"A longtime staple at farmers markets around town, Proof has morphed into a bread powerhouse with three storefronts across the metro area. The bakery is owned and operated by Jon Przybyl and Amanda Abou-Eid, a husband-and-wife team who were prior customers of the original Proof Bread Bakery. They purchased it when the owner, Jared Allen, left Arizona, but they continue to use Allen’s natural levain starter, named Harriet (really). The bread and pastries are delicious, and the staff are super friendly. The heated ham & cheese croissant is the best I’ve ever had—it’s a bit pricey but definitely worth trying. The iced latte and mocha are also great. I rarely ate sourdough before, but now I find myself visiting this place twice a month!

Proof's spot on Roosevelt is utterly fabulous. Stop in for one of their fresh pastries, get a tasty coffee to go with it, and grab a delicious loaf of bread for dinner that night. There is cute indoor seating space and a wide open walk-up window with patio. Plus the people there are always so friendly and willing to answer questions about their bread or just help start your day on a lighter note. They're an amazing addition to this part of Roosevelt and I highly recommend a stop.

The bread is fabulous. The location on Shea is in a rather odd spot in my opinion, and I live quite a distance from that location. It is worth the drive, but I am happy to see they will soon have a location in Tempe, closer to me. I love their bread!

They have incredible sourdough baked goods - good for folks with gluten sensitive tummies. I love their carnivore quiche pastry the most and hope they add it to the regular menu. This location is across from a beautiful park :)

Proof Bread is a downtown gem! I absolutely loved their almond croissant—flaky, buttery perfection—and the lemon bar had just the right balance of tart and sweet, with that bright citrus zing that makes lemon bars so irresistible. The staff was incredibly friendly, and it’s such a treat having a spot like this in the neighborhood. It’s the perfect place to stroll to with your pup, grab a pastry, and chat with the locals. I heard dog treats might be coming soon, and my four-legged taste tester is very excited!
