there was no text. And suddenly, I vanished from the waiting list, but there was still no text message. So, we decided to go in, and it was almost empty with a few customers. The same host showed up, and I asked her I was waiting for 45 minutes. She said she removed me from the waiting list for some reason but no sign of apology. Despite the bad experience, we decided to eat since we had wasted 45 minutes, and it was late and raining. The server was great, and welcoming. She and her daughter work there, she said. We had full rack of BBQ ribs, crispy chicken, Mac&Cheese. We left 20% tips for the server. 0 stars for the host, but definitely 5 stars for the server and food.

Visiting Waterbury-Stowe for fall foliage like many others, I kept seeing reviews for Prohibition Pig on travel recommendations and on gluten free sites (I am celiac). Pro Pig doesn't take reservations and can get very busy during peak visitor travel seasons, but join the yelp waitlist and check in early and the time will be shorter than you expect. For such a hoppin place, we didn't feel rushed at all and the staff was super knowledgebale about the menu and incredibly friendly -- including the manager who was there supervising that the restaurant go smoothly. My questions about gluten free items were answered with certainty and my meal was marked in the system for an allergy. We had the brisket, the grits, mushrooms, and some wine and beer. Everything was so tasty and there is such a warm and inviting vibe to the restaurant. Highly recommend. Go even if you think the wait will be long!

First time at ProPig...I will preface this by saying I'm not a huge BBQ fan. Loved smoked meats, but hate bbq sauce. We went as a group of 4. Two had the pulled pork which both people said was delicious. One had the brisket which they raved about, although we all expected her to get more than 1 piece of brisket!! And I had the dry rub chicken. While the chicken was juicy, it was VERY spicy which I was not expecting. The highlight of the meal were the hush puppies! Best I've ever had! For dessert, our waiter said the ice cream was the best we would ever have. It was quite good but maybe not the best ever. All in all, we will likely be back when we are in the area.
