Project Pilote, a Spacious New Microbrewery and Bar, Opens in the Plateau | Eater Montreal

"This hybrid distillery, microbrewery, restaurant and bar in the Plateau is the culmination of more than half a decade of planning by owner and distiller Guillaume Drapeau, who until recently was a partner at neighbourhood wine bar Le Rouge Gorge. Positioned in the roomy Rachel Street space Drapeau purchased years ago (previously La Quincaillerie) and adjacent to poutine powerhouse La Banquise, the venue was designed with tall ceilings to accommodate a brewery on a glass mezzanine and distillery equipment that spans some 30 feet in height; Drapeau also secured city permission to operate a distillery in a commercial district, a first for the city. For now the focus is on small-batch gin and fruity, nutty eau-de-vies with plans to move into whiskey eventually, and those spirits form the backbone of Justin Presseau’s cocktail menu — highlights include the “Grand-Mère Smith” (green chartreuse and a clarified cordial) and the “Kaffir” (lemongrass makrut tincture, smoked salt, lime juice, and Mangosteen mousse), both spiked with on-site gin. On the beer side, Martin Allaire (formerly of Boswell) brews eight house beers on tap at a time, emphasizing balanced, thirst-quenching styles, and pours them straight from copper-coated bright tanks suspended overhead under a lightwell that casts a glistening orange hue and serves as the bar’s focal point. The operation functions like a freewheeling science lab — experimenting with ideas such as brewing a beer to be distilled into whiskey and reusing barrels to brew the original beer — while sommelier Jean-Patrick Sturgeon brings organic and biodynamic wines and chef Léon Buser-Rivet tends a 700-square-foot rooftop garden whose hops, aromatics, herbs and vegetables feed the beers, spirits, cocktails and menu. The food offering is currently eleven snack-style dishes (zucchini blossoms filled with stracciatella and cherry tomato compote; creamy buttermilk cucumbers with dill), plus a chalkboard of mains like steak frites or grilled fish, with pickled and fermented winter vegetables expected to take the lead in colder months; the team deliberately rotates projects between brewery, distillery and kitchen to reduce waste and spark creativity (for example, using leftover lemon rinds in spirits that then get used in cooking)." - Valerie Silva

First time at projet pilote and absolutely loved it! Amazing cocktails, delicious food and great ambiance with live music on Wednesdays. Our favourite was the gnocchi and truffle fries. Thanks so much for the great service Ismail we will definitely be back :)

Exceptional menu both in terms of drinks and food. The cocktails are original and heavenly and the ambiance is quite cool! Mad props for the live music situated discreetly on the upper level above the entrance.

I'll be honest - I had no intention of going to Le Projet Pilote, I didn't even know it existed. The original plan was to go to La Banquise for dinner, but upon arrival, we realized that the wait was an hour, so my friends I pivoted and decided to just go to the restaurant next door to La Banquise - which happened to be Le Projet Pilote, where I had THE. BEST. MEAL. OF. MY. ENTIRE. LIFE. I'm not exaggerating when I say that - truly everything we ordered was a total knockout. My friend ordered an old fashioned and said it was in her top three that she's ever had (which is an incredibly high honor). To eat, we ordered the mushroom toast, scallops, truffle parmesan fries and the gnocchi to share, and each dish was more spectacular than the last. I realized at Projet Pilote that I’d never truly experienced real gnocchi before—theirs was so incredibly light and pillowy, unlike anything I’ve ever had. The truffle parmesan fries were outstanding—easily the best I’ve ever had. Unlike other places that rely on drenching fries in low-quality truffle oil, these struck the perfect balance. They were beautifully crisp on the outside, tender on the inside, and the truffle flavor was present without being overpowering. The scallops were perfectly prepared, and although we were full after our dinner, we knew we just had to try the desserts. We ordered the strawberry shortcake dessert and I forget the name of the second dessert - but both were spectacular. The second dessert we ordered was a hundred layers of the most delicate paper-thin pear sheets, baked into a pie and served with homemade rum raisin ice cream on top - you could taste the rum in the ice cream! In summary, go here, order everything on the menu and spend the rest of your days dreaming about going back.

I must say I had zero expectations going in, I didn’t know much about this place and we were just looking for a quiet place to have a drink and covered from the rain. I really enjoyed my visit, we stayed almost 3 hours. The layout works, it’s comfortable, the decor is pretty nice. The cocktails are good and creative. Staff was friendly. There are some food options, quite limited menu. Our food was ok but I found it too expensive for what it is. Next time, I’ll stick to drinks only.

Tried a bunch of stuff including a few of their seasonal offerings. The salad was absolutely unique. I've never had anything like it before and it absolutely slayed. The chips and dip were incredible. They were so good that I ordered some fries to finish off the dip. The fries were tremendously okay. Wasn't planning on getting the smash burger, but then I smelled it when it was delivered to the table next to me. Did not disappoint. Didn't get it with bacon so can't comment on that, but with everything else it was delicious and well-rounded.

One of the best margaritas ever! I’ve been wanting to go to Project Pilot for some time now, and I’m happy it lived up to all my hopes. The atmosphere is lush and vibrant, and their service is high-end and professional. It’s lots of fun to sit at the bar and watch the mixologist enthusiastically at work, performing their craft. Make sure to take a stroll around the place and take a look at their gorgeous brass beer brewery tanks proudly on display behind glass.

I'm a regular and I can say this is definitely somewhere to have a drink to catch up with a friend or have a simple nice date. If you come to just pass by and have a cocktail, this is definitely the place. If you're here to also eat, you won't be deceived! They make both their menu and their cocktail menu seasonal (with and without alcohol). The head bartender also makes his own non alcoholic liqueur so for the people that don't drink, this is your place! The creations there are as unique and as personalized as possible. The entire staff is friendly and I always end up in a small conversation with each and every one of them. I also pay different totals every so often so I won't put a specific price but I promise you won't be deceived at Projet Pilote!

Hands down the best experience we had while visiting Montreal! From the moment we walked in, our group of 8 was treated like family (in the best way!). We were early and our table wasn't quite ready yet, so they kindly found space for us at the kitchen bar. Turns out that was a perfect place to for us to wait. We were able to talk to Chef Heather and watch her work her magic on the dishes she was plating. We took advantage of this time to order the deviled eggs and some drinks. Loved the eggs! Once we moved to our table, we all noticed that even though we may have had a designated server, everyone that we spoke to graciously treated us like we were the most important people they were taking care of that night. The teamwork amongst the staff was incredible to see and feel. At one point, Fred let us know that they only had 2 buns left, so if we wanted a burger, he needed to know immediately and he would save them for us. Two things stood out about that conversation. First, they make their bread in house and once the buns for that day are gone, no other burgers will be sold. Second, I believe Fred just happened to hear us discussing the menu and heard someone say they were going to get the burger. At that point, he stepped in to share the news about the buns and gave us the option to put those on hold even though everyone else was not ready to order yet. He certainly could have pretended he didn't hear us and we would have been none the wiser, but his attention to customers and their experience really made an impression on all us. In addition to excellent customer service by everyone, the food we had was fantastic. Personally, I had the scallops and thoroughly enjoyed the dish. After dessert, Fred was kind enough to sit down with us and share some of his favorite spots for food and drink. Half of our crowd actually ran into him later at one of his suggested bars, so his list was very honest! We all left that night with such amazing memories of our time at Projet Pilot and it will be the place we recommend for anyone visiting Montreal!

Came here for a couple drinks after poutine next door at Le Banquise and was met with a lovely atmosphere and a large variety of fairly priced beverages, some of which were made right on the premises. Score! I'm all about trying local products while traveling, so I was happy to find that many restaurants I came across in Canada double as microbreweries. I think Projet Pilote was one of my favorites for its range and the establishment's ambiance. Service was quick and attentive. Thanks! Would like to stop by again and perhaps try the food next time.

Not sure if Montreal has a huge happy hour scene, but the fact that you can get $5 pints on tap here is a steal in today's economy. Project Pilote is a fabulous green bar that functions as a mini brewery/distillery that also serves food during the kitchen's open hours. We had a variety of drinks to choose from and the staff there were very accommodating and helpful in picking out the best drafts. We ended up staying for an hour just relaxing after battling for fries next door, and I'd definitely go back again.

What a great brunch experience and such a cool vibe. I booked at table for 11 am, the restaurant wasn't busy and my order arrived quickly, I had a mushroom toast with pistachio latte and almond milk at first, then since I was curious about their desserts I ordered the rhubarb pastry everything was A++. Unfortunately, I've learnt that it was their last day serving brunch, so I guess I'll have to go back to try their dinner!

I cannot speak highly enough about this space. We walked by on our way to get poutine and decided to stop in. It is beautiful inside and we felt a little underdressed. However, we were very welcomed by the hostess who sat us at the bar. We had a wonderful array of cocktails and a lovely time chatting with the bartender. In fact, we liked it some much we stopped by the following night for dinner and to sample a few of the beer options. All and all, this might be the best find we stumbled across in Montreal and will absolutely visit again. It's just such a delightful place in all levels.

Great spot for grabbing a local beer and a good quality food in more of a casual yet slightly more formal atmosphere. We loved the fries with aioli, truffle, and Parmesan. The gnocchi with bacon bits was also epic! Only thing is wish there were a few more veggies with the mains. Awesome spot - would come back.
