Unfortunately, our experience at this rib restaurant was very disappointing. It’s located on Fremont Street, right in front of the stage, between Circa and Golden Gate. Prices are high — likely due to the touristy location — but the food simply isn’t worth it. The ribs were dry, flavorless, and had a strange texture. The mac and cheese didn’t taste like anything — we honestly had no idea what we were eating. Everything lacked seasoning, depth, or any real flavor. On top of that, there’s no comfortable seating and the heat is overwhelming. I do not recommend this place. If you still decide to try it, go with very low expectations. There are far better food options in Las Vegas. Don't let the pictures deceive you, food wasn't good.

So I'm a Louisiana boy that's tried BBQ from Vegas to Phoenix, all of Tx, OK, Arkansas, Louisiana, Mississippi, TN, Alabama, Georgia, WV, the Carolinas, Detroit, all of New England Based of of the few items I had, they are definitely in my top 20 BBQ spots PERIOD. I now wish I would have tried more to give a more thorough review but my daughter got married earlier that night so my head wasn't quite in it. Everyone knows Cole slaw and potato salad are a huge hit or miss, after trying the meat and sauce, I honestly didn't even want to try the sides. I actually started to walk away but was like damn, let's try it. I'll be Gyat dam, I know their grandmama's are proud. 9.2/10 If im ever back in Vegas, I'll go out of my way to come here again. ❤️ thanks guys for the hospitality.

The truffle Mac and cheese is easily one of the top 3 Mac and cheeses I’ve ever had, and the brisket sandwhich was great. Even better, however, was the service before, during, and after eating. The gentleman serving everybody was very attentive to every single person in the area, and around it, and immediately set us at ease when our food took a little longer than expected. Would 100% go back for the Mac and cheese and service alone.

This spot is apart of Circa comps. It is catered in for Sports Book. You can also walk up on Fremont St and place an order. All seating is outdoors, but don’t expect to sit. With so much going on the tables are high tops to chow down on then get back to the experience. The food here is excellent. Freshly prepared to order. The wait isn’t very long. The flavor is amazing. Be sure to give this place a shot! It’s well worth it. The whiskey steak sandwich was the best.

Decided to try Project BBQ and wow. The food was flavorful and cooked to perfection, but what really stood out was the service. Stephanie was amazing! She made us feel welcome from the moment we walked up, and her energy and kindness made the whole experience even better. You can tell she genuinely cares about the customers. Great food, great staff, great vibes. Will be back!

While wandering around the Fremont Street Experience, we came upon the Project BBQ, and it looked like they would have good tasting food there.The outside looked very bright and colorful and welcoming. It's a food truck! We had to stop and order! After looking at the menu, we decided to order the Pulled Pork sandwich with Elote. We split the sandwich to save on calories and money. Vegas is expensive, as others told us before we arrived here. Our sandwich was good - loved the BBQ flavor! Service was fast, and the cashier was friendly. The reason that I didn't give 5 stars is because they have stand-up tables, meaning you have to stand while you eat. My knees were not happy about that. Otherwise, everything else was fine.

I go to circa hotel and resort a ton, we spend a lot of money I mean a lot gambling to the point where we have a Host any super cool and hooks us up with a lot of really good stuff . They make anything happen for us. That being said this was the first time trying this restaurant and it seemed good at the beginning with placing our order we were the only ones there no one else was in the eating area They ask you is it for here or to go? We specifically told him for "Here" we even pointed to the table we would like, and he shook his head as to say OK. to get them to say hello and acknowledge you is a challenge itself because they just stand there. Look at you like they are mute and they can't talk. We noticed a bunch of people actually large amount of people were coming. We noticed they were all getting their food way before us. They were getting steak sandwiches just like we ordered. We were also getting the project mix it has a little bit of everything so you can try the different selections . The only difference was ours is we wanted the BBQ on the side. There was people next to us talking to us. He ordered the exact same thing. And we were joking with them that hopefully ours will come out soon because we wanted to taste our since he was telling us how good his was lol lol I walked up and I asked the barbecue will be on the side. He said yes Then 10 minutes later I walked back up again and asked did you guys forget about us and he says no no no working on it but yet he walked over to ask him where the food was. The little gay guy that works there (I was unable to get a picture) comes trotting over and sets down a to go bag and I said our items are for here and he said and I quote "OK OK we can fix that" and he takes the to go containers out of the bag and sat one in front of each of us and said "now your food is here" and I said no no no that's not right he got a little bit of attitude and walked away I proceeded to let them know I would let our Host know and that the customer service was not good. They didn't really care to hear it. It was as if oh well, you got your food Just go sit down and eat and shut up. Went to our Casino host informed him of what happened we never complain. We actually are a pleasure to deal with as he says we always are happy to see us Informed the host of the customer service and attitude that we received and that it was pathetic and disgusting as if oh well you're a number you paid you gave us a tip. Get the hell away from us. This is definitely not the standards that you normally would receive through the circa hotel and casino and the host agreed that there's numerous complaints about this particular spot. My host informed me he could go over and talk to them or escalate it to their boss. Or I could go over nicely ask to speak to their manager and explained to them exactly what went on, and he would have the security cameras pulled to show the unprofessionalism and all the people eating that came in way after we did which shows an unsatisfactory customer service. Our host even informed us I had every right to ask him for my tip back for poor customer service you give a tip based on good service. I went over and coincidentally the guy in the picture that waited on us was the manager on duty. He seemed to have every excuse to cover their selves and he got an attitude when I said I want my tip back. The manager wanted to give me every excuse under the son of why it took longer and why other people got their food besides me and that they had to cook my special and that's a lie. He was just trying to cover himself because he realized that they messed up or they scoop the food down at the containers and put it in either or a platter for you to eat there they add the barbecue sauce into it as he explained to us when he was ringing us up when we prepared did you forget about that ???? It's easier to just say you and your team messed up and forgot our order making us wait 23 minutes for it when other people were getting there rather rapidly. He go get three dollars and give it back to me as he's running his mouth to his workers of what I requested. It's all about customer service and if he was in my shoes, I am sure he would've ran his mouth. I own a few concierge business owner and work in the medical field and I can truthfully tell you I will never recommend this place and will actually tell people to stay away from it. I do not recommend this place because of it's really just not good. It's not good seriously there's much better barbecue places actually for cheaper. I don't recommend this place because of the service. It was horrific horrible McDonald's treat you better. You've been warned about this place. I'm sure a lot of other reviews they have which I have not looked at yet will reflect the same. I will look at them and see.

The guy manning the register was extremely rude to say the least, apparently they called my order number and I didn't hear them call it so once I proceeded to grab my food I was told I was messing everyone's night up because I wasn't paying attention.. WTF initially I didn't really know how to respond to it, but once I went back to tell him that I didn't hear them call the number and that totally wasn't my intentions he threatened to call security. I'm in Vegas a lot and stay at that particular location but one thing for sure is I will not be returning to project barbecue anytime soon.. This was probably my fifth time visiting this location and third time dealing with him which will be my last.. Obviously this is not a one off situation because as I sift through reviews, I can see other people having similar issues with him and his terrible attitude so this is something that may need to be addressed.. Just Saying

Heard good things about the BBQ....so we gave it a try. Well we weren't disappointed. We got Garbage Bowl. I must say I was impressed. The meats on top had good Flavor. I'm use to a little more spices in the flavor but it was good. The homemade potato chips did not get soggy and were very good under the meat. The service was good and being next to the stage you get the music too. Worth the price. I will definitely will be back on my next visit. This is one of those places where you walk by and say I will try it on the way back....DON'T MISS OUT! Stop by when walking through the Fremont Experience. It's next to the far stage at the end of the zipline close to the Circa Hotel. It looks like a lunch truck nestled next to the hotel. Check out the video I uploaded.

A great food truck experience at the top of the Fremont Street Experience right across the street from the Union Plaza..in front of the Circa Hotel . I enjoyed the TRUFFLE AND CRISPY BACON MAC N' CHEESE. Delicious and lightly creamy with crispy panko.. Yum! The service is quick, despite the long line. We ate an early meal around 4pm. You order up the meal and drink in a line of hungry patrons, and then enjoy your delicious grub outdoors in a patio setting right on the Fremont Street . A DJ was spinning upbeat dance/mash music which encouraged lots of dancing and grooving to the beats. I saw lots of people really enjoying their delicious bbq and sandwiches. Try the food.. I will return to this food truck!

I ate here on Christmas Eve. It was very loud but that's to be expected on Fremont street at night with the live bands. At least it was a good 80s cover band :) The cashier/ server was friendly and efficient. The food was good, I loved the crispy chips and the pulled pork was flavorful.

Waste of money. Unsure why this spot has 4 stars the food was terrible. The staff was super friendly so kudos to that but I waited 30minutes for some skewers and mac n cheese. As far as the food goes half of my chicken skewers were raw, pale, full of fat and unsure how you can mess up mac n cheese but it was flavorless and tasted odd. I will say, they have pretty good fries. I would have rather saved my money and not eat dinner overall. I'm telling you this place is not it.

Had the best kabobs at Project BBQ! The staff was so kind and brought our food to us which was above and beyond because they ensured we had everything we needed. With it being a food truck style dining it's cool because you get the best of Fremont street while having awesome bbq! We will definitely be back!

At a really good location near one of the stages on Fremont. There were standing tables which was good, they dropped the food off to our standing table. I got a pulled pork sandwich with chips and coleslaw. Coleslaw was a bit sour than I liked although it was all pretty fresh and crunchy! It's a bit expensive, but for the location it's not bad! I did enjoy the pulled pork sandwich because I gobbled that up so fast. Loved that we could hear the music from here!

This is one of the good spots on the Fremont Street! My bf couldn't believe I never had brisket before in my life! So I was really eager to try brisket luckily for me they sold some here! I waited in line while bf was in the bathroom. This gave me enough time to look up the menu and decide what I wanted to try out! I love how this place is right next to the live performance (stage right)! So you listen to live music while you enjoy your meal! Can't say that everyday! I decided to get the brisket empanadas....yummm!!! I was able to place my order fast and easy and got my food within minutes! I honestly fell in love with my food and the sauce was like a cherry on top!!! It meshed in good together low key didn't feel like sharing my food lol. My bf says this brisket was alright here he's had better. But for me I really loved my food so I'm giving this place 4 stars! Definitely have to come back for some more brisket empanadas!

For the Price and Quality Avoid this Place. The location is very nice , food truck like Vive right by the Fremont Street main stage. The ambiance is amazing, the service is on point and very polite staff. The FOOD Though: we ordered an order of 3 Brisket Tacos, the brisket was Dried and tasted Old very old, the amount of meat in the taco was Measly, they also drenched the taco with BBQ sauce to hide the Dryness, there was a Pungent Fishy smell to the brisket that was a bit odd. Next we ordered the BRISKET sandwich, same business, dried up old tasting brisket, for such a beautiful looking setup and standing up dining room this BBQ tasted Amateur to say the least. ended up paying $50+ for a very mediocre helping of food, this is the exact reason why this type of places fail in Las Vegas, all Smoke and Mirrors and the food is rubbish.

I ordered the Project Platter and was quite disappointed. All the meats, apart from the sausage, tasted similar and it wasn't helped by finding some foil in my meal once I was back in my room - I couldn't eat at the truck as they don't have seating. I won't rush back as there are many other similar options of better quality in the vicinity.

This place is located right outside of the Circa, on the Fremont Street side, close to the last stage closest to The Plaza. The cooking is done in a food truck that is just parked there and looks to be part of the building. There are lots of tables to eat with warmers incase it's cold! Mister and I split the Garbage Bowl, the bottom is potato chips topped with chicken, pulled pork, brisket, cheese, bbq sauce, and cole slaw. The meats were all tender, could have used more bbq sauce. The chips were delicious taste similar to the chips from Saginawa's. The cole slaw no flavor, wish there was more cheese. The beans were delicious, could have used bbq sauce and a bit more salt. It was topped off with your choice of meat. Service was friendly, you need to order at the register, and they give you a number and they will bring your food to you.

Came here while looking for a place to eat and it's right by a stage! I ordered the brisket empanadas. The service was quick and friendly. Once you order, they give you a table number and then you go wait and they bring it out for you. Once I got my food, the beef brisket was so tender and flavorful. You can taste the sweet and smoky taste. The empanada had a good crust but it wasn't too mushy and just perfect as a vehicle. I'll definitely come back!

We had the ribs, hot link bites, and pork rinds. Everything was delicious. Man, did that meat just fall off the bone or nah though?!?? You just walk up, order your food and they bring it to you. They offer stand only tables, but you get the benefit of being right on Freemont so you can people watch. Their standing area is also immediately off a full service bar. It's definitely worth a try!

Staff was rude . Also they have tacos but no corn tortillas which is crazy . Anyways, They had this guy in there that was pretty rude. When the wife and I walked up to the counter to make our order he says to us "the menu's over here " . Duh buddy , we already looked at the menu before we walked up . My friend got some food and was standing on the inside of their little fence and the guy told them they couldn't stand in there even though one of them was waiting for his food still . The guy was walking around looking and acting more like a bouncer and their spot was empty

In a city that lacks BBQ this has to be the worst I've ever had. I came by shortly after they opened and staff was very friendly. Younger male was training on cashier and was attentive and kind. Ambiance is cute but smelt funny in their fake grass area. The service however does not make up for the complete lack of excitement and flavor profiles in the food. I ate the BBQ combo which had Chicken, Brisket, pork and sausage. It also had cole slaw and house made chips. To start let's just say the chicken was bland diced into tiny pieces and had almost zero Smokey flavor. The lack of salt and seasoning transformed something so simple into something so un inviting and blah. The brisket was a bit dry but had a bit more flavor profile than the chicken. It was tender but however accompanied with their BBQ I found the entirety of the dish boring. The pork just tasted and felt like pork. No crispy bark and absolutely no seasoning or life to it. The sausage ended up being the star of the show which is sad because it may be the only thing on my plate that was made out of house. All in all I would never order here again even if it was free. I'd save my appetite for something that has flavor and taste m.

Tesha the cashier, gets negative 10 stars if that is even possible. Her lack of customer service and nasty attitude are more memorable than the delicious food. I could not enjoy my food thanks to the disgusting taste of her attitude that was left with me. AND to top it off when I got home I noticed that she placed my food in the togo bags upside down! Just a disgrace!!! NEVER again will I eat at Project BBQ again thanks to her, I will go into the Circa and enjoy the Deli or the Burger joint.

Went there as a local and max tier gambler at this casino multiple times items were left out of 200$ + orders and when I called to straighten out said missed items was told me they are busy and can't assist with the 3 meals missing

I think this is a very overrated restaurant. Not only did most of the groups food come out cold, the servers and staff were very rude. One worker pointed to the no refunds sign when we asked if the food could be remade and had a pretty nasty attitude. It's not that deep, just remake the food. After this incident occurred, she continued to try to add fuel to the fire by very obviously and dramatically still pointing at the members in our group that wanted their food remade. The churro I rate a 3/10. It was hot when it came out, but the flavors are just not there. Mac and cheese: 5/10. Had a decent flavor profile and came out hot but not the best. Tacos- 7/10 . The tacos came out cold but had a good flavor to the chicken. The overall area is kind of cute, it's only outdoor places to eat and no seating. So if you're looking for a sit down situation this is not it!

I've been here twice and it's one of my favorite BBQ joints on the West Coast. The ribs have been consistent and absolutely amazing!! Even the chips are good. Mac N Cheese is hard to get right and they do it right every time. Customer service is on point and everyone is friendly. You'll love it!

This is my first and won't be my last time eating here. The food is great! There is stand-up eating tables. It's close to The Fremont Experience. I highly recommend it when you're in Las Vegas. In the pictures, we got Bratwurst on a Steak Roll with homemade chips. Baked Potato with smoked brisket, sour cream, cheese. Truffle & Bacon Mac N Cheese and 3 Smoked Brisket Empanadas.

This is a cute place outside of the Circa hotel. I love how they serve the food out of a truck. It's a twist to authentic bbq food and was very fresh. We started with the brisket empanadas, which were very delicious and I love the crema they put on top, it was a little greasy but still good. The chicken tacos were very good and the brisket sandwich was amazing. I loved the slaw that comes on the sandwich, they also give you a side of chips with the sandwich which was a great crunch. Some of the chips were greasy and soggy but most were good. The staff was very sweet and helpful with the menu. I definitely recommend to come here for good eats.

My wife and I went here for lunch this past St. Patrick's Day. We bought the 26.00 " Special". Tiny sandwich, cold chips. We bought beer across the way at Golden Gate with which to wash it down, along with 1000's of others on Fremont Street that day, we were celebrating and dancing to the live music. A short bald man who appeared to be a busboy, told us we had to leave because I had draped my jacket over the railing. Since he didn't identify himself or his position, I suggested that he call Security..which he did. I'm 56 5'10 my wife 57 5'3. 5 very large Security Officers were called to neutralise the threat we had apparently become. My wife and I patronised several dozen businesses both Downtown and in Henderson that weekend where our money and our patronage was met with gratitude and hospitality. This was not one of those places.

This place is a pretty good little corner BBQ spot. I kept passing by it numerous times walking back to my hotel with my BF and finally gave it a try. I ordered BBQ chicken tacos and it's not really what I had expected. I wasn't a fan of all the onion the BBQ sauce all over the taco. Additionally, they use flour tortillas... maybe next time I'll ask for corn. Anytime I get tacos with flour tortillas, Taco Bell comes to mind. Anyway, I did also order the Mac and cheese and it was BOMB AF!!! Sooooo delicious!!! That definitely hit the spot. The fried zucchini was pretty greasy and not so much crispy like I thought they'd be.... so I won't be trying those next time either. Needless to say it's a good spot for a quick bite to eat when you've been drinking.

I chose to explore the Fremont Street Experience during a recent trip to Las Vegas. Project BBQ is a permanent food truck stand at one end of the street. They make pretty good barbeque and sides. For where they are located and it being Vegas, it was good but if you are a bbq enthusiast, your not going to be impressed. The garbage bowl gets you a little bit of everythign and is not overly large. As it is on the side of the street, there is great people watching a a view down the entire overhead. Many locations in Vegas are requiring reservations (contact tracing measure) but becasue they are outside and walk up, Project BBQ is no reservation required.

The food truck is at the end of the Fremont experience in downtown old Las Vegas . It sits at the end of the zip line tour next to the stage. I only had a churro but it was packed with people standing around drinking and eating. Listening to the live music. Wish I had tried the food but I had just ate.

First off the service was amazing!!! Julio and Jack were amazing and the food was all amazing as well! I got the BBQ tacos and elote corn and my boyfriend got the brisket tacos! It was great! Highly recommend on Fremont street!

I've been here several times in the last few years and the BBQ is always amazing. Their pork empanadas are my go-to menu item. If you have comp dollars through the One Player's Card (D casino, Golden Gate, or Circa), this would be an excellent use for them as everything is reasonably priced. Sasha, the manager, is amazing and definitely does an outstanding job with customer service too! I look forward to coming here again on my next trip to Vegas.

Permanent food truck located in the downtown Fremont area. It is a nice barbecue joint that gives a backyard feel as you feast on freshly smoked BBQ. Walk down Fremont Street and you'll be greeted by the flashy lights of many entertainments with countless food options. Southern classics and gourmet smoked meats are served here. You choose your meat, whether brisket, pulled chicken, and pulled pork that are very well seasoned. There is a truck made coleslaw and other options available including the garbage bowl which can satisfy all the taste buds at once. This BBQ creation consists of a handful of their famous potato chips covered with a portion of each meat available and topped with Carolina BBQ sauce, beer, cheese sauce, coleslaw and applewood smoked bacon. Delicious!

This place is a cool outside permanent food truck attached to Circa on Fremont Street. To get to it, you must exit Circa into the Fremont Street Experience. The atmosphere is fun with music playing and stand up picnic type tables. The staff that rings up your order is so friendly and helpful. They are awesome! My food was really good. I got pulled pork and chips with street corn. The street corn was great and a nice portion. The pulled pork was good, but it was a Carolina sauce and I prefer a sweeter sauce (I should have gotten the brisket!!!). The chips were plentiful and delicious. This is a fun spot to grab a meal. However, I wish they had actual seating, rather than just stand up tables.

PLEASE READ IF YOU WANT TO AVOID MAJOR DISAPPOINTMENT!! If I could give a negative I would! All around disappointing when I went here over the weekend for a Bachelor party! Want good food & service, go somewhere else. Want to sit while eating in, go somewhere else. Want some A/C, you won't get it here. For a business with a great location, the execution of this restaurants set up all the way down to the menu has to be one of the worst I've experienced. I'm a big lover of smoked meat, so I can tell when restaurants aren't using fresh smoked meat, this place has nothing fresh about it. There advertisement should read, want some food that's been sitting in my fridge since who knows when & be served by people who seem to have somewhere better to be with no interest in helping you pick from the menu, but call themselves a manager when you complain & can't even pretend to want to help. Would you also like to stand up in Las Vegas heat while not enjoying your overpriced small portioned food with a 6 drink selection & 3 being soda, come on in. We also have a surprise of homeless people who like to consistently walk up because it's outside so they can harass you for money or your food with no help from the staff 5 feet from you, then you found the right place guys!! (Luckily I was at a spot they couldn't get to me, just got to watch this happen to two other guest because I'm as observant as it get.) If this place wasn't on the well known Fremont Street by one of the stages & 2 outside bars, I would have lowered my expectations. I know how to keep my expectations in check when eating out. If I go to fast food, I expect fast food service. But if I go to the Las Vegas Strip or Fremont my expectations shift because it's a pricey & normally great experience so I know these people are making okay or great money. One other things about these "servers", they aren't servers they are cashiers who expect a tip when you walk up to there register just to take your order & bring you're food up to 15ish feet away from where they had been standing. They don't check in, if they forget anything down to a fork you have to go to them, if you need extra sauce for a price you have to go to them, if you have more luck then me it won't take almost 10 minutes to get after asking for it again. If you have a problem with your order you have to go to them & they treat you like your goal is to get something for free or ask for your money back. So guys if you read this far & you still decided to give it a chance still, please at least save that tip till after you have your food because they did not deserve mine! Also there is a BBQ place at the casino Binion's right next door that I passed by so I'd give that a shot first if you're craving some BBQ. I'm sure you can sit there & actually have a server. An to the company, please don't bother to say shit back! Like really! As of now you have a -3 for me, so this has to be the worst review I've given. That reply will push you to a -4. If you cared you would have cared when I was there. So anything you say back is fake shit to try and make yourself look better on here that I don't have the patients or respect for! I've read your responses on your reviews & y'all straight up copy & past. So save the fake shit for the the people while buy it. Just hoping this helps you to better your business so nobody has this experience again because right now it is a joke!! You're in the world's most famous adult playground, so do better! Btw this is coming from 9 dudes who had some pretty shitty things to say in a group chat, some did takeout thank goodness or that would have been more of a shit show! So I took initiative to creat this review speaking for all of us! The two pictures I am add are both not taken from me.
